Categories     dessert

Time 1h

Yield 6 servings

Number Of Ingredients 15

1 teaspoon unsalted butter, at room temperature
Two 16-ounce bags frozen sliced peaches
1 1/2 cups frozen blueberries
1/4 cup freshly squeezed lemon juice
3 tablespoons turbinado sugar
2 tablespoons arrowroot
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
1 cup old-fashioned rolled oats
1/3 cup all-purpose flour
1/3 cup turbinado sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon kosher salt
6 tablespoons unsalted butter, chilled and cut into cubes
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 400 degrees F.
  • For the filling: Butter a 7-by-3-inch round baking dish and set aside. In a large bowl, toss together the sliced peaches, blueberries, lemon juice, sugar, arrowroot, vanilla and salt. Pour the mixture into the prepared baking dish.
  • For the topping: In a separate bowl, mix together the oats, flour, sugar, cinnamon and salt. Using your hands, work the butter into the flour mixture until there are no longer any powdery ingredients at the bottom of the bowl. Break apart large pieces of the topping mixture and place on top of the fruit until the fruit mixture is almost entirely covered. Bake until the topping is golden brown and crispy and the fruit mixture is bubbling, about 40 minutes. Let cool for at least 20 minutes. Serve with the ice cream.

PEACH AND BLUEBERRY CRUMBLES

Peach and Blueberry Crumbles image

Provided by Ina Garten

Categories     dessert

Time 1h10m

Yield 5 to 6 servings

Number Of Ingredients 12

2 pounds firm, ripe peaches (6 to 8 peaches)
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 cup fresh blueberries (1/2 pint)
1 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 pound (1 stick) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
  • For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
  • If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

PEACH AND BLUEBERRY CRISP

Peach and Blueberry Crisp image

A simple seasonal dessert recipe with peaches and blueberries, inspired by the San Francisco Ferry Plaza Farmer's Market. Kosher, Dairy.

Provided by Tori Avey

Categories     Dessert

Time 1h10m

Number Of Ingredients 13

3/4 cup unbleached all purpose flour
1/3 cup packed dark brown sugar
1 tbsp sugar
Pinch salt
Pinch cinnamon
1/2 cup chopped toasted pecans, almonds or walnuts ((I used pecans))
6 tbsp chilled unsalted butter cut into 1-inch pieces
4 large ripe peaches, pitted and sliced into 12-14 pieces each
1 pint ripe blueberries
1/4 cup packed dark brown sugar
3 tbsp minute tapioca ((you may substitute an equal amount of chia seeds))
Several drops aged balsamic vinegar or fresh lemon juice ((I used a honey orange balsamic))
Vanilla ice cream or crème fraîche for serving

Steps:

  • Place a rack in the middle of your oven and preheat to 375 degrees F. In a food processor, combine the first 5 topping ingredients - flour, brown sugar, sugar, salt, and cinnamon. Pulse a few times till ingredients are blended. Add nuts and unsalted butter to the processor. Continue to pulse till the mixture is combined and crumbly. Do not over-process-- you want some texture to the nuts and bits of butter in the mix. If you don't have a processor, you can instead mix the dry ingredients in a bowl, then add the butter mixture with your fingers or a pastry blender. Work the butter into the mixture till a crumbly texture forms.
  • To make the filling, combine all ingredients in a large bowl and stir gently till combined. Let the mixture stand for 15 minutes.
  • Pour filling mixture into your baking dish and spread it in an even layer.
  • Sprinkle the topping evenly over the top of the fruit filling. Place the baking dish on a cookie sheet - this will catch any overflow of fruit juice in the oven.
  • Put the crisp and cookie sheet in the oven and let it bake for 50-60 minutes, turning once during baking, till the crisp is lightly browned and the fruit filling is bubbling.Remove the crisp from the oven and allow to cool for at least 15 minutes before serving. Serve the crisp warm topped with vanilla ice cream or crème fraîche.
  • Store any leftover crisp in the refrigerator. Reheat before serving.

PEACH, STRAWBERRY, BLUEBERRY CRISP

Peach, Strawberry, Blueberry Crisp image

The buttery, cookielike topping in most crisp recipes is usually a calorie bomb. But chef Dean Rucker from The Golden Door in Escondido, California, uses a whole-grain crumble of whole-wheat flour and rolled oats that's gently sweetened with honey, so you save calories and get almost 5 grams of fiber per serving. Feel free to swap in other fruit options to take advantage of the season's freshest picks.

PEACH-BLUEBERRY CRISP

Peach-Blueberry Crisp image

This crisp is summer in a casserole dish! The combination of juicy peaches and sweet-tart blueberries is divine-so much so that you won't even notice that our version is lower in sugar. Although frozen fruit will suffice in a pinch, we recommend you use the freshest varieties you can find, even if that means substituting another berry and stone fruit.

  • Sprinkle the crumble evenly over the fruit mixture and bake in the middle rack of the oven for 50-60 minutes or until bubbly and golden brown. If the crumble browns too quickly, cover it with foil until it's finished baking.

  • Slice the butter into pieces and place in a light-colored skillet. (Light colored helps you determine when the butter begins browning.) Melt the butter over medium heat, stirring occasionally. Once melted, the butter will begin to foam. Keep stirring occasionally. After 5-8 minutes, the butter will begin browning– you’ll notice lightly browned specks begin to form at the bottom of the pan and it will have a nutty aroma. Once browned, remove from heat immediately and pour into a tupperware or a baking pan. Cover tightly, place in the refrigerator or freezer, and chill until solid. I always place mine in the freezer. It only takes about 45 minutes this way.
  • As the butter chills, whisk the remaining streusel ingredients together in a medium bowl. Set aside.
  • Preheat oven to 350°F (177°C). Lightly grease a 9-10 inch baking dish (circle, square, a skillet, or any similar size pan*).

PEACH AND BLUEBERRY CRISP RECIPE | PAMELA SALZMAN & RECIPES
This Peach and Blueberry Crisp is one of my go-to’s during the summer. I don’t make it too sweet, in fact my fruit dessert mantra is “it should taste like fruit, not just sweet.” Most crisp recipes toss the fruit with extra sugar and flour, which I don’t think is necessary at all. I used to make crisp toppings with brown sugar until I discovered coconut palm sugar which I think is …
