Southern Collard Greens image

Provided by Guy Fieri

Categories     side-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 10

2 pounds collard greens, rinsed
1 tablespoon canola oil
1 cup 1/4-inch diced salt pork
1 cup diced onion
1/4 teaspoon crushed red pepper flakes, optional
1/2 teaspoon freshly cracked black pepper
1 cup low-sodium chicken stock
1/2 cup water
1/3 cup white vinegar
1 teaspoon hot pepper sauce, plus more for serving (recommended: Crystal)

Steps:

  • Cut off and discard the tough stems and discolored leaves from the greens. Cut across the leaves into 2-inch ribbons.
  • In a large stock pot, over medium-high heat, add the canola oil and the diced salt pork, and cook until light golden brown and just crisp. Remove to a paper towel lined plate and let cool.
  • Add the onion to the pot and cook until translucent, about 5 minutes, then add the red chili flakes, black pepper, and the collard greens.
  • Stir every few minutes, or until greens have wilted down. Add the chicken stock and the water and cover. Cook for 30 to 45 minutes, then remove the lid, increase the heat to high, and add the vinegar and a teaspoon of hot sauce. Adjust the seasoning, if needed, then put it into a serving bowl. Sprinkle with the salt pork and serve with additional hot pepper sauce on the side.

3 strips bacon, diced
1 medium onion, sliced
2 bunches collard greens, washed
1 tablespoon chopped garlic
1/2 teaspoon red pepper flakes
1 tablespoon brown sugar

COCONUT-BRAISED COLLARD GREENS

Coconut-Braised Collard Greens image

Cooking leafy greens in coconut milk makes them sweet, soft and rich. A spike of hot sauce and some rice or grits makes this a complete vegetarian meal; you can easily replace the butter with oil to make it vegan. The recipe comes from Von Diaz, a writer who was born in Puerto Rico and raised in Atlanta. She combines ingredients and influences from both places in her home cooking.

Provided by Julia Moskin

Categories     easy, quick, weeknight, vegetables, side dish

Time 20m

Yield 4 servings

Number Of Ingredients 7

1 large bunch collard greens (1 1/2 to 2 pounds)
1 tablespoon unsalted butter
1 tablespoon coconut oil
1 bunch (6 to 8) scallions, white and pale green parts only, thinly sliced
1 1/2 cups unsweetened coconut milk
1 tablespoon soy sauce
Kosher salt and freshly ground black pepper

Steps:

  • Cut off and discard any dry or wilted bits from the collard greens and wash the remaining collards in cold water. Transfer to a colander to drain, then coarsely chop the stems and leaves into 2- to 3-inch pieces.
  • In a large wok or skillet, heat butter and oil over medium-high until rippling. Add scallions and cook, stirring, until softened, about 1 minute. Add collards and cook, stirring, just until wilted, about 1 minute.
  • Add coconut milk and soy sauce and bring to a simmer. Simmer, uncovered, stirring frequently, until collards are cooked to your taste, about 7 minutes for bright and crisp greens or 10 minutes for darker, softer greens.
  • Season to taste with salt and pepper and serve immediately.

SAUTEED COLLARD GREEN OMELET

Sauteed Collard Green Omelet image

Provided by Bobby Flay

Time 25m

Yield 1 serving

Number Of Ingredients 9

Splash of chardonnay vinegar
Kosher salt and freshly ground black pepper
4 large eggs
Chopped fresh flat-leaf parsley
3 tablespoons unsalted butter, cut into tablespoons
1/2-inch piece American pancetta, cut into small dice, or 4 ounces double smoked bacon, cut into small dice
1 pound baby hearty greens (collard greens, mustard greens, dandelion greens, beet greens), large stems removed if needed
1/4 cup vegetable stock, chicken stock or water, more if needed
Few dashes chipotle hot sauce

Steps:

  • Melt 1 tablespoon butter in a 10-inch nonstick pan over medium heat. Add the pancetta and cook until golden brown and crispy and the fat has rendered, about 10 minutes. Add the greens, stock, hot sauce vinegar. Cook until the greens are just wilted, about 5 minutes. Season with salt and pepper and add another tablespoon of stock if the greens dry out before they are soft.
  • In a small nonstick pan over medium heat, add the remaining 2 tablespoons butter and cook until the butter begins to shimmer. Whisk the eggs in a bowl until light and fluffy and sprinkle with salt and pepper. Pour the eggs into the pan and let the eggs cook until the bottom starts to set, up to a minute. With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan while tilting the pan to allow the liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left. Place the greens down the center of the omelet and roll into a cylinder. Remove to a platter, season the top with salt and pepper and top with the parsley.

