3 large eggs, room temperature
1 1/2 cups whole milk, room temperature
1 1/2 cups all-purpose flour
1 1/4 teaspoons coarse salt
Vegetable-oil nonstick cooking spray

Steps:

  • If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
  • After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
  • Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
  • Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
  • Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
  • Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
  • Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.

EASY POPOVERS RECIPE



Easy Popovers Recipe image

I make popovers at least once a week. They are so easy to make that you'll be doing it too! For years this has been my go-to popovers recipe.

5 large eggs at room temperature
1 1/2 cups milk, lukewarm
1/2 teaspoon kosher salt
1 1/2 cups All-Purpose Flour
3 tablespoons melted butter, cooled so that it is warm not hot

Steps:

  • Position rack on the lower half of your oven so that your popovers have room to rise. Place the un-greased popover pan in the oven to warm.
  • In a food processor or blender, combine the eggs, milk and salt. Process for a few seconds until just combined. You should not see streaks of yolk.
  • Scrape down sides of your blender or food processor bowl to get any flour off the sides. There should not be any big lumps in the batter.
  • The batter should be slightly frothy on top, as shown in the photo above.
  • Carefully remove heated popover pan from oven and spray well with PAM or other cooking spray.
  • Fill each mold about 3/4 high.
  • Place pan on lower rack in oven and bake for 20 minutes. Do not open the oven door.
  • Do not open the oven door for first 10 minutes. After 10 min you can check periodically for doneness. Popovers are done when they are a deep golden brown.

BASIC POPOVERS

1 tablespoon unsalted butter, melted and cooled, plus 1 teaspoon for the pan
4 3/4 ounces all-purpose flour
1 1/2 teaspoons kosher salt
2 large eggs, at room temperature
1 cup whole milk, at room temperature

Steps:

  • Heat the oven to 400 degrees F.
  • Grease a 6-cup popover pan with the 1 teaspoon of butter.
  • Combine the 1 tablespoon of butter, the flour, salt, eggs and milk in a food processor or blender and process for 30 seconds.
  • Divide the batter evenly among the cups of the popover pan, filling each one-third to one-half full. Bake on the middle rack of the oven for 40 minutes, taking care not to open the oven door. Remove the popovers to a cooling rack and pierce each one in the top with a knife to allow steam to escape. Serve warm.

CHEESE AND HERB POPOVERS



Cheese and Herb Popovers image

Nonstick cooking spray, for the pan
One 16.5-ounce container (about 3 cups) multicolored cherry tomatoes, halved
2 tablespoons extra-virgin olive oil
2 teaspoons sugar
1 teaspoon kosher salt
1 teaspoon red wine vinegar
1/2 teaspoon freshly ground black pepper
3 sprigs fresh thyme
3 stems fresh rosemary
2 large eggs, at room temperature
1/2 cup whole milk, at room temperature
2/3 cup freshly grated Parmesan
1/2 cup chicken stock
2 tablespoons unsalted butter, melted
1 cup cake flour
2 tablespoons chopped fresh flat leaf parsley
2 teaspoons fresh thyme leaves
2 scallions, chopped
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • For the blistered tomato dip: Spray a popover pan with nonstick spray and place in the oven. Preheat the oven to 400 degrees F.
  • Add the tomatoes, olive oil, sugar, salt, vinegar, pepper, thyme and rosemary to a large skillet. Toss the tomatoes to evenly coat. Cook over medium heat until the skins blister and the juices release, about 10 minutes. Let cool slightly, then remove and discard the herb sprigs and pulse in a blender 3 to 4 times to make a chunky dip (see Cook's Note). Set aside.
  • For the popovers: Clean the blender and put in the eggs and milk. Blend until frothy, about 1 minute. Add the Parmesan, chicken stock and butter. Blend until incorporated and homogenous, 1 minute more. Add the flour, parsley, thyme, scallions, salt and pepper to the batter. Blend once again, just until incorporated.
  • Divide the batter evenly among the 6 popover cups, filling each halfway. Bake the popovers, rotating the pan after 20 minutes, until golden brown and puffed above the edge of the pan, about 35 minutes.
  • Serve warm with the blistered tomato dip.

FOOLPROOF POPOVERS

3 tablespoons melted butter, divided
2 eggs
1 cup milk, warmed for 30 seconds in the microwave (should be lukewarm to warm)
1 cup all-purpose flour
1 teaspoon kosher salt

Steps:

  • Special equipment: muffin tin
  • Preheat the oven to 400 degrees F.
  • Using a pastry brush, coat 8 muffin cups with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes. Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth. Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 35 minutes. Remove from the oven and serve warm.

There are three secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section not more than half full and no peeking while they're in the oven!

1 1/2 tablespoons unsalted butter, melted, plus softened butter for greasing pans
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Steps:

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

TRADITIONAL POPOVERS

This recipe is for traditional popovers. They can be served plain, but my family prefers them with raspberry butter.

1 cup all-purpose flour
¼ teaspoon salt
3 eggs
1 cup milk
1 tablespoon unsalted butter, melted
2 tablespoons unsalted butter, chilled

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Spray a popover pan with nonstick cooking spray. Place pan on center rack of oven and preheat for 2 minutes.
  • Blend flour, salt, eggs, milk, and melted butter until it looks like heavy cream, about 1 to 2 minutes.
  • Cut chilled butter into 6 even pieces. Place 1 piece of butter in each cup and place pan back in oven until butter is bubbly (about 1 minute).
  • Fill each cup half full with batter and bake 20 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake for another 15 to 20 minutes.

13 1/2 oz all purpose flour
1/2 tsp salt
6 eggs
18 oz milk
1 oz butter, melted
2 oz butter cut into small squares

Steps:

  • 1. Heat the oven to 400*F. Prepare either two popover pans or a cup cake tin by greasing and then adding one square of butter in each mold. When the oven has reached 400*F place the pan in the oven until the butter melts 2 to 3 minutes
  • 2. Be careful not to burn the butter in the pan
  • 3. Place all of the remaining ingredients in the blender or the bowl of a food processorfitted with a blade attachment and mix well.
  • 4. Fill each pan 2/3 to 3/4 full of the batter
  • 5. Bake at 400*F for 20 minutes.
  • 6. Lower the heat to 300*. DO NOT OPEN THE OVEN. Let bake for another 15 to 20 minutes until golden.
