Although I like to try other potato salad recipes, I always come back to this one that I have been making for a while. Combined several recipes and came up with this one.

4 cups cubed cooked potatoes
2 hard-boiled eggs, chopped
1/2 cup chopped onion
1/2 cup celery, sliced
1/4 cup chopped sweet gherkin
1/4 cup chopped dill pickle
1 cup Miracle Whip or 1 cup mayonnaise
1 teaspoon prepared mustard
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • DRESSING: Combine Miracle Whip, or Mayo, mustard, celery seed, salt and pepper. Mix well.
  • Combine potatoes, eggs, onion, celery and pickle.
  • Add dressing to potato mixture and mix lightly.
  • Chill.

Everyone loves my creamy potato salad. It's a favorite at family gatherings. Our family prefers mayo potato salad. You can work with the number of potatoes by how many you want to serve. And then work with how much mayo you need. The buttermilk thins the mayo and makes it really creamy.

6 medium potatoes
3 hard-boiled eggs
1/4 cup dill pickle, diced
1/4 cup green onion, diced
1 (2 ounce) jar pimientos, chopped
1/2-1 cup mayonnaise (not Salad Dressing)
1/4 cup buttermilk
1/2 teaspoon pepper, cracked is good
1/4 teaspoon salt

Steps:

  • Boil potatoes in skins. Cool and chop in small chunks.
  • Chop boiled eggs and add to potatoes.
  • Add pickles, onion and pimentos next.
  • Take about 1/4 cup buttermilk, or make your own by adding about a teaspoon of vinegar to the fresh milk. Once the vinegar is added, the milk will sour very quickly, set it aside.
  • I put about a 1/2 cup (maybe a little more) mayo in a shaker or glass jar. Add the sour milk to your mayo and shake it well.
  • You can add your salt and pepper to this mayo dressing. Then pour it over the potatoes. If you need more or less mayo adjust it so the potatoes are well coated.
  • Stir the potatoes gently, so they stay in chunks.
  • Garnish with paprika or sliced eggs.
  • Chill about an hour before serving, we like it warm, too.

5 lbs little red potatoes
1/2 cup diced scallions
Fresh parsley
1 lb cut up bacon
3 Tbsp flour
1/2 teaspoon salt
1 cup sugar
1 egg
1 1/2 cups milk
1/2 cup rice vinegar
1 Tbsp butter
16 ounces Miracle Whip (do not substitute)

Steps:

  • Cut up and cook potatoes. Cool and add scallions and some fresh parsley. Cook bacon till crisp and save ALL the grease. Mix flour, salt, sugar and egg. Stir in milk, rice vinegar and cook over medium heat always stirring till thickened. Take off heat. Add butter and let it cool. Whisk in Miracle Whip(has to be Miracle Whip). Add bacon and ALL the grease. Pour over potatoes, scallions and fresh parsley. Put in fridge.

POTATO AND BEET SALAD

Every Easter my Mom would make this potato salad. This is not exactly hers but my version. Don't wait for Easter make it for your next picnic! Do use new potatoes if you like them firm but I myself like my potatoes soft so I find myself using russets, and if you don't want a precise cut salad with firm potatoes use russet. I find myself rough cutting the russets potatoes because they do fall apart and add to the creaminess of the dressing. FYI-You can toss the cubed, cooked, still warm, potatoes with the vinegar or beet juice and let set till cool even up to over night. Then add remaining ingredients.

1/3 cup white vinegar (or use the juice from the pickled beets for more vibrant color)
1 teaspoon salt
1/2-1 teaspoon pepper
1/2 teaspoon fresh horseradish
2 tablespoons fresh parsley
1 cup mayonnaise (adding more after tossing with salad ingredients for more creaminess if desired)
5 lbs new potatoes, boiled, peeled and cubed
1 (15 ounce) jar pickled beets, drained and diced
1 red onion, diced fine
1 small green pepper, diced fine
1 stalk celery, diced fine
6 eggs, boiled and diced
1 hard-boiled egg, sliced
paprika (smoked is really good)

Steps:

  • Mix all salad dressing ingredients in a large bowl.
  • Toss remaining ingredients into the large bowl with dressing, toss to coat.
  • Chill for at least 1 hour overnight is best.
  • Top with sliced egg and sprinkle paprika.
