Bhuni Kaleji Masala Recipe is a healthy and traditional nawabi cuisine from the old era. Made with simple at home ingredients.

Mutton Liver - 250 gm
Onion - 1 Pcs (Big) Finely Chopped
Tomato - 1 pcs (Big) Finely chopped
Ginger-Garlic Paste - 1 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Edible Oil - 2 tbsp
Salt - To Taste

Steps:

  • Remove the unwanted skin from it and wash the mutton liver thoroughly. Cut the mutton liver into small cubes of approximate 1-2 inches. Marinate it with ginger garlic paste and keep it aside until you prepare other things.
  • Take a big onion and a big tomato. Chop them finely. Heat a pan and add oil to it. When the oil is hot add the chopped onion to it and saute it. Add chopped tomato to the pan fry for 5 minutes.
  • Add red chili powder, coriander powder turmeric powder, and salt. Mix it well and cook until oil starts to float.
  • Add the marinated Mutton Kaleji and mix it well. Add 2 tablespoon of water to it. Mix it well and cook for another 10 minutes.
  • Be careful while cooking that it doesn't overcook. This might harden the Mutton Liver and spoil your recipe. The nutrients might also burn away by overcooking the mutton liver.
  • Your Healthy Bhuni Kalegi Masala / Mutton Liver Masala is ready to serve. Garnish it with fresh coriander leaves and serve it with chapati or buns (pav). You can eat it raw if you like.

500 g liver, washed, wiped dry
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
1/2 teaspoon chili powder
1/2 cup yogurt
1/4 teaspoon garam masala
salt
2 tablespoons canola oil or 2 tablespoons butter oil
1 cup grated onion
2 tablespoons coriander leaves
lemon wedge, for garnish

Steps:

  • Chop the liver into small pieces and mix in the ginger, garlic, chili powder, yogurt, garam masala and salt.
  • Keep aside for at least 1/2 hours.
  • Meanwhile, heat the oil, add the onions and sauté till golden brown.
  • Add the liver mixture and sauté till the fat separates.
  • Add ½ cup of water and pressure cook for 5 minutes.
  • If not using pressure cooker, cover and cook till liver is tender.
  • Finally, uncover and stir-fry to dry the water completely till oil starts oozing out on the edges.
  • Serve garnished with coriander leaves and lemon wedges.

1 kg liver (kalegi)
2 tablespoons ginger-garlic paste
1 tablespoon red chili powder
1 tablespoon turmeric powder
salt
3 tablespoons oil
3 -5 mint leaves

Steps:

  • Cut liver and boil it with a little water, salt and turmeric powder for 6 minutes.
  • Drain.
  • Cut the liver into medium bite-sized pieces.
  • Mix all the remaining ingredients together alongwith the liver pieces.
  • String the pieces onto skewers.
  • Grill/roast on charcoal.
  • Alternatively, fry in hot oil and drain on clean kitchen napkins before serving.
  • Serve with mint leaves.
