2 pounds chicken drumsticks
1/3 cup Gold Medal™ all-purpose flour
1/3 cup yellow whole-grain cornmeal
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/3 cup buttermilk
1/4 teaspoon red pepper sauce
Cooking spray

Steps:

  • Heat oven to 400°. Spray rectangular pan, 13x9x2 inches, with cooking spray. Remove skin and fat from chicken.
  • Mix flour, cornmeal, cumin, chili powder and salt in heavy-duty resealable plastic food-storage bag. Mix buttermilk and pepper sauce in medium bowl. Dip chicken into buttermilk mixture, then place in bag. Seal bag and shake until evenly coated. Place chicken in pan; spray chicken lightly with cooking spray.
  • Bake uncovered 40 to 45 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

Great way to use fresh from the garden zucchini. This dish can be served as a side dish or over brown rice for a nice light meatless dish. Adjustments were made to the original recipe which comes from The New American Diet cookbook.

1 tablespoon oil
4 cups zucchini, thinly sliced
1 cup carrot, shredded
1 cup onion, chopped
3/4 cup celery, chopped
1/2 medium green pepper, cut into thin strips
1/2 medium red pepper, cut into thin strips
2 -3 cloves garlic, minced
1/2 teaspoon dried basil leaves, crushed
1 dash pepper
1/3 cup salsa
2 teaspoons prepared mustard
2 medium tomatoes, cut into wedges
1/3 cup grated reduced-fat cheddar cheese

Steps:

  • In a 10-inch skillet, heat oil.
  • Add the zucchini, carrots, onion, celery, green and red pepper, garlic, basil and pepper; mix well.
  • Over medium-high heat cook covered for approximately 4 minutes, stirring occasionally.
  • Mix the salsa and mustard; add to vegetables mixing well.
  • Add tomato wedges and cook uncovered for an additional 3 to 5 minutes or until heated.
  • Transfer to serving dish and sprinkle with grated cheese.

Serve sour cream on the side to cut the heat of chicken drummies seasoned with chili powder and cayenne pepper.

2 tablespoons chili powder
1 1/2 teaspoons dried oregano leaves
1 1/4 teaspoons ground red pepper (cayenne)
1 teaspoon garlic salt
1 teaspoon ground cumin
1 teaspoon pepper
2 packages (1 lb each) chicken wing drummettes
Sour cream, if desired
Paprika, if desired

Steps:

  • In 1-gallon resealable food-storage plastic bag, place all ingredients except chicken, sour cream and paprika. Seal bag; shake to blend seasonings. Add chicken; seal bag and shake until chicken is coated with seasonings. Refrigerate at least 1 hour to marinate but no longer than 24 hours.
  • Heat gas or charcoal grill. Place chicken in grill basket (grill "wok"). Place basket on grill over medium heat. Cover grill; cook 20 to 25 minutes, shaking basket to turn chicken after 10 minutes, until juice of chicken is clear when thickest part is cut to bone (180°F).
  • Serve chicken with sour cream sprinkled with paprika.

1/4 cup real maple syrup or honey
1/4 cup chili sauce
2 tablespoons chopped fresh chives
1 tablespoon soy sauce
1/2 teaspoon ground mustard
1/4 teaspoon ground red pepper (cayenne), if desired
2 pounds (about 20) chicken drummettes

Steps:

  • Heat oven to 375°F. Mix all ingredients except chicken. Place chicken in ungreased pan, 15 1/2x10 1/2x1 inch. Pour syrup mixture over chicken; turn chicken to coat.
  • Bake uncovered 45 to 55 minutes, turning once and brushing with sauce after 30 minutes, until juice of chicken is no longer pink when centers of thickest pieces are cut. Serve chicken with sauce.

Give rice a new twist with Mexican flavors everyone will love.

1 package Old El Paso™ original taco seasoning mix
6 large chicken drumsticks
1 large Beefsteak tomato
1 small Vidalia onion
3 garlic cloves
2 cups long grain uncooked rice
1 can (7 ounces) Old El Paso™ chopped green chiles
1/2 cup frozen corn
1/2 cup frozen peas
2 cups of water
Cilantro, chopped (optional)
Lime, wedges (optional)
Salt to taste

Steps:

  • Season chicken drumsticks with 1/2 packet of taco seasoning mix.
  • Sear chicken drumsticks on a medium high heat skillet with just a touch of oil. Once chicken is brown all around, set chicken aside.
  • On a food processor or blender, blend tomato, onion, and garlic. Add this into a large skillet, over medium high heat and let it cook for a minute or two.
  • Keep adding the rest of the ingredients to the pan: rice, chiles, corn, peas, and the remainder taco seasoning mix. Stir well and cook for a minute or two. Adjust salt level to taste.
  • Add water and bring to a boil.
  • Place chicken on top of the rice.
  • Cover well, and cook on low for 20-25 minutes until rice has absorbed all of the liquid.
  • Serve with a generous sprinkle of chopped cilantro and a good squeeze of lime.
