Blueberry Amish Baked Oatmeal is a cozy, hearty breakfast that's healthy and oh-so-satisfyingly delicious. Crispy oats warmed with cinnamon and sweetened with blueberries. It's a breakfast and healthy snack to love.

Provided by Stephanie Wilson

Categories     Breakfast

Time 45m

Number Of Ingredients 10

2 cups old-fashioned oats
2/3 cup brown sugar (see notes for substitutions)
1 teaspoon baking powder
1-1/2 teaspoons cinnamon
1/2 teaspoon salt
2 large eggs
2 cups milk
1 teaspoon vanilla
1 tablespoon butter, melted
2 cups blueberries, fresh or frozen

Steps:

  • Preheat the oven to 325° and coat an 8 or 9-inch baking pan with cooking spray. Set aside.
  • In a medium bowl, combine oats, brown sugar, baking powder, cinnamon, and salt. Then, in a small bowl, whisk together the eggs, milk, vanilla, and melted butter. Add it to the oats mixture and combine.
  • Spoon blueberries evenly on the bottom of the prepared baking dish. Then pour the oatmeal mixture over the top, spreading evenly. Bake in a 325° oven for 40-45 minutes, or until the oats are golden brown and set.
  • Serve warm, room temperature... or, my favorite way, cold from the refrigerator.

AMISH BAKED OATMEAL

Amish Baked Oatmeal image

I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

Baked Blueberry Banana Oatmeal image

Provided by Danielle Sepsy

Categories     main-dish

Time 1h

Yield 3 to 4 servings

Number Of Ingredients 13

Nonstick cooking spray
1 1/2 cups rolled oats
2 tablespoons dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts or almonds, optional
1/8 teaspoon fine table salt
1 very ripe large banana
1 cup nonfat milk
1 tablespoon unsalted butter, melted
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup blueberries

Steps:

  • Preheat the oven to 375 degrees F. Spray an 8-inch square glass or ceramic baking dish with nonstick cooking spray. You want the mixture to be 3 to 4 inches high in the dish so it doesn't dry out.
  • Combine the oats, 1 tablespoon of the dark brown sugar, baking powder, cinnamon, nuts, if using, and salt in a large bowl.
  • Mash 1/2 of the banana in a medium bowl. Whisk in the milk, melted butter, vanilla and egg until combined.
  • Stir the wet ingredients into the dry ingredients until fully incorporated. Very gently fold in the blueberries with a rubber spatula.
  • Pour the oatmeal into the prepared baking dish and smooth the top. Thinly slice the remaining 1/2 banana crosswise and arrange the slices in an even layer over the top. Sprinkle with the remaining 1 tablespoon dark brown sugar (see Cook's Note). Bake until the top is slightly browned and the oats are tender, 35 to 45 minutes. Enjoy!

This recipe came from an old Amish cookbook of mine. It tastes like an oatmeal cookie. It stores well in the refrigerator and can be reheated in the microwave and served with milk. This has to sit overnight, so plan accordingly. It is well worth the wait, however!
