Ingredients

½ cup olive oil
⅓ cup blood orange juice
¼ cup red wine vinegar
2 tablespoons honey
1 tablespoon spicy brown mustard
salt and ground black pepper to taste

Steps:

Combine olive oil, blood orange juice, red wine vinegar, honey, mustard, salt, and pepper in a blender. Process until well combined and smooth.

2 tablespoons white wine vinegar
1/4 cup blood orange juice (from 1 to 1 1/2 oranges)
2/3 cup olive oil
1/2 clove garlic (crushed and finely chopped)
1 tablespoon finely chopped shallots
2 teaspoons finely chopped fresh parsley
2 teaspoons finely chopped fresh chives

Steps:

Gather the ingredients.
Place all of the ingredients in a jar and shake until the dressing is well blended. Alternately, you can vigorously whisk the ingredients in a small bowl until they are completed incorporated together.
Drizzle over salad and enjoy.

Combine blood orange juice (we're looking for 1/4 cup of juice here) with the remaining ingredients in a mason jar and shake well. For a completely smooth dressing, I used an immersion blender. You can follow suit with a blender/processor of your choice or leave the garlic as is - both ways work great!
