EASY GREEN BEAN CASSEROLE WITH BLUE CHEESE



Easy Green Bean Casserole with Blue Cheese image

If your blue cheese is very strong, start by adding a lesser amount then adding more to taste.

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil
1 sweet onion, chopped
2 garlic cloves, minced
1/2 cup butter, divided
2 tablespoons flour
1 pint heavy cream
1/2 cup crumbled blue cheese
4 cans green beans, drained very well
1 cup french fried onions, chopped
1 cup panko breadcrumbs
kosher salt & freshly ground black pepper

Steps:

  • Preheat oven to 400F.
  • Drain green beans in a colander. Allow to drain thoroughly.
  • Heat EVOO in a large skillet. Add onions and cook over medium heat until soft and translucent, about 5 minutes. Add garlic, cook one minute more. Add 1/4 cup butter to pan, melt and stir into onions. Sprinkle flour over butter mixture, stir and cook flour for another 1-2 minutes. Slowly stir in heavy cream. Bring to a simmer, add blue cheese and turn off heat. Stir until blue cheese is incorporated (small pieces are okay). Season to taste with salt and pepper.
  • Gently add green beans to skillet and mix until well-coated. Pour mixture into a baking dish.
  • In a small bowl, melt remaining butter in microwave. Add chopped french fried onions and breadcrumbs, mix thoroughly. Sprinkle mixture over casserole.
  • Bake for 10-15 minutes or until hot and bubbly and topping is nicely browned. Serve immediately.

We've taken the traditional green bean casserole and added a little more flavor with crumbled blue cheese. This casserole is still as easy to make as the green bean original.

2 pound green beans, trimmed
2 tablespoon butter, plus more for greasing
1 pint heavy cream
4 ounce blue cheese
3/4 cup breadcrumbs, preferably homemade*

Steps:

  • Preheat the oven to 400 degrees.
  • Bring a pot of salted water to boil over high heat. Blanch the beans for 5 minutes, drain well in a colander, and transfer into a lightly buttered casserole dish. Pour in the cream and crumble the blue cheese evenly on the top. Melt the 2 tablespoons of butter in a saucepan over low heat, and mix together with the breadcrumbs in a small bowl. Sprinkle the breadcrumbs evenly over the top of the casserole. Bake for 15 minutes, or until browned and bubbling.
  • Let rest for 15 minutes before serving.

1 pound haricots verts, trimmed
3 slices bacon
4 ounces blue cheese, cut into small chunks (recommended: Shropshire)
1 1/2 cups toasted whole pecans, coarsely chopped
1/4 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the haricots verts and cook for about 2 minutes. Remove the beans from the water and immediately place in a bowl of ice water. Remove the haricots verts from the ice water and set aside in a medium bowl.
  • In a large saute pan, over medium heat, cook the bacon until crisp. Remove the bacon and place on paper towels. Add the beans to the bacon drippings and cook over medium heat for 2 to 3 minutes. Add the blue cheese and toss just until it starts to melt. Break the cooked bacon into bite-size pieces and add to pan. Finish by stirring in the toasted chopped pecans. Season with the freshly ground black pepper and just a tiny pinch of kosher salt. Serve immediately.

Steps:

  • Melt the butter in a pan.
  • Add the onions and slowly cook until they caramelize, about 20-30 minutes.
  • Add the butter and let it melt.
  • Add the mushrooms and saute until the mushrooms start to caramelize, about 10-15 minutes.
  • Add the garlic, thyme, salt and pepper and saute until fragrant, about a minute.
  • Add the sherry and deglaze the pan.
  • Add the green beans and saute until bright green and just starting to turn tender but still crisp, about 5 minutes.
  • Melt the butter in a small sauce pan.
  • Add the flour and stir until lightly golden brown.
  • Add the milk and simmer until it thickens.

1 (2.8 ounce) can French fried onions

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart casserole dish.

3 ounces blue cheese
1 pint heavy cream
3 eggs
1 (4 ounce) can mushrooms, drained

Steps:

  • Cook green beans in boiling water for 5-10 minutes or until cooked but still crispy. (Remember to put the beans in the pan only when water starts boiling hard.) Drain and rinse with very cold water to stop cooking process.

The difference is, this recipe uses cheddar cheese soup, not cream of mushroom. I first ate it in 1973 at the home of a (then) middle-aged couple who invited my husband and me to dinner shortly after we were married.

1 pint heavy cream (no substitutes)
