FAMILY-FAVORITE STEW
Cook this hearty stew on the stove until it's ready for the biscuit that bakes in the oven. It's the easiest stew you'll ever bake!

- Heat oven to 425°F. In ovenproof Dutch oven, cook beef over medium heat, stirring occasionally, until brown; drain. Stir in water, tomatoes, tomato paste and vegetables. Heat to full boil, stirring occasionally; remove from heat.
- In medium bowl, stir Bisquick mix and milk until soft dough forms. Drop by 6 spoonfuls onto beef mixture.
- Bake uncovered 20 to 25 minutes or until biscuits are golden brown and stew is bubbly.

BEEF STEW FOR TWO
A down-sized version of my favorite beef stew, perfectly sized for two. It may be smaller in size but is every bit as delicious as the full sized version!

Steps:
- Toss the beef cubes together with the flour, along with some salt and pepper to taste.
- Heat the oil in a heavy bottomed stove top/oven safe casserole dish/Dutch oven, over moderate heat. (You will not need a really large one, but it should hold at least four to five cups.)Add the beef cubes and brown them all over.
- Once they have browned add the onions, garlic, carrots, swede and parsnip, along with the herbs. Sauté over medium heat for about 10 minutes, then add the stock, ketchup, horseradish, Worcestershire sauce, and Balsamic vinegar. Bring to the boil, then reduce to a simmer. Simmer while you are preheating the oven.
- Preheat the oven to 325*F/160*C/ gas mark 3.
- Cover the casserole tightly and pop it into the oven. Bake for 1 hour.
- Peel your potato and cut into large chunks.
- Add the potato to the casserole, give everything a good stir, and return to the oven, again, tightly covered.
- Bake for a further 1 to 1 1/2 hours until the meat and vegetables are tender.
- If you are making the optional dumplings. Stir together the baking mix and the milk to combine and dollop on top of the hot stew. Cover tightly and return to the oven for a further 15 minutes. Delicious!

Steps:
- Melt shortening in large skillet; brown meat well.
- Spoon off drippings.
- Add 4 cups water, the salt, pepper and bay leaf.
- Heat to boiling; reduce heat.
- Cover and cook about 2 hours, stirring occasionally.
- Stir in carrots, onion and potato; cook 20 minutes longer.
- Stir in peas.
- Blend 2 Tablespoons baking mix and 1/4 cup water; stir into stew.
- Cook over medium heat until mixture thickens and boils.
- FOR THE DUMPLINGS:.
- Stir 2 cups baking mix, the parsley and milk to a soft dough.
- Drop dough by spoonfuls onto boiling stew.
- Cook UNCOVERED over low heat 10 minutes; COVER and cook 10 minutes longer.

- Heat oven to 400°F. Mix beef and 1/4 cup of the Bisquick® mix until beef is coated. In 12-inch skillet, heat oil over medium heat. Cook beef in oil, stirring occasionally, until brown.
- In 3-quart casserole, mix remaining 1/2 cup Bisquick® mix and the broth, using wire whisk. Add beef, carrots, celery, onions and thyme. Bake uncovered 1 hour; stir. Season with salt and pepper. Stir in peas.
- In small bowl, stir Parmesan Biscuit Crust ingredients until blended. Pour over stew. Bake 25 to 30 minutes or until golden brown.
