We tried this slow-cooker recipe last week and it was outstanding. It has a long list of ingredients, but since it is a prize-winning recipe, I went ahead and made it, and I'm glad I did!

1 lb turkey breast tenderloin, cut into 1-inch pieces
1 (28 ounce) can diced tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 (8 ounce) can tomato sauce
1 cup peeled seeded and cubed butternut squash or 1 cup pumpkin
1 medium onion, chopped
1/2 cup chicken broth
1/2 cup frozen whole kernel corn
1/2 cup dried cranberries
1 fresh jalapeno pepper, seeded and finely chopped
1 tablespoon chili powder
1 garlic clove, minced
2 cups shredded fresh spinach
4 ounces jalapeno monterey jack pepper cheese, shredded (1 cup)

Steps:

  • In a 5-quart slow cooker, combine turkey, undrained tomatoes, beans, tomato sauce, squash, onion, 12/cup of the chicken broth, corn, cranberries, jalapeno pepper, chili powder and garlic.
  • Cover and cook on low-heat setting for 10-12 hours, or on high-heat setting for 5-6 hours. If desired, stir in additional broth to reach desired consistency. Stir in spinach just before serving. Sprinkle each serving with cheese.

This is my very own recipe that I have won 3 chili cook-offs with! PERFECT for the Super Bowl coming up!!!!

3 lbs hamburger
1 green pepper, diced
1 red pepper, diced
1 medium onion, diced
3 -4 fresh jalapenos, chopped small
salt and pepper
garlic powder
1/3 cup good chili powder
1 3/4 cups ketchup (I like Hunt's)
3 tablespoons lime juice, can sub lemon jc. (I just use the concentrates)
4 -6 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons vinegar
1 1/2 teaspoons mustard
1 1/2 tablespoons cumin
3 cups spicy hot V8
1 (16 ounce) can dark red kidney beans, rinsed and drained
2 (8 ounce) packages fresh sliced mushrooms, can sub jarred
1 (14 1/2 ounce) can del monte original stewed tomatoes, with the juice and break up tomatoes
1 cup beef broth (optional)
extra salt and pepper
more garlic powder

Steps:

  • Stir and bring just to a low simmer, reduce heat and cook for at least 1-2 hours in a crockpot Thick, rich and slightly sweet/slightly hot, very unique!

SQUASH-BLACK BEAN CHILI

3 tablespoons extra-virgin olive oil
1 large onion, chopped
2 bell peppers (1 red, 1 yellow), chopped
Kosher salt
3 cloves garlic, minced
1 tablespoon ancho chile powder
1 tablespoon hot or mild New Mexico chile powder
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons dried oregano
2 tablespoons tomato paste
1 28-ounce can diced fire-roasted tomatoes
2 15-ounce cans black beans (do not drain)
2 bay leaves
1 small butternut squash (about 1 pound), peeled and cut into 1/2-inch pieces (about 3 1/2 cups)
1 small rutabaga (about 1 pound), peeled and cut into 1/2-inch pieces (about 3 1/2 cups)
Pepitas, sliced scallions and shredded cheddar cheese, for topping

Cornbread, for serving

Steps:

  • Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the onion and bell peppers, season with salt and cook, stirring occasionally, until the vegetables are tender and lightly browned, about 10 minutes. Add the garlic and cook 1 minute. Add the chile powders, cumin, coriander, oregano and tomato paste. Cook, stirring, until the vegetables are coated in the spice mixture, about 2 minutes, adding a splash of water if the mixture is dry.
  • Add 2 cups water, the tomatoes, beans, bay leaves and 1 teaspoon salt to the pot. Bring to a boil, then reduce the heat to a simmer and stir in the squash and rutabaga. Partially cover and cook, stirring occasionally, until the vegetables are tender and the chili is slightly thickened, 30 to 40 minutes. (Add up to 1/2 cup water if the chili gets too thick.) Remove the bay leaves and season with salt. Serve with assorted toppings and cornbread.

This is the Hormel Five-Alarm Chili Cook-Off prize winning recipe from firefighter Jason Yamamoto, St. Paul, MN, Station 8. He won $5000 for the fire department. I have not made this, but I think firehouse recipes are fun.

1 lb ground beef
1 can hormel chili with beans
1 (15 ounce) can chili beans, rinsed
1 (15 ounce) can whole tomatoes
2 (8 ounce) cans tomato sauce
2 (8 ounce) cans tomato paste
1 habanero pepper, finely chopped
1 medium onion, finely chopped
3 tablespoons masa harina flour (corn flour)
2 -3 tablespoons dried chipotle powder
10 -12 tablespoons chili powder
1 -2 teaspoon garlic powder
salt and pepper
cayenne pepper
shredded cheddar cheese (optional)
sour cream (optional)
chopped green onion (optional)

Steps:

  • Heat skillet over medium heat (hot enough to get a sizzle from the meat).
  • Brown ground beef.
  • Drain fat.
  • Return meat to large stockpot.
  • Add Hormel Chili, chili beans, tomatoes, tomato sauce, tomato paste, habanero pepper and chopped onion.
  • Stir in masa, chipotle pepper powder, chili powder and garlic powder.
  • Add salt, pepper and cayenne pepper to taste.
  • Simmer over medium heat for 1 hour.
  • (Note: the longer chili simmers, the hotter it becomes.) Serve in soup bowls with optional garnishes.

2 teaspoons white wine vinegar
2 teaspoons canola oil or 2 teaspoons corn oil
1 teaspoon caraway seed
2 teaspoons chopped fresh oregano
1 garlic clove, minced
1 pinch sugar
1 pinch salt
1 pinch pepper
15 -20 medium radishes (or shaved) or 15 -20 large radishes, trimmed and sliced thin (or shaved)

Steps:

  • In a small bowl, combine vinegar, oil, caraway, oregano, garlic, sugar, salt and pepper.
  • In a large bowl, toss radishes with vinegar-oil mixture.
  • Cover and refrigerate at least 1 hour before serving.
