4 Mission® Artisan® Blue Corn Tortillas
¼ cup Low-sodium black beans
4 Eggs, large
1 tbsp Skim milk
Salt and black pepper as needed
Non-stick cooking spray as needed
2 tsp. Olive oil
2 tsp. Garlic cloves, minced
4 cups Baby spinach leaves
1 oz. Aged cheddar cheese, shredded
2 tbsp. Pico de gallo

Steps:

  • 1.Place black beans in microwave-safe bowl and reheat in microwave.
  • 2.Combine eggs, milk and season with salt and black pepper as desired; whisk until well combined. Coat small non-stick saute pan with cooking spray and place over medium heat. Add egg mixture and scramble. Remove from heat and sprinkle shredded cheddar cheese over top; keep warm.
  • 3.Place second medium non-stick saute pan over medium heat, add olive oil and minced garlic; saute for 1 minute. Add spinach and toss with heat-resistant spatula until spinach is dark green and slightly wilted.
  • 4.Heat four Mission® Artisan® Blue Corn Tortillas according to package directions and place on a flat work surface. Divide scrambled egg evenly among tortillas, layer with garlic sauteed spinach, and use a slotted spoon to divide beans evenly over top. Finish each with pico de gallo; serve immediately.

6 tablespoons canola oil
1 orange, juiced
3 cloves chopped garlic, (may reduce to be kid friendly)
2 tablespoons chopped fresh oregano leaves
1 1/2 pound pork tenderloin, fat trimmed
8 (6-inch) blue corn tortillas
8 slices Swiss cheese, halved
8 slices boiled ham
4 pickled jalapenos, drained and thinly sliced (may reduce to be kid friendly)
Tomato salsa, optional
Red or green onions, optional

Steps:

  • Whisk together 3 tablespoons of the oil, orange juice, garlic and oregano in a baking dish, add the pork and turn to coat. Cover and marinate in the refrigerator for at least 1 hour and up to 4 hours.
  • Heat the grill to high or a nonstick saute pan with a few tablespoons of canola oil over medium-high heat on the stove.
  • Remove the pork from the marinade and place on the grill. Grill until golden brown and slightly charred and an instant-read thermometer inserted into the center of the meat registers 150 degrees F, about 12 to 15 minutes. Remove from the grill and let rest 5 minutes before slicing into 1/4-inch thick slices.
  • Reduce the heat of the grill to medium. Place the tortillas on the grill and grill for approximately 10 seconds per side to make pliable. Lay the tortillas on a flat surface. Divide the ingredients evenly over 1 half of each tortilla. Start with 1 slice of the cheese, followed by the ham then a few slices of the pork, a few slices of the jalapenos and another slice of the cheese. Fold the top of the tortilla over the ingredients and press on it. Brush the tops of the tortillas with some of the remaining oil and place on the grill, oil-side down and grill until lightly golden brown, pressing on the tortillas to flatten, 3 to 4 minutes. Brush the tops of the tortillas with oil, flip over and continue grilling, pressing down on the tortillas until golden brown and the cheese has melted.

12 eggs
12 ounces ground beef
Blackening spice, or curry spice and fennel seeds

6 ounces roasted red pepper, sliced
6 ounces red onion, chopped
12 ounces salsa
6 ounces Monterey Jack cheese
1 1/2 pounds medium red potatoes
Olive oil, for drizzling
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon paprika
1 teaspoon chopped fresh chives
6 1/3 cups cake flour
1 1/2 tablespoons baking powder
1 tablespoon salt
6 tablespoons powdered milk
5 tablespoons shortening
2 cups water
Vegetable oil, for frying

Steps:

  • Prepare the Breakfast Potatoes according to the recipe below. While potatoes are cooking, prepare the Fry Bread according to the recipe below. In a medium pan, scramble the eggs and set them aside. Season the beef on each side with blackening spice. In a large skillet over medium heat, saute the beef until it is cooked until a medium doneness. Add the Breakfast Potatoes, black beans, and roasted peppers to the pan with the beef and stir until combined and heated through.
  • Preheat the oven to 350 degrees F. Place the fry bread on a baking sheet, and top each piece with some of the beef mixture. Top each taco with the scrambled eggs, onion, salsa, and cheese. Put the tacos in the oven and bake until the cheese is melted. Serve immediately.
  • Preheat the oven to 425 degrees F. Cut the potatoes into quarters and put them in a large bowl. Drizzle olive oil over the potatoes and mix until lightly covered. In a medium bowl, combine the salt, pepper, onion powder, paprika, and chives and mix well. Pour the spice mix over the potatoes and mix well. Put the potatoes on a large baking sheet and bake until soft and browned, about 40 minutes.
  • In a large bowl, mix the dry ingredients together. Add the shortening little by little until small balls form. Add 1 cup of water and mix it well with your hands; then add the rest of the water and knead the dough well. Cover the dough and let it rest for 30 minutes.
  • Divide the dough into 6 balls and then shape each ball into a flat circle, about 6 inches across. Fill a large heavy saucepan with 2 to 3 inches of cooking oil and heat over medium-high heat; the oil should be at 350 degrees F before you begin frying. Fry the rounds in the oil, in batches, until golden brown. Place the fry bread on paper towels to soak up excess grease.
