1 cup quinoa, rinsed
1 ½ cups water, or vegetable broth
1 ¼ cups salsa
1 tablespoon cumin
15 oz black beans, 1 can, drained and rinsed
1 cup frozen corn, defrosted
salt, to taste
olive oil, to taste
1 avocado, mashed
1 clove garlic, minced
2 teaspoons lemon juice
3 tablespoons olive oil
salt, to taste
pepper, to taste
4 tablespoons water
tortilla, to serve, optional

Steps:

  • In a medium saucepan, combine quinoa and water, and bring to a boil over high heat. Reduce heat to low, cover with a lid, and simmer for 10 minutes.
  • Add in salsa and cumin, and cover for 5 more minutes or until quinoa is fluffy.
  • Add in black beans, corn, salt, and olive oil, and stir until combined.
  • For the avocado dressing, combine avocado, garlic, lemon juice, olive oil, salt, and pepper in liquid measuring cup and whisk until smooth.
  • Whisk in water a little bit at a time until desired consistency is reached. 6. For extra smooth consistency, process all ingredients in blender or food processor.
  • Portion out into 4 containers and refrigerate for up to 5 days.
  • Enjoy!

1 medium onion, finely chopped
4 cloves garlic, minced
1 1/2 cups chicken stock
3/4 cup golden quinoa, rinsed
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Salt and freshly ground black pepper
5 ounces baby spinach
One 12-ounce bag frozen sweet corn kernels, thawed
Two 15-ounce cans black beans, drained and rinsed
1 to 2 ounces feta cheese, crumbled
2 tablespoons fresh cilantro leaves, torn, for garnish

Steps:

  • In a medium saucepan set over medium heat, heat the oil until shimmering, about 2 minutes. Add the onion and saute until browned, 5 to 7 minutes. Add the garlic and saute for 2 minutes more. Add the stock and quinoa and mix until fully combined. Add the cumin, cayenne, and some salt and pepper.
  • Increase the heat to high and bring the mixture to a boil. Immediately reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until all the liquid is absorbed. Add the spinach and gently toss with the quinoa until wilted.
  • Remove the pan from the heat. Stir in the corn and black beans. Crumble the feta over the top and garnish with cilantro.

This is so easy and fast to make, and tastes amazing! Even my carnivorous boyfriend loves it. Serve cold as a mid-day salad, as a side dish, or serve warm as the main course. The thing I love most about this meal is its versatility. This is how I usually make it, but I just came up with it one day when wanting a quinoa, black bean, and corn recipe. Feel free to change to suit your preferences! I make it cheater-style with salsa, but it can easily be made with fresh or cooked veggies of your choice. It can be a cool summer salad, or a hearty warm winter dinner by the fire. This is the first of my recipes that I have shared.

1 jalapeno, minced
1 cup quinoa
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (14.5 oz) can fire-roasted diced tomatoes
1 cup corn kernels, frozen, canned or roasted
1 teaspoon chili powder
1/2 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
1 avocado, halved, seeded, peeled and diced
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro. Serve immediately.

Top it with some avocado, tomato, spinach, tomatoes, etc. and you are set to go:) Although it sounds a little weird to put steak seasoning (yes, it is vegan...) in a vegan recipe, it really works in this one and truly makes this black bean burger unique AND tasty!

Number Of Ingredients 6

1/2 cup quinoa, dried
1 cup onion, finely chopped (roughly the size of a small onion)
1/4 cup sun-dried tomato packed in oil, finely chopped (about 6 pieces)
1 (15 ounce) can black beans, rinsed and drained, divided
2 teaspoons garlic, minced (about 2 cloves garlic)
2 teaspoons steak seasoning, dried (I use McCormick's Montreal Steak seasoning)

Steps:

  • In a small saucepan combine quinoa and 1 1/4 cup water seasoned with a dash of salt and bring to a boil.
  • Once boiling, cover, and reduce to medium-low heat to simmer for about 20 minutes or until all the liquid is absorbed. When the quinoa is done, you should have about 1 1/2 cups cooked quinoa.
  • While waiting for the quinoa to cook, put the onion and sun-dried tomatoes in a medium-sized frying pan and cook for 3-4 minutes or until the onion is soft. The genius part of having the sun-dried tomatoes in this step is that there is no need to add any extra oil, as the the tomatoes should have enough oil still on them to cook up the onion.
  • Add garlic, steak seasoning, 3/4 cup black beans, and 1/2 cup water (you can add a little more if you want, but I find that my burgers don't stay together very well using more water), stirring to combine.
  • Simmer this mixture for about 5 minutes or until most of the liquid has evaporated (VERY important as the less liquid you have, the more likely the patties will stay together).
  • Preheat oven to 350 degrees.
  • Place hot mixture along with 3/4 cup cooked quinoa into food processor and pulse until smooth.
  • Transfer blended mixture into a mixing bowl and stir in remaining 3/4 cup cooked quinoa and 3/4 cup black beans. You can choose to season with salt and pepper at this time, but I usually feel as if the steak seasoning is enough for my taste buds.
  • Allow the mixture to cool a couple minutes, so you don't burn your hands during the patty-making process.
  • Mold the mixture into 8 patties, or about 1/2 cup each by patting with hands.
  • Place on greased baking sheet and bake for about 20 minutes.
  • Flip burgers and bake for another 10 minutes (the outside should be crispier).
  • Serve with desired toppings on buns or bread and enjoy!
