12 oz refrigerated biscuit, 1 tube
6 eggs
½ cup milk
½ teaspoon pepper
½ teaspoon salt
1 lb cooked sausage
1 cup shredded cheese
4 tablespoons butter
4 tablespoons flour
salt, to taste
pepper, to taste
2 cups milk

Steps:

  • Cut each biscuit into 8 pieces. Set aside.
  • In a bowl, mix the eggs, milk, pepper, and salt. Set aside.
  • For the gravy: melt the butter in a saucepan, over medium heat. Stir in flour, salt, and pepper, and slowly add the 2 cups of milk.
  • Increase to medium-high, bring to a simmer, stirring until gravy is thickened.
  • In a greased 9x13 (22x33 cm) glass baking dish, layer the biscuits, sausage, cheese, egg mixture, and gravy.
  • Bake at 350°F (180°C) for 35-45 min, until the eggs on the bottom are cooked.

1 pound bulk pork sausage
1/4 cup all-purpose flour
3 cups 2% milk
1-1/2 teaspoons pepper
1 teaspoon paprika
1/4 teaspoon chili powder
2-1/4 cups biscuit/baking mix
1/2 cup sour cream
1/4 cup butter, melted

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Remove with a slotted spoon; discard drippings, reserving 1/4 cup in pan. Stir in flour until blended; cook and stir until golden brown (do not burn), 1-2 minutes. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in sausage, pepper, paprika and chili powder. Pour into a greased 13x9-in. baking dish. Cool completely., Meanwhile, in a large bowl, mix baking mix, sour cream and melted butter until moistened. Turn onto a lightly floured surface; knead gently 8-10 times., Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place biscuits over gravy. Refrigerate, covered, overnight., Preheat oven to 400°. Remove casserole from refrigerator while oven heats. Bake, uncovered, until gravy is heated through and biscuits are golden brown, 22-25 minutes., Freeze option: Cover and freeze unbaked biscuits and gravy. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 400°. 2 cups cold water
1 pound sausage
6 large eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place gravy mix in a medium saucepan; gradually whisk in water. Cook over medium heat, stirring frequently, until gravy comes to a boil. Reduce heat and simmer for 1 minute; gravy will thicken upon standing.

If you are like me and love a hearty breakfast of fluffy buttermilk biscuits and a side of scrambled eggs all smothered with sausage gravy, then this recipe is for you. I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

12 ounces of buttermilk biscuit dough
6 eggs
1 (2 3/4 ounce) package peppered gravy mix (makes 2 cups)
1 lb sausage, any flavor (I prefer sage or zesty Italian)
1 cup cheese, shredded (I like to use cheddar)
1/2 cup milk
salt and pepper

Steps:

  • Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
  • Brown the sausage and drain. Scatter the browned sausage over the biscuit pieces, then top with shredded cheese.
  • Whisk the eggs and milk with a pinch of salt and pepper, then pour over the pan.
  • Make gravy according to instructions on package and pour over the pan. Bake for 30 - 45 minutes, depending on how hot your oven runs.

1/2 cup chopped yellow onion (from 1 small onion)
1/4 cup plus 1 Tbsp. unsalted butter, divided
1/3 cup (about 1 1/2 oz.) all-purpose flour
3 cups whole milk
6 ounces pepper Jack cheese, shredded (about 1 1/2 cups)
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray
1 (25-oz.) pkg. frozen Southern-style biscuits (12 count) (such as Pillsbury Grands)
2 tablespoons minced fresh chives

Steps:

  • Preheat oven to 350°F. Place sausage and onion in a large skillet over medium, and cook, stirring often, until sausage crumbles and is no longer pink and onion is translucent, 6 to 8 minutes. Transfer mixture to a plate lined with paper towels to drain. Wipe skillet clean.
  • Reduce heat to low, and add 1/4 cup of the butter to skillet; cook, whisking often, until melted. Whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk; increase heat to medium, and cook, whisking constantly, until thickened and bubbly, 5 to 6 minutes. Whisk in shredded cheese, and cook, whisking often, until cheese is melted and mixture is smooth, 30 to 40 seconds. Stir in sausage mixture, salt, and pepper.
  • Transfer mixture to a lightly greased (with cooking spray) 13- x 9-inch baking dish. Arrange biscuits on top of sausage mixture. Bake in preheated oven until biscuits are golden brown and gravy is bubbly, 30 to 35 minutes. Microwave remaining 1 tablespoon butter in a small microwavable bowl on HIGH until melted, about 20 seconds. Remove casserole from oven; brush biscuits with melted butter, and sprinkle with chives. Let stand 10 minutes before serving.
