BIRDIE BARS (GLUTEN-FREE)
Diabetic-friendly, gluten-free snack that is transportable. You can use a combination of any nuts and seeds you like. For a liquid sweetener, I used coconut palm syrup, but you could also use other low-GI sweeteners, such as Jerusalem artichoke syrup or yacon syrup.

Steps:
- Place the first 5 ingredients in a frying pan and toast them until the sesame seeds and coconut flakes turn light brown, stirring constantly.
- In a small saucepan, place nut/seed butter and liquid sweetener on medium heat until it can be easily poured. Pour over the nut/seed mixture.
- Add the last 3 ingredients and mix well.
- Press the mixture into an 8 x 8 square pan and cool at room temperature.
- Infuse love and cut into the size you prefer. Store in a sealed container.

- 1 Place seeds on a baking sheet lined with non-stick baking paper. Toast under grill carefully for about 3-4 minutes. Pour into a mixing bowl.
- 2 Place spread, golden syrup and brown sugar in a non-stick pan. Heat until spread and sugar have dissolved. Increase the heat to high and heat for 3 more minutes until mixture is bubbling and begins to thicken.
- 3 Pour hot syrup mixture into bowl with seeds, fruit and nuts. Mix together then lightly press into a slice tray lined with baking paper. Cut while semi-hot, before it sets completely.

- Combine all ingredients, using your hands to press it together until it is well mixed and a ball shape. Let sit in fridge for 10 minutes. If you'd like to do the easier option, simply press dough into bottom of a parchment lined 8x8" pan; if you'd like to do traditional Twix shapes, roll dough into snakes and press snakes flat on a parchment lined baking sheet. Place shaped dough in freezer for 15 minutes before baking at 325°F degrees for 15 minutes. Remove from oven and let sit for at least 10 minutes (ideally, until they cool completely) before removing from pan.
- Using a food processor or blender, process all ingredients together until very very smooth. If you're using a blender, it helps to start on a "low" setting until everything is more liquidy, then switching to "high" to get rid of any chunks.
- Spread a generous layer of the caramel on top of cookie layer; place caramel-topped cookies in freezer while you melt the chocolate in a double boiler or the microwave. (I did 1 cup chocolate chips + 1/2 Tablespoon coconut oil).
