No-Churn Blueberry Mascarpone Ice Cream image

Make this no-churn blueberry mascarpone ice cream in under 20 minutes. You don't need any extra equipment, and it's dreamy and creamy!

2 cups heavy cream
14 ounces sweetened condensed milk
1 cup mascarpone cheese (softened)
2 cups fresh blueberries
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract
Gluten-free graham crackers (optional)

Steps:

  • In a stand mixer, whip the heavy cream until stiff peaks form, about five minutes. Fold in the mascarpone and condensed milk, and blend until smooth.
  • While the cream and mascarpone are mixing, puree the blueberries and lemon juice in a food processor or blender. Pour into the cream base, and add the lemon zest and vanilla. Mix well.
  • Line a bread pan with parchment paper and pour the ice cream base into the pan. Spread evenly, cover, and refrigerate for at least 8 hours or overnight.
  • When ready to serve, let the ice cream sit out for about five minutes to soften, then scoop and serve in waffle cones. Dip in the crushed gluten-free graham crackers for an extra crunch. Enjoy!

3/4 cup fresh or frozen blueberries
1/4 cup sugar
1 tablespoon vanilla extract
2 cups heavy whipping cream
1 cup sweetened condensed milk
4 whole graham crackers, coarsely crushed

Steps:

  • In a small saucepan, combine blueberries, sugar and vanilla. Bring to a boil; reduce heat. Simmer until mixture begins to thicken, about 5 minutes, stirring frequently. Cool completely. Refrigerate until chilled., In a large bowl, beat cream until soft peaks form. Add condensed milk; beat until mixture thickens. Gently fold graham crackers into cream mixture. Transfer to freezer containers, allowing headspace for expansion. Drop blueberry mixture by tablespoonfuls over ice cream. Cut through ice cream with a knife to swirl. Freeze for 8 hours or overnight before serving.

1 cup blueberries
1 Tbsp. water
1 cup sugar, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed, softened
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup whipping cream
1 Tbsp. vanilla
4 graham crackers, broken into small pieces

Steps:

  • Bring blueberries, water and 2/3 cup sugar to boil in small saucepan; simmer on medium-low heat 8 min. or until thickened, stirring occasionally. Refrigerate 30 min. or until completely cooled.
  • Process remaining sugar with all remaining ingredients except graham cracker pieces in food processor until well blended; spoon into 1-1/2-qt. freezer-proof container. Gently stir in graham cracker pieces. Top with spoonfuls of the blueberry mixture; swirl gently with spatula.
  • Freeze 5 hours or until firm.

  • Combine the milk and 2 tablespoons of the sugar in a medium saucepan over low heat. Bring to a simmer, stirring occasionally. In the meantime, combine the egg yolks and the remaining sugar in a bowl and whip with a hand mixer on medium speed until fluffy, about 3 minutes. Once the milk mixture has come to a simmer, carefully add 1 cup of the warm milk into the egg mixture in a slow and steady stream, whisking all the while, over the course of 30 seconds. Don’t add it all at once or you’ll risk scrambling the eggs. Once the milk has been added, pour the mixture back into the saucepan with the remaining milk and cook over medium-low heat while stirring constantly until the mixture barely thickens enough to coat the back of a spoon (about 4-5 minutes). Don’t let the mixture boil. Pull the saucepan off the heat and whisk in the mascarpone and salt until incorporated.
  • Combine the blueberries and sugar in a small saucepan over medium heat. Bring to a boil, reduce the heat, and simmer until the sauce has thickened slightly. Remove from heat to cool completely prior to use.
