2 slice baguette
4 Tbsp boursin cheese
1/4 c red grapes (seedless), sliced in half
4 Tbsp diced tomato
2 Tbsp diced red onion
2 Tbsp diced cucumber
1 Tbsp diced red pepper
1/4 tsp salt
1/4 tsp pepper
1/8 tsp garlic
1 tsp olive oil
dash of dried parsley flakes

Steps:

  • 1. Spread 2 tbs boursin cheese on each baguette slice. Toast in toaster oven for 3-4 minutes, until bread is crispy on sides.
  • 2. In the meantime, mix the rest of the ingredients (except grapes and parsley) in bowl.
  • 3. Top bread with the grapes, arranging them to cover the entire slice.
  • 4. Spoon the mixture over the top, sprinkle with parsley and enjoy!

2 Ripe Plum Tomatoes, Cored, Seeded, & Chopped
1 Teaspoon Finely Chopped Basil
1 Teaspoon Olive Oil
Salt & Pepper
3/4 Cup Seasoned Panko Breadcrumbs
2 Teaspoons Olive Oil
1 (5 Ounce) Container of Boursin Garlic & Herb Cheese
1 (8 Ounce) Cream Cheese At Room Temperature
1 Cup Finely Shredded Mozzarella Cheese
3/4 Cup Grated Parmesan Cheese
2 Large Plum Tomatoes, Cored & Seeded, Then Chopped
1/2 Cup Chopped Sun-Dried Tomatoes Packed In Oil, Drained & Chopped
1/2 Cup Fresh Basil Leaves
1 Large Garlic Clove, Minced
1/2 Teaspoon Red Chili Flakes
1 Teaspoon Black Pepper
2 Long Skinny Baguette Breads, Cut Into 1/2 Inch Slices
Extra Virgin Olive Oil

Steps:

  • Place the cheese spread ingredients into a food processor and pulse until mixed. (Do not mix until completely smooth)
  • Scoop the mixture out onto a sheet of plastic wrap, and shape into a ball or oval.
  • Refrigerate for 6 hours or overnight.
  • Just before serving, heat the olive oil in a skillet over medium heat and add the breadcrumbs.
  • Cook the crumbs until golden brown, stirring continually, about 4 to 5 minutes.
  • Allow to cool to room temperature.
  • Remove the cheese ball from the refrigerator, unwrap, and roll in the breadcrumbs.
  • In a small bowl, mix together the garnish ingredients.
  • Place the cheese ball onto a large platter and then spoon the garnish on top.
  • Grill the bread slices until lightly browned on both sides, then brush with olive oil.
  • Arrange the bread slices around the cheese ball and serve immediately.

Bruschetta with tomatoes, basil, garlic and olive oil image

4 tbsp olive oil
2 slices ciabatta bread
½ tsp sea salt
1 clove garlic, peeled and halved
2 tbsp chopped fresh parsley, chopped
2 vine tomatoes, de-seeded and chopped
1 clove garlic, finely chopped
6 basil leaves, torn
3 tbsp olive oil
salt and freshly ground black pepper

Steps:

  • For the toasted bread, drizzle the oil over the ciabatta and sprinkle over the salt. Heat a griddle pan until smoking and chargrill the bread for 2-4 minutes on each side, or until golden-brown and toasted. Remove from the pan and rub each slice of toast with the cut-side of half a garlic clove.
  • For the tomato topping, combine all the ingredients in a bowl and mix well, then season, to taste, with salt and freshly ground black pepper.
  • To serve, pile the tomato mixture on top of the toasted bread.
