BLUEBERRY FLAX MUFFINS
While looking for an interesting recipe for blueberry muffins I stumbled across information regarding flax seed. I looked at a number of muffin recipes and combined several to come up with these. They are healthy, with no added oil, yet moist.

Steps:
- Preheat oven to 400°F.
- Spray a 12 cup, non-stick muffin tin with cooking spray.
- In a large bowl, mix flour, oat bran, flax seed, baking powder, baking soda, and salt.
- Add the Splenda, sugar, buttermilk, applesauce, egg, lemon zest, and lemon extract, mixing until just combined.
- Gently fold in the blueberries.
- Pour the batter into the muffin cups.
- Bake for 20 minutes or until a toothpick inserted in center of muffin is removed clean.
- Cool 5 minutes in pan, then remove muffins and place on a wire rack to finish cooling.

- Preheat oven to 400°F.
- Combine dry ingredients in a large bowl.
- Stir in the blueberries.
- In a separate bowl, blend the wet ingredients, including lemon peel.
- Add the wet ingredients to the dry ingredients and stir until just combined-- do not over mix.
- Fill greased muffin cups and bake for 20 to 25 minutes or until a cake tester or toothpick inserted in center of one muffin comes out clean.
- Cool on a rack for five minutes before removing from pan; finish cooling on rack.

- In a small bowl, toss blueberries with 1 tsp of the flour. Set aside.
- In separate bowl, stir together remaining flour, flax, sugars, baking powder, baking soda and salt.
- In glass measuring cup, whisk together yogurt, oil, lemon rind, lemon juice and egg.
- Pour into dry ingredients; stir just until moistened. Stir in reserved blueberries.
- Divide batter among 12 muffin trays. Bake in 400°F oven for 18 minutes or until muffins are lightly browned.

- Preheat oven to 400 degrees.
- Grease 12 (3 x 1 1/4-inch) muffin cups.
- In a large bowl, stir together flour, the 2/3 cup sugar, baking powder, baking soda and salt. In another bowl, stir together yogurt, butter, eggs, lemon peel and vanilla until blended.
- Make a well in center of dry ingredients; add the yogurt mixture and stir just to combine. Stir in the blueberries.
- Spoon batter into the muffin tins and sprinkle with the remaining 1 tablespoon of sugar.
- Bake 20 to 25 minutes.
LEMON BLUEBERRY MUFFINS
This recipe goes back to a Milk Calendar, which I think was in the 80's. It was a long since favourite, and after making it yesterday, the final muffin was fought over! The cornmeal gives an interesting texture, and the lemon addition is fantastic!

- Cream butter and sugar until light. Add eggs one at a time; beat well after each addition. Beat in vanilla, lemon juice, and lemon rind. Do not worry if it looks curdled.
- Reserve 2 tbsp flour for blueberries. Combine remaining flour, cornmeal, baking powder, and baking soda. Add dry ingredients to butter mixture alternately with milk, beginning and ending with dry ingredients. Toss reserved flour with blueberries and toss to coat; stir into batter gently.
- Spoon batter into buttered (or Pam'd) muffin cups, or cups lined with muffin liners. Batter should come almost to top of pans. Bake in a preheated 350F oven for 25 to 30 minutes, or until just turning golden.
- Remove from pan and place on wire racks to cool.

I recently read about how healthy both flaxseed and blueberries are, so thought I'd try to come up with a tasty way to use them together. These muffins are not too sweet or tart- a great way to start the day!

- Preheat oven to 400 degrees. Spray muffin cups with cooking spray.
- Mix all dry ingredients.
- Add all wet ingredients.
- Batter will be quite thick- DO NOT ADD EXTRA LIQUID!
- Fill muffin cups 3/4 full.
- Just before baking, sprinkle pinches of sugar on top of muffins.
- Bake at 400 degrees for 10 minutes, rotate pan so the muffins cook evenly, bake for 8-10 minutes more until the top springs back when touched gently.
- Let cool completely in pan on wire rack before removing from pan.
