BETTY'S BEEF AND VEGETABLE "COTTAGE PIE"

This is a rich and nourishing cottage pie (meat in a tasty vegetable gravy and topped with buttery mashed potatoes) and my kids love this and is even better the next day. Steps:
- 1. To make the meat filling: Heat the meat in a little oil and fry with the onion. Add the vegetables and cook for a further 10 minutes. Add everything else (not the gravy granuals) and cook for 30 - 40 minutes (or until the split peas are cooked) over a medium heat. Add the gravy granuals mixed with water and stir through until thickened. Pre-heat oven to 375oF/190oC.
- 2. To make the potatoes: Boil potatoes in a large pot until tender. Strain well and mash with butter and milk. Taste and season if needed.
- 3. Assembly: Pour the meat into a oiled/buttered lasange dish. Top with the potatoes (I gently drop spoonfuls all over and connect them with a fork) Top with cheese and breadcrumbs if using.
- 4. To bake: Place in a pre-heated oven and bake for 35 - 40 minutes. It should be bubbly and golden. Remove from the oven and let sit for 10 minutes. Serve and enjoy!
BARBECUE BEEF AND CORN SHEPHERD'S PIE

- Cook ground beef and 1/4 cup of the onions in 10-inch nonstick skillet over medium-high heat, stirring occasionally, until beef is brown; drain well. Stir in barbecue sauce, 3/4 cup of the corn and the chilies. Heat to boiling; reduce heat to low to keep warm.
- Meanwhile, cook potatoes as directed on package using water, milk and butter. Stir in remaining onions and corn; let stand 5 minutes.
- Spoon potatoes onto center of beef mixture, leaving 2 1/2- to 3-inch rim around edge of skillet; sprinkle cheese over potatoes and beef mixture. Cover and let stand about 5 minutes or until cheese is melted. Sprinkle corn chips around edge of skillet.

- Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
- In 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 5 minutes, stirring occasionally, until soft. Add beef; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Drain.
- Add mixed vegetables, tomato paste, salt and pepper; cook over medium heat 5 minutes, stirring frequently, until vegetables are hot. In small bowl, mix broth and flour with whisk. - Heat oven to 400°F. Spray 9-inch pie plate with cooking spray.
- In 12-inch nonstick skillet, cook beef, bell pepper and onion over medium-high heat 8 to 10 minutes or until beef is browned and vegetables are softened; drain. Wipe out skillet. Return beef mixture to pan; add taco seasoning mix and water. Cook and stir over medium-high heat 1 to 2 minutes or until well mixed. Remove from heat. Cool 2 minutes.
- Meanwhile, in large bowl, mix milk and egg. Stir in cheese. Stir beef mixture into egg mixture, then pour into pie plate. Spread evenly.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain, cool and mash.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.

- 1 Set a large non-stick frying pan over medium heat. Heat olive oil. Add onion, garlic, carrot, celery and mushrooms; cook, stirring often, for 5 minutes, or until soft. Increase heat to medium high.
- 2 Add beef mince to frying pan and stir with a wooden spoon (to break up) for 4-5 minutes, or until browned. Scatter mince with flour and cook, stirring, for 1 minute. Stir passata, tomatoes and Worcestershire sauce into mince and bring to the boil. Reduce heat to medium-low. Cover pan partially and simmer, stirring occasionally, for 15 minutes. Stir in frozen peas.
- 3 Meanwhile, boil potatoes in a large saucepan of boiling water for 10-12 minutes, or until tender. Drain potatoes and return to pan. Reduce heat to low. Toss potatoes until dry, then remove from heat, add milk and mash until smooth.
- 4 Preheat oven to 200°C. Line a large baking tray with a sheet of baking paper. Spray 4 x 2-cup ovenproof, microwave-safe dishes with oil. Spoon mince mixture into dishes and top with mashed potato. Put dishes on prepared tray and bake for 15-20 minutes, or until edges bubble and potato is just golden. Leave pies to cool slightly. Cover dishes with plastic wrap and freeze (for up to 3 months).
