DUMP-AND-BAKE CHICKEN STUFFING CASSEROLE
You only need 5 ingredients and 10 minutes to prepare this easy dinner recipe for Dump-and-Bake Chicken Stuffing Casserole!

Steps:
- Preheat oven to 375 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
- Place chicken in the bottom of the prepared baking dish. Season both sides of the chicken with salt and pepper, to taste. Spread condensed soup over the chicken. Sprinkle cheese over top.
- In a large bowl, stir together melted butter and dry stuffing mix. Spread buttered stuffing mix on the top of the casserole.
- Cover with foil and bake for 30 minutes. Remove foil, return dish to the oven, and continue baking for 10 more minutes (or until chicken reaches an internal temperature of 165 degrees F and the topping is golden brown). If you are using thicker chicken breasts, you may need to increase the baking time by at least 10-20 more minutes. If the topping starts to get too dark while you wait for the chicken to cook through, cover the dish loosely with foil.

- Preheat oven to 425°F. Grease a 9x13 baking dish and set aside.
- Prepare stuffing according to directions and cool completely.
- Lay each chicken thigh on a cutting board and place stuffing in the center (approximately 2-3 tablespoons depending on the size of the chicken thighs).
- Fold each chicken thigh closed around the stuffing and tightly wrap with bacon. Sprinkle garlic powder and paprika on top of the thighs.
- Place any leftover stuffing on the bottom of the baking dish and place chicken thighs seam side down on top of the stuffing.
- Bake for 35 minutes or until chicken reaches an internal temperature of 165°F.

- Mix water and butter. Add stuffing. Mix lightly.

CHICKEN THIGHS AND STUFFING BAKE
I made this last night. I have two other chicken and stuffing recipes that are very close to this one. I had pulled the ingredients out of my pantry and pulled up my recipe and I didn't have the ingredients to make either recipe. Soooo, this is what I came up with. Served with steamed broccoli and mushrooms.

- 1. Add 1 1/2 cup hot water to stuffing mix and seasoning packet..fluff with fork.
- 2. Place 4 chicken thighs in 7x 11 inch baking pan. Sprinkle lemon sage and adobo seasoning over thighs.
- 3. Mix 1/2 cup milk with can of chicken gravy and pour over thighs.
- 4. Top with stuffing and bake 35 minutes at 375 degrees.

This is something I thought would be nice when I bought a package of boneless chicken thighs and realized I could roll them open and stuff them with my favorite ingredients. It's easy, healthy... and it impresses my wife.

Steps:
- Put oil, curry, oregano, pepper, cayenne pepper, and minced garlic into a small mixing bowl and stir with a fork.
- Pour oil and spice mixture into glass or ceramic baking dish and coat the whole bottom of pan with oil/spice mixture.
- Wash the chicken thighs under cold water and roll them out flat.
- Drag both sides of each thigh through the oil/spice mixture in baking dish and lay them flat and orderly in baking dish.
- Lightly brown the pine nuts in a non-stick frying pan for 1 minute, then mince.
- Put minced pine nuts, minced spinach, crumbled feta cheese, minced black olives, minced mushrooms into a bowl and toss them together. This is your stuffing.
- Place generous amount of stuffing on each flattened thigh.
- Roll the thighs around the stuffing to enclose it.
- Preheat oven to 375 (oven temperatures vary) and bake for 30 -40 minutes or until chicken is white throughout when sliced.
- Serve with rice and a vegetable or salad.

Steps:
- Wash and pat dry chicken thighs; lay them flat, inside up.
- Slice mushrooms and sauté with salt and pepper until they are brown; remove from heat.
- Wash and stem spinach.
- Chop spinach and add to mushrooms, tossing to wilt.
- Place about 2 tablespoons of this filling on each chicken thigh, evenly dispersing the remaining filling among the thighs as needed.
- Divide cheese among chicken thighs.
- Close the thighs with toothpicks (I used three per thigh) and place in a pie dish.
- Sprinkle paprika, crushed tarragon, and garlic salt over the thighs.
- Drizzle honey over all.
- Add water to the pie pan, cover with foil, and bake at 350°F for 30 minutes.
- Remove foil and bake another 15 minutes.
- Sprinkle remaining cheese over chicken and bake until the cheese is melted.
- Serve with steamed veggies, rice, and a fruit salad.
