ALMOND CRESCENT COOKIES
This is a recipe I make almost every Christmas. I got it from a coworker about 20 years ago. It's a big hit with those who like almonds.

- Shape dough into tiny crescents; place on an ungreased baking sheet about 2 inches apart.
- Bake cookies in preheated oven until edges are golden, about 15 minutes. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Roll cookies in sifted confectioners' sugar when cooled.

BOHEMIAN CRESCENTS
Steps:
- Cream butter and blend in sugar, then vanilla. Add Flour gradually, stirring until smooth after each addition. Stir in chopped nuts. Shape small pieces of dough into crescents or mash into cookies with a fork like peanut butter cookies (that's what I do). Place on an un-greased cookie sheet and bake in a moderate oven - 350 degrees for 15 - 20 minutes. When cool, sprinkle with confectioners sugar. If you don't have a sugar shaker, you can use a tea strainer and bump it against your hand. Approximately 50 cookies
VIENNESE CRESCENTS
This recipe came from one of my earliest pastry assistants, Sandra, when we baked together at the Strathallan Hotel in Rochester, New York. We used to put them on cookie/petits four platters because they froze well. You can also dip them in chocolate, omitting the confectioners' sugar at the end.

Steps:
- Cream the butter and add the sugar and vanilla and beat to fluffy. Add the flour and nuts and mix in. Chill the dough for at least one hour. The more it's chilled the less it spreads during baking.
- Preheat oven to 350 degrees F.
- Shape the dough into tiny crescents using 1 teaspoon of dough for each cookie. Place them on an ungreased sheet pan in rows, leaving 1 inch in between for spreading and bake until golden brown, about 12 to 15 minutes.
- Let cool 5 minutes. Dredge them in confectioners' sugar.

- Place all ingredients in a large bowl. Start mixing them with the help of a wooden spoon, then pull the mass out of a bowl and put it on a worktop. Knead the dough with hands properly until smooth and elastic.
- Let the dough rise for 20 minutes, ideally in an oven, where you have put a pot with hot water before. A steamy and warm environment is the best for raising yeast dough.
- After 20 minutes, divide the dough into 2 parts. Roll each of them out into a disc (about 1/5 inch – 5 mm thick).
- Cut the disk-like pizza into 8 equally sized triangles. Start rolling each triangle from the wider side to the tip, stretch a tip while rolling a bit.
