PORCINI-CRUSTED FILET MIGNON WITH FRESH HERB BUTTER

Steps:
- Mix first 4 ingredients in small bowl for herb butter. Season butter to taste with salt and pepper. Process dried porcini mushrooms in spice grinder to fine powder. Transfer powder to plate. Sprinkle steaks with salt and pepper. Press steaks into porcini powder to coat both sides well.
- Melt 2 tablespoons herb butter in heavy large nonstick skillet over medium heat. Add steaks to skillet and cook to desired doneness, about 6 minutes per side for medium-rare. Transfer steaks to plates. Spoon rounded tablespoon of herb butter atop each steak and serve.
FILET MIGNON WITH BLACKBERRY SAUCE
This is from the Food Network. I changed it by adding a chipotle pepper to the sauce for a spicy, sweet, smokey flavor.

Steps:
- Season steaks with salt, pepper and garlic.
- Heat oil over medium-high heat until almost smoking.
- Sear the steaks in the hot oil for 3 minutes per side for medium-rare.
- Transfer the steaks to a serving plate, tent with foil, and let stand.
- Using the same skillet, add the red wine, scraping up any browned bits on the bottom of the pan.
- Let wine boil until reduced by half.
- Add broth, blackberry preserves and chipolte pepper.
- Return to a boil and reduce by half. (The sauce should coat the back of a spoon.).
- Whisk in the butter.
- Season sauce with additional salt and pepper, to taste.
- Drizzle sauce over the steaks.

- Combine crab and 3/4 cup spreadable cheese in a small bowl. Cut a horizontal pocket in each steak. Fill each pocket with 1/3 cup crab mixture. Place steaks on a greased broiler pan. Sprinkle with salt and pepper., Broil 4 in. from the heat for 10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), spooning the remaining cheese over steaks during the last 2 minutes of broiling. Let stand for 5 minutes before serving.

- in a ziploc bag add all ingrients except butter.
- marinate 6-8 hours.
- remove bag 30 minutes before cooking.
- melt butter in heavy bottom skillet.
- sear steaks until desired doneness.
- 5 minutes each side for rare, 10 minutes each side for well done.