GRILLED COLLARD GREENS

Grilled Collard Greens image

Who would've thought you could grill collard greens? But Chef Gabriel Claycamp showed us how at Culinary Communion, and they were absolutely delicious!! The outside leaves are crispy, and the inner ones tender and juicy. Posted with permission.

Provided by Julesong

Categories     Collard Greens

Time 25m

Yield 8-10 serving(s)

Number Of Ingredients 5

2 bunches collard greens, trimmed and washed
1 tablespoon salt
2 tablespoons butter (bacon/duck/goose preferred) or 2 tablespoons lard (bacon/duck/goose preferred)
ice water
salt & freshly ground black pepper, to taste

Steps:

  • Prepare a large bowl of ice water; preheat your grill.
  • Bring a large pot of water to a rolling boil and add the salt and fat.
  • When salt is dissolved and fat is melted, add the collard greens to the boiling water and simmer for 3 minutes.
  • Remove collards from the water and immediately plunge into the ice water to halt the cooking and preserve the beautiful green color.
  • (When removed from the boiling water, the collards should be coated with the fat - that's what you want).
  • Remove the collards from the ice water a leaf at a time and stack them flat on top of each other, about 7 to 9 leaves high.
  • Oil your grill well and grill the stacked collard leaves until done, turning once, about 5 minutes per side (depending on the temperature of your grill).
  • Cut stacked collards in half or quarters, season with salt and pepper, and serve immediately.

WILTED COLLARDS GREENS WITH BACON AND ONION

Wilted Collards Greens With Bacon and Onion image

Delicious wilted collard greens ... the prefect balance of salty bacon, sweet onion and bitter greens. Serve with beef, fish, chicken or by itself with a loaf of crusty bread and other vegetables! Wonderful side item or main dish!

Provided by CarolinaCookingGal

Categories     Low Protein

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 lb collard greens
6 slices bacon, chopped
1 medium yellow onion, chopped
1/2 cup chicken stock
1/2 cup water
2 teaspoons black pepper (optional)
1/2 teaspoon seasoning salt (optional)
1 tablespoon red wine vinegar (optional)

Steps:

  • Turn an eye on the stove to medium heat.
  • In a large sauté pan or stock pot, cook the chopped bacon for a few minutes until some grease is rendered, then, toss in the onion. Cook this until onion becomes tender. DO NOT DRAIN!
  • Next, throw the collard greens into the bacon and onion and carefully stir a little (it will seem like there are too many collard greens, but they cook down very quickly).
  • Pour in the chicken stock and the water.
  • Add the optional seasonings (pepper, seasoning salt and vinegar).
  • Cover the pan and cook on medium to medium high. You will see the collards begin to wilt rather quickly.
  • Continue cooking until all of the liquid is gone, stirring occasionally. (This normally takes me about 20 minutes.).
  • Try the collards and if they are not as tender as you would like, simply add 1/4 cup of water at a time until they reach the desired tenderness.

  • In a large saucepan or stockpot, combine 1 1/2 cups of the stock with the chipotles, onion and a generous pinch each of salt and pepper and bring to a boil. Add the collards in large handfuls, letting each batch wilt slightly before adding more.
  • Cover and cook over moderate heat, stirring occasionally, until the collards are just tender, about 25 minutes. Uncover and cook, stirring occasionally, until the broth is slightly reduced, about 7 minutes; discard the chipotles and the onion.
  • Meanwhile, in a small saucepan, combine the black-eyed peas with the remaining 1 cup of stock and bring to a boil. Simmer over moderate heat for 8 minutes; season with salt and pepper. Using a slotted spoon, add the black-eyed peas to the collards; reserve the bean broth for another use. Add the vinegar to the collard greens and season with salt and pepper.
