RIDICULOUSLY EASY BLUEBERRY CRUMBLE



Ridiculously Easy Blueberry Crumble image

This easy blueberry crumble with perfectly cooked blueberries topped with a buttery oat crumble is high on our list of favorites. There's no fancy equipment needed and you only need about 10 minutes of prep time. Before adding sugar to the filling, taste your berries. If they are already sweet, you might want to hold back on how much sugar you add.

24 ounces (about 2 pints) fresh blueberries
2 to 4 tablespoons sugar, see notes
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice or use water
Pinch fine sea salt
3/4 cup (100 grams) all-purpose flour
3/4 cup (65 grams) old-fashioned rolled oats
1/2 cup (100 grams) sugar, try combining 1/4 cup brown sugar + 1/4 cup granulated sugar
1/2 cup (115 grams) butter, melted (1 stick) or substitute 1/2 cup melted coconut oil
1/8 teaspoon fine sea salt

Steps:

  • Heat oven to 375 degrees Fahrenheit.
  • Add blueberries, lemon juice, 2 tablespoons of flour, sugar, and pinch of salt to a 9-inch pie dish (or use a 2-quart baking dish). Toss well until combined.
  • Combine flour, oats, sugar, and the salt in a medium bowl. Add the melted butter then stir until all the flour has been moistened by the butter and topping is crumbly.
  • Sprinkle over blueberry filling. (We like to use our hands to do this. As we sprinkle, we press the crumbles together to create larger clumps of topping.)
  • Bake 25 to 35 minutes until juices are thickened and the topping has turned light golden brown. Cool 10 minutes, and then serve.

I don't tack the word ultimate onto just any recipe. This berry well may be my favorite summer dessert, with the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Some ice cream on the side is highly recommended.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  • Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  • Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.

1/4 cup pecans (chopped) or 1/4 cup almonds (chopped)
1/3 cup brown sugar
2 teaspoons all-purpose flour or 2 teaspoons whole wheat flour
1/4 teaspoon ground cinnamon
1 1/2 tablespoons canola oil
2 1/2 cups frozen blueberries or 2 1/2 cups fruit
1 tablespoon sugar
1 tablespoon all-purpose flour or 1 tablespoon whole wheat flour
1 tablespoon orange juice

Steps:

  • Make crumble topping: Combine oats, nuts, brown sugar, flour and cinnamon in a medium bowl and stir until well blended.
  • Drizzle oil over the dry ingredients and stir until evenly moistened. Set aside.
  • Preheat oven to 400 degrees.
  • Toss berries (or other fruit) with sugar, flour, and juice. Divide the mixture amounf four 6oz dishes. Top each with Crumble Topping.
  • Place dishes on baking sheet.
  • Bake the crumbles until the tops are browned and the filling is bubbling, 20 - 25 minute.
  • Let stand for at least 10 minute before serving.

3 cups blueberries
3 tablespoons cornstarch
2 -3 tablespoons sugar
1 lemon zest, finely grated
1 3/4 cups all-purpose flour
1 1/4 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup unsalted butter
creme fraiche

Steps:

  • Preheat oven to 375 degrees and butter bottom and sides of a baking dish. Zest lemon. Toss blueberries, 2 tablespoons sugar, zext and cornstarch in a bowl and place in bottom of baking dish.
  • In seperate bowl, mix remaining sugar, flour, baking powder and salt. Add eggs and mix with fingers. Sprinkle over fruit then pour melted butter evenly over the crumble mixture.
  • Place in center of oven and bake for 30 minutes until fruit bubbles and the crumble is a golden brown. Serve warm with a dallop of creme fraiche.
