BIRTHDAY COOKIE
I got this out of my JC Penny/United Way Cookbook 1996. I've made this several times when the boys were younger - they loved it and they loved helping decorate them.

Steps:
- Cream butter and sugars.
- Add egg and vanilla.
- Mix on low speed, add dry ingredients.
- Mix well. Stir in Chocolate Chips or M&Ms.
- Spray a 12 inch round pizza pan with Pam and spread cookie dough evenly to the edges.
- Bake at 325 degrees F for 15 to 20 minutes, or until light golden brown.
- When cool, decorate as desired.

BIRTHDAY CAKE COOKIES
Nothing says Happy Birthday like made from scratch birthday sugar cookies with lots and lots of sprinkles! This simple funfetti cookie recipe is fun for all occasions, not just your birthday! Birthday Cake cookies are most certainly the new way to celebrate!

Steps:
- In a small bowl, combine flour, salt, baking powder and baking soda. Whisk to combine and set aside.
- In a separate medium bowl, cream together butter, sugar and brown sugar until light and fluffy. This should take about 2-4 minutes. Add in egg and vanilla and beat to incorporate fully.
- Slowly add in the dry ingredients into the wet ingredients and beat just to incorporate (do not over mix!) Gently fold in sprinkles. Chill for at least 1 hour for best results. Roll the dough into balls before chilling to make it easy to pop them on the pan.
- While cookie dough is chilling, preheat oven to 350°F.
- Place cookie dough balls/scoops two inches apart on parchment lined cookie sheet. Bake 9-11 minutes, cookies will be puffed up and may not look 100% done, but pull them just before you think they are done. Allow to cool completely and enjoy. Store in an airtight container for about 3-5 days.

BIG CHOCOLATE CHIP BIRTHDAY COOKIE
My neighbor Marilyn gave me this recipe several years ago; not sure where she got this...but Marilyn....this recipe has 'served me well' over the years!!

Steps:
- Preheat oven to 350 degrees.
- Spray a 15 inch flat pizza pan or 10 inch springform pan with pan spray to prevent sticking.
- Mix flour, soda and salt, set aside.
- Beat butter and shortening in a large bowl with a mixer on medium speed to just combine.
- mix in sugars; beat with electric mixer until mixture is smooth. Mix in egg and vanilla on low speed until blended thoroughly.
- Add flour mixture, mixing just until incorporated.
- Mix in chocolate chips, stir by hand.
- Using fingers, spread dougn into a 10 inch circle on the pizza or springform pan. Smooth edges.
- If using the pizza pan, bake cookie about 14 minutes, until edges are light brown and center is golden.
- If using the springform pan, bake for about 18 minutes, until evenly light brown. Loosen the edge of the cookie from the pan, cool thoroughly. Remove sides of springform pan.
- Optional: Put spoonfuls of peanut butter on top of the cookie as it's cooling; allow it to 'melt' slightly and then spread around. Sprinkle with chocolate chips, allow those to melt and spread around.

BIRTHDAY CAKE COOKIES
adapted from sallysbakingaddiction.com. These cookies are so cute, they look like a cross between a cupcake and a choco chip cookie. They would make a great base for an ice cream sandwich.

Steps:
- In a large bowl, sift together flour, cake mix, and baking soda. Set aside.
- In a separate bowl, cream together the butter and sugars on medium speed. Mix in the egg and vanilla until creamy.
- Add the flour mixture to the wet ingredients and mix until just combined. Do not OVERMIX the dough. Fold in the chocolate chips and sprinkles.
- Cover and refrigerate dough for at least 1 hour, or up to 4 days. Chilling the dough is required in order to avoid the cookie from spreading too much.
- Preheat oven to 350 degrees.
- Scoop rounded tablespoons of the cold dough onto an ungreased baking sheet. Shape your cookie dough balls to be "taller" than they are wide. Keep dough chilled when working in batches.
- Bake for 10-12 minutes until edges are slightly browned. The centers will still appear very soft, but will set as they cool.
- Allow the cookies to cool on the baking sheet for 4 minutes and transfer to a wire rack to cool completely.

CHOCOLATE CHIP COOKIE CAKE
This is one of my very favorite cake recipes. It is so soft and fluffy. I like making it for birthdays and decorating it with chocoate icing.

- Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Place sprinkles in a small bowl.
- In a medium bowl, combine cake mix and baking powder.
- Add eggs and oil and mix until combined.
- Add chocolate and white chocolate chips and stir to incorporate.
- Form balls, 2 tablespoons each, and roll in sprinkles to coat.
- Place on prepared baking sheets, spacing 2-inches apart.
