BEST EVER BLUEBERRY COFFEE CAKE
Terrific, flavorful coffee cake! A favorite at my house. All my friends who have tried this have asked me for the recipe.

Steps:
- Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 inch baking pan; set aside.
- In small bowl stir together flour, baking powder and salt; set aside.
- In a large bowl beat cream cheese and butter with an electric mixer on medium speed for 3 minutes or until creamy. Add 2 cups sugar; beat until combined.
- Add eggs, 1 at a time, beating well. Add flour mixture; beat until combined.
- Stir in vanilla. Gradually fold in blueberries.
- Batter will be very thick. Pour into prepared pan and smooth the top.
- In small bowl stir together 3 tablespoons sugar and the cinnamon.
- Sprinkle over batter.
- Bake for 50 to 60 minutes or until a toothpick inserted in center comes out clean.
- Cool on a wire rack.

- Preheat oven to 350 degrees and grease your a 9" springform pan.
- To make the crumb topping, add the 1/2 cup melted butter, oat cereal, 3/4 cup brown sugar and vanilla to a large bowl and combine until crumbly.
- To make the cake, in a stand mixer add the 1/4 cup butter, oil, sugar, eggs, vanilla and sour cream. Turn on the stand mixer on low, then move to medium speed until fully combined.
- Add in the flour, oat cereal, baking powder, baking soda and salt and turn on low until just combined.
- To make the cream cheese filling, whisk the cream cheese, 1/4 cup sugar and 1 egg until smooth in a medium bowl.
- To assemble the cake, add half the cake batter to the bottom of the pan.
- Add the cream cheese filling leaving a 1" border around the edge and top with 1 cup blueberries.
- Add the rest of the cake batter, top with remaining 1/2 cup blueberries and finally add the crumble over the top of the cake.
- Bake for 60-75 minutes, or until center is set and doesn't move or jiggle when you move the pan.
- If there is even a slight jiggle the middle will be raw, so don't worry about it overcooking.

- Preheat oven to 350 degrees F
- Lightly grease 9-inch springform pan; set aside.
- In large bowl, beat butter with sugar until well combined. Beat in eggs, 1 at a time, beating well after each addition. Beat in vanilla. In separate bowl, combine flour, baking powder, baking soda and salt. Using wooden spoon, stir in butter mixture alternately with sour cream.
- Spread into prepared pan, mounding slightly.
- Sprinkle 1 cup of the blueberries over top.
- Crumb Topping.
- In small bowl, combine flour, brown and granulated sugars and cinnamon, drizzle butter evenly over top add walnuts; toss until thoroughly moistened. Set aside.
- Cheese Filling.
- In bowl, beat cream cheese with sugar until light and fluffy, scraping down side of bowl occasionally. Beat in egg and lemon rind just until smooth; set aside.
- Gently spread cream cheese filling over blueberries; sprinkle with remaining blueberries. Sprinkle with crumb topping.
- Bake 1 hour and 15 minutes or until edge is set and just beginning to come away from pan.
- Let cool in pan on rack for 30 minutes.
- Serve warm or at room temperature.

- Preheat oven to 375 degrees. Grease and flour a 13x9x2" pan.
- In a large bowl, cream together 1/2 cup softened butter and 1 1/4 cup sugar.
- Add eggs one at a time, mixing well after each addition.
- In a medium bowl, sift together 2 cups flour, baking powder, and salt.
- In a measuring cup, mix milk and water.
- Alternately add flour mixture with milk mixture, ending with milk.
- Beat in softened cream cheese and 1 t. lemon zest.
- In a small bowl, sprinkle 1/4 cup flour over blueberries and toss gently. Fold into batter and pour into pan.
- Sift 1/4 cup sugar and 1/4 cup flour into a small bowl.
- Mix in 1 t. lemon zest.
- Using a pastry cutter, cut in 2 T. butter until mixture resembles coarse crumbs. Sprinkle over batter. Bake for 40-45 minutes.
- Serve warm, heavily dusted with powdered sugar.

- In a medium mixing bowl, blend together 1 1/2 cups flour, sugar, baking powder, salt, oil, milk, egg and 1 cup blueberries. Beat thoroughly for 30 seconds and spread in a greased round 9x1-1/2-inch pan or an 8x8x2-inch pan.
- Combine 1/3 cup flour, brown sugar, cinnamon and butter. Sprinkle over batter and top with the remaining berries. Bake in a 375F oven for 25 to 30 minutes, until done. Don't overbake.
BLUEBERRIES AND CREAM CHEESE COFFEE CAKE
This recipe is one I picked out of the Joy of Blueberries book and modified a little bit. After going blueberry picking, I wanted a breakfast dish that I could use FRESH blueberries in. You may also use frozen blueberries slightly thawed. This was a big hit with our family. Hope you enjoy!

- Preheat oven to 375.
- Rinse blueberries in cool water to slightly thaw. Gently coat in 1/4 cup flour.
- In a large bowl cream together sugar, butter and eggs.
- In a smaller mixing bowl, combine 2 cups flour, baking powder and salt.
- Combine milk and water.
- Add ingredients to the first bowl alternating the milk and flour mixtures.
- When well blended, add vanilla and lemon zest.
- Dice cream cheese into SMALL cubes. The smaller the better. Add to batter.
- Fold in blueberries.
- Pour into a greased and floured 13 by 9 pan.
- Mix together all topping ingredients using a fork. Consistency should resemble crumbs. Sprinkle over the top of the cake mixture.
- Bake 1 hour or until golden brown on top.
- ENJOY!
