I finally invented a healthy quinoa burger that wasn't dry and crumbly or really boring. These fit the bill-even my grandkids prefer them over hamburgers. They taste like chips and dip in a burger! -KT Rehrig, Allentown, Pennsylvania

2/3 cup water
1/3 cup quinoa, rinsed
1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) salsa, divided
1 cup crushed baked tortilla chip scoops
2 tablespoons reduced-sodium taco seasoning
8 whole wheat hamburger buns, split
8 lettuce leaves
8 slices tomato
8 slices red onion

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed. Remove from heat; fluff with a fork., In a large bowl, mash black beans. Add 1 cup salsa, tortilla chips, taco seasoning and cooked quinoa; mix well. Shape into eight 1/4-in.-thick patties., Grill, covered, over medium heat 5-6 minutes on each side or until heated through. Serve on buns with lettuce, tomato, onion and remaining salsa.

1 (15 ounce) can black beans, rinsed and drained
1 ½ tablespoons water, or more if needed
1 tablespoon freshly squeezed lemon juice
1 clove garlic, minced
1 teaspoon ground cumin, or more to taste
1 teaspoon chili powder, or more to taste
1 teaspoon onion powder, or more to taste
½ teaspoon salt

Steps:

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.
  • Chill for at least 1 hour before serving.

Black beans are the traditional bean to use in this type of dip, but other dried beans, such as pinto, or Anasazi, work well too. If you prefer, or if you are serving someone with a wheat intolerance, substitute hight-quality corn tortillas for the wheat tortillas.

1/2 cup dried black beans, rinsed or 1/2 cup one 15oz can low-sodium black beans, drained and liquid reserved
1 teaspoon red pepper flakes (to taste)
1/2 teaspoon garlic, minced
1/2 teaspoon ground cumin
1 dash hot chili sauce, to taste
40 inches whole wheat tortillas
2 large egg whites, lightly beaten
1 tablespoon black sesame seed

Steps:

  • To make Dip: Put the beans in a bowl and add enough cold water to cover by 2 inches. Set aside for at least 4 and up to 8 hours. Change the water once or twice during soaking. Drain and rinse the beans.
  • Put the beans in a medium sized saucepan and add 3 cups of water and the pepper flakes. Bring to a boil over high heat. Reduce the heat and simmer for about 1 1/2 hours, or until the beans are tender and the water just barely covers the beans, (Add more water if necessary while cooking the beans). Drain, reserving the cooking liquid. Set aside to cool.
  • Transfer the beans and half the cooking liquid (or half the liquid fro the can) to a food processor. Add the garlic, cumin, and chili sauce. Process until coarsely blended,. Add more of the bean liquid if necessary to thin the dip, Transfer to a serving bowl and set aside.
  • To Make the Chips: Preheat the oven to 350°F Lightly spray a baking sheet with vegetable oil spray.
  • Lay the tortilla on a work surface and brush them on both sides with egg whites. Cut the tortillas into 10 to 12 triangles each and lay the triangles on the baking sheet. Sprinkle the trangles with the sesame seeds. Bake for about 10 minutes, then remove from the oven. Use a metal spatula to loosen any chips that have stuck to the sheet, turn the chips over and bake for a few more minutes, until golden brown, Lift from the baking sheet and serve warm or at room temperature with the dip.

1 onion , chopped
1 tbsp olive oil
1 tsp soft brown sugar
1 tsp wine vinegar
1 tsp Cajun seasoning
400g tin mixed beans , rinsed and drained
400g tin chopped tomatoes , with garlic
handful grated cheddar
100g tortilla chips
serve with chopped avocado (optional)

Steps:

  • Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
  • Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

2 tablespoons vegetable oil
1 cup diced white onion
1 tablespoon finely chopped garlic
1 -2 tablespoon canned diced jalapeno pepper
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups mozzarella cheese or 1 1/2 cups oaxaca cheese, shredded
1/2 cup sour cream
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
salt, to taste
fresh ground black pepper, to taste
1/2 cup crumbled Cotija cheese or 1/2 cup feta cheese

Steps:

  • In a medium skillet, heat oil over medium heat. Add onion, garlic and jalapeno peppers; saute until onions are soft, about 3 minutes.
  • Add beans and smush with the back of a spoon or potato masher until softened and heated through, another 2-3 minutes.
  • Remove from heat; stir in shredded mozzarella or Oaxaca cheese, sour cream, cumin and cayenne pepper, stirring until cheese is melted.
  • Season with salt and pepper to taste.
  • Transfer to a serving dish and sprinkle Cotija or feta on top. Serve warm or at room temperature with chips and/or vegetables.
  • Leftover dip can be refrigerated and reheated in a microwave.
