BILL'S ULTIMATE BUNDT CAKE
This is my DH's FAVORITE, FAVORITE cake. A wonderful woman who worked with me at a real estate office made these at Christmas and gave them to everyone. Instead of a bundt pan, she prepared these in mini loaf pans and gave them to everyone in the office. When I brought this home and we tried it, WE WENT NUTS! My husband begged me to get the recipe from her. Ever since, I've been making this in a bundt pan. But you can, like I mentioned, make it in mini loaf pans, regular loaf pans or even make them into muffins. WARNING....it is SOOOO good. I also apologize because I cannot remember the name of the woman who initially made this for me.

Steps:
- Mix together sugar, nuts and cinnamon for topping and put aside.
- In a large mixing bowl mix together dry cake mix and dry pudding.
- Add oil and sour cream.
- Beat in eggs, one at a time.
- Mixture will be thick and green.
- Generously grease a bundt pan.
- Sprinkle 1/2 of the topping into the bottom of the bundt pan.
- Put half of the cake batter carefully over the topping.
- It is very, very thick so you will not be able to pour it.
- Take a well greased spoon and put dollops evenly around the pan.
- Then using the greased spoon, spread the batter evenly over the topping at the bottom of the bundt pan.
- Sprinkle the rest of the topping mixture over the batter in the bundt pan.
- Again, take the rest of the batter and using the greased spoon, put the dollops over the topping.
- Using the greased spoon, smooth the batter evenly around the pan.
- Bake that cake for 40-45 minutes at 350 degrees.
- (use a cake tester or toothpick to check if done.).
- Cool the cake.
- Then invert the cake onto a nice serving platter.
- Warning- One taste and you'll be hooked!
MOCHA BUNDT CAKE
This is really a wonderful cake. I made about 60 of these cakes for the groom's cake when both of my daughters got married. There was no cake left at the end of the reception.

Steps:
- Grease and flour Bundt pan, shaking out excess flour.
- Combine all cake ingredients in a large mixing bowl, and mix thoroughly.
- Pour into prepared pan.
- Bake at 350ºF.
- for 45-55 minutes, or until tests clean.
- Let cool 5 minutes in pan, then invert onto cooling rack.
- Place cookie sheet under rack, to catch glaze drippings.
- FOR GLAZE: Blend the glaze in a small bowl until sugar is dissolved and smooth.
- Drizzle slowly and evenly over warm cake.
- Use all glaze until it is completely soaked into cake.
- This cake freezes very well!

CARAMEL PEAR BUNDT CAKE
Moist caramel cake, loaded with pears, is doused in caramel and butter sauce for ultimate sweet pleasure!

Steps:
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and baking soda.
- With a hand mixer cream butter and sugar on medium speed until fluffy, about 3 minutes.
- Add eggs and vanilla and mix until fully combined.
- In alternate batches, add dry ingredients and buttermilk, mixing until just combined.
- Fold in pears with a rubber spatula, scraping sides and bottom of mixing bowl. Transfer batter into the greased and floured 25 cm Bundt cake pan (or a silicone one).
- Bake in the oven for 50-55 minutes at 160C, or until a skewer inserted into center of cake comes out clean. Remove from oven and place pan on cooling rack.
- Using a wooden skewer, poke holes in the cake while it's still warm. Carefully pour the brown butter glaze over cake, making sure it gets in all of the holes. Let cake cool completely before removing from pan.
- When cake is inverted and placed on its serving plate, drizzle as much or as little caramel sauce as you'd like.
- Butter glaze:.
- In a small saucepan over medium-low heat, combine the butter, sugars, and vanilla. Cook until fully melted and allow to brown, being careful not to let the mixture boil.
- Caramel sauce:.
- In a medium saucepan over medium heat, combine sugar and water. Stirring constantly with a rubber spatula, heat until clumps form and then melt into thick, amber-colored liquid, being careful not to burn it.
- Carefully stir in the butter until it's melted, 2-3 minutes. Then very slowly drizzle in the heavy cream while stirring. The mixture will bubble and possibly splatter, so be careful. Allow it to boil for 1 minute, then remove from the heat and stir in the vanilla extract. Allow to cool, and reheat as necessary.

Steps:
- Beat butter, sugar, eggs and extract in large bowl on low speed of electric mixer until blended, then on high speed 5 minutes until light and fluffy.
- Combine flour, baking powder and salt. Add dry ingredients alternately with cream to creamed mixture, mixing lightly after each addition. Fold in cherries. Turn batter into greased 12-cup bundt or tube pan.
- Bake at 350F for 65-75 minutes. Cover with foil for last 10 minutes if becoming too brown. Cool in pan 10 minutes. Remove from pan; cool completely. Dust with icing sugar before serving.
- Helpful Hint: A white icing drizzle is a pretty alternative decoration.
