Black-eyed peas add protein and a slight smoky taste to this vegetarian dish. To save some time when preparing this recipe, mince the garlic and chiles together.

2 tablespoons vegetable oil
1 medium onion, finely chopped
4 cloves garlic, minced
1 jalapeno chile, minced (ribs and seeds removed for less heat, if desired)
Coarse salt and ground pepper
2 cans (15 1/2 ounces each) black-eyed peas, drained and rinsed
1 package (10 ounces) frozen corn
1/2 cup chopped fresh cilantro
12 (6-inch) corn tortillas, heated
4 ounces soft goat cheese, crumbled
Shredded lettuce, salsa, and sliced radishes, for garnish (optional)

Steps:

  • Heat oil in a large skillet over medium heat. Add onion, garlic, and jalapeno; season with salt and pepper. Cook, stirring often, until softened, 5 to 7 minutes.
  • Add peas, corn, and 2 cups water. Simmer over medium-high heat until corn is tender and most liquid has evaporated, 12 to 15 minutes. Stir in cilantro; season again with salt and pepper. Remove from heat.
  • To serve, fill heated tortillas with black-eyed pea mixture, goat cheese, and garnishes, as desired.

1 tablespoon olive oil
1/2 medium onion, diced
2 garlic cloves, minced
1 tomatoes, diced
2 (15 ounce) cans black-eyed peas, drained and rinsed
1 (15 ounce) can unsweetened corn kernels, drained and rinsed
1/4 cup salsa, plus additional for serving
1/4 cup chopped fresh cilantro
12 taco shells
1 cup shredded cheddar cheese
2 cups chopped iceberg lettuce

Steps:

  • In a large skillet, heat oil over med-high heat; add in onion; stir/saute until is starts to brown, about 5 minutes; add in garlic; stir/saute until fragrant, about 30 seconds.
  • Add in tomato, saute for 2 minutes; add in the peas, corn, salsa, and cilantro; stir the mixture until it is heated through; taste and season with salt/pepper if needed.
  • Heat the taco shells on a baking sheet in the oven for about 5 minutes.
  • Assemble the tacos at the table, with pea mixture, Cheddar cheese, lettuce, and extra salsa.

I make these with leftover cooked black-eyed peas cooked with ham hocks or smoked turkey from New Year's. I sometimes top with a fried green tomato or left over candied yams. Get creative with them. I've tried several variations. This is the basic version.

½ pound bacon
3 cups canned black-eyed peas, rinsed and drained
2 tablespoons minced shallot
⅓ cup chopped roasted red peppers
3 tablespoons all-purpose flour, or as needed
salt and black pepper to taste
1 tablespoon butter
1 tablespoon vegetable oil

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Mash the black-eye peas in a bowl with a fork. Crumble the bacon into the peas, and stir in the shallot, red peppers, and enough flour to make the mixture stick together. Season to taste with salt and pepper. Form the black-eye pea mixture into 4 patties.
  • Melt the butter with the vegetable oil in a large skillet over medium heat. Cook the patties until golden brown and crispy on each side, about 4 minutes per side.

1 green bell pepper, diced
1 jalapeno pepper, finely diced
1 tablespoon chili powder

1 (28 ounce) can fire-roasted tomatoes, crushed with juice
1/2 cup chicken broth
1/4 cup sour cream, reduced fat
1/4 cup cilantro leaf

Steps:

  • Heat the oil in a large pot over medium heat. Add onion and cook till softened. Add garlic and cook 30 seconds. Add turkey and cook till done. Stir in the bell pepper, jalapeno pepper and chili powder and cook 1 minute.
  • Add the peas, tomatoes and chicken broth. Bring to a boil, reduce heat to medium low, cover and simmer, stirring a few times, for about 20 minutes.
  • Serve topped with a dollop of sour cream and sprinkle of cilantro leaves.

  • Pre-heat the oven to 400 degrees Fahrenheit. Place diced sweet potatoes on a large sheet pan and drizzle with 1 1/2 teaspoons olive oil, 1/4 teaspoons salt. 1/4 teaspoon smoked paprika and 1 pinch black pepper. Toss to coat and roast until sweet potato is tender, about 25 minutes, flipping once. Set aside.
  • Heat a large pan with 1 teaspoon olive oil. Add the onion, green pepper and a pinch of salt. Cook until onion and pepper soften, 3-5 minutes. Add in the garlic, stir for 1 minute and then add in the black eyed peas and sweet potatoes. Season with 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon cumin, 1/2 teaspoon paprika, and 1/4 teaspoon smoked paprika. Stir and cook until heated though, 5 minutes.
