BLACKBERRY COBBLER
Steps:
- Preheat oven to 350 degrees F. Spray 8 (4-inch) ramekins with butter flavored cooking spray and set aside.
- In a bowl combine thawed blackberries, tapioca, lemon juice, 1/4 cup of cream soda and sugar. Transfer to ramekins.
- In a large bowl combined biscuit mix and remaining cream soda. Mix until well blended. Sprinkle biscuit mix over berries. Dust with sugar. Bake for 30 to 40 minutes. Serve warm.

- Melt 1/2 c butter in 9 x 13" glass dish.
- Mix together 1 1/2 c sugar, flour& baking powder.
- Add milk& lightly whisk.
- Pour batter on top of melted butter in baking dish.
- On med.
- heat, cook the blackberries and 1 1/4 c sugar until mixture begins to boil.
- Add blackberries to top of batter and bake in 350 deg preheated oven until batter begins to brown (approx. 20 mins) Cover with as much brown sugar topping as desired.
- (This recipe may be enough topping for 2 cobblers, according to taste) Bake until topping begins to brown, approx.
- 10 mins.
- Cool and top with vanilla ice cream.

- Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
- In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
- Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. - Place the blackberries in a large bowl. Combine the sugar, cornstarch and lime zest; sprinkle over berries and gently toss to coat. Pour into a greased 9-in. square baking dish., In a large bowl, combine the flour, 2 tablespoons sugar, baking powder, salt and baking soda; cut in 5 tablespoons butter until crumbly. - Preheat an oven to 400 degrees F (200 degrees C).
- Place the blackberries in a large saucepan with 1 cup of sugar. Dissolve the cornstarch in the cold water, and stir into the berries. Bring to a simmer over medium-high heat, and cook until bubbly and thickened, 3 to 5 minutes. Pour the blackberries into a 9x13-inch baking dish; set aside.
- Whisk the flour with 1/2 cup sugar, baking powder, cinnamon, and salt in a mixing bowl. With a pastry cutter, cut in the cold butter until crumbly. All of the southern women in my book club love to eat. Each month we choose a potluck theme. The theme this month was 'Soul Food Throw Down.' Our dessert this month was blackberry cobbler. This is an easy recipe that uses canned blackberries. It's best with a big scoop of vanilla ice cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut the shortening into 2 cups of self-rising flour in a bowl with a pastry cutter until the shortening forms small pieces the size of peas. Add the water, 1 tablespoon at a time, just until the dough holds together and is workable. Divide the dough into 2 balls. On a well-floured surface, roll out a dough ball into a piece about 9 inches square and 1/4 inch thick. Lay the dough into the bottom of a 9x9-inch baking dish.
- In the same bowl you used to mix the dough, pour the blackberries with their juice, 3/4 cup of sugar, and 1/3 cup of self-rising flour. Mix until the sugar has dissolved, and pour the filling over the crust. Roll out the remaining dough ball into a square about 9 inches square, and cut the dough into strips. Lay the strips over the filling. Cut the butter into thin slices, and lay the slices over the strips of dough. Sprinkle with 1/4 cup of sugar.
- Bake in the preheated oven until the top crust is golden brown and the filling is bubbling, 30 to 40 minutes.

- Stir together the sugar, flour, butter and vanilla.
- Gently stir in blackberries.
- Spoon blackberry mixture into a lightly greased 11 x 7 baking dish.
- Cut the piecrust into strips and arrange on top of blackberry mixture.
- Mix together the egg white and water.
- Brush the pie crust strips with this egg wash.
- Sprinkle with sugar.
- Bake at 425 for 45 minutes, or until crust is golden brown and blackberries are bubbly.
