Chili sauce adds a slightly sweet touch to this potato-topped meat and veggie pie.

1 medium onion, chopped (1/2 cup)
2 cups frozen baby beans and carrots (from 1-lb bag)
1 cup sliced mushrooms (3 oz)
2 cups diced tomatoes (from 28-oz can), undrained
1 jar (12 oz) beef gravy
2 tablespoons chili sauce
1/2 teaspoon dried basil leaves
1/8 teaspoon pepper
1 pouch (4.7 oz) Betty Crocker™ roasted garlic mashed potatoes
Water, milk and butter called for on potatoes pouch
2 teaspoons shredded Parmesan cheese

Steps:

  • Heat oven to 350°F. In 12-inch nonstick skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain well. Stir in frozen vegetables, mushrooms, tomatoes, gravy, chili sauce, basil and pepper. Heat to boiling. Reduce heat; cover and simmer about 10 minutes or until vegetables are tender.
  • While beef mixture is simmering, make potatoes as directed on pouch, using water, milk and butter. Let stand 5 minutes.
  • Spoon beef mixture into ungreased 8-inch square (2-quart) glass baking dish or 2-quart casserole. Spoon potatoes onto beef mixture around edges of dish. Sprinkle with cheese.
  • Bake uncovered 25 to 30 minutes or until potatoes are firm and beef mixture is bubbly.

1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup Cascadian Farm™ organic frozen peas (from 10-oz bag)
1/2 cup Cascadian Farm™ organic frozen corn (from 10-oz bag)
1 pouch (4.7 oz) Betty Crocker™ creamy butter mashed potatoes

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In 12-inch nonstick skillet, cook beef over medium-high heat 4 minutes, stirring frequently. Add onion and carrots; cook 4 to 6 minutes, stirring occasionally, until beef is browned and onion and carrots are softened. Add flour, thyme, salt and pepper; cook 1 minute, stirring frequently.
  • Gradually stir in broth; heat to boiling over medium-high heat. Cook until thickened, stirring frequently. Remove from heat; stir in frozen peas and corn; transfer mixture to baking dish.
  • Make mashed potatoes as directed on pouch. Spread potatoes evenly over mixture in baking dish. Bake 20 to 25 minutes or until heated through (165°F in center) and top is lightly browned. Let stand 10 minutes before serving.
  • To freeze: Cook beef filling as directed in recipe, but do not add frozen peas and corn. Cover and refrigerate 30 to 40 minutes. Transfer to 1-quart freezer container; freeze up to 2 months. To bake: Heat oven to 400°F. Spray microwavable 8-inch square (2-quart) glass baking dish with cooking spray. Place frozen beef filling container in large bowl filled with hot water about 5 minutes or until filling can be slid out of container into 8-inch square dish. Cover with plastic wrap; microwave on High 5 minutes; stir well. Cover and microwave 3 minutes longer; stir well. Continue heating another 3 to 4 minutes (checking and stirring every minute) until heated through. Stir in frozen peas and corn. Continue as directed in recipe.

1 small onion, finely chopped (1/3 cup)
1 1/2 lb ground beef sirloin

This is a simple recipe that my wife designed to get our kids to eat more vegetables. My son loves it so much that he eats it for breakfast, lunch, and dinner!

Number Of Ingredients 11

3 large potatoes (diced into 1 inch squares)
6 garlic cloves (thinly sliced)
1/4 cup butter
1/2 cup 1% low-fat milk
1 (398 ml) can creamed corn
1 (398 ml) can kernel corn
1 lb ground beef (Extra Lean)
2 large carrots (Finely chopped)
1 large onion (Finely chopped)
1/4 cup parmesan cheese
salt and pepper

Steps:

  • Dice peeled potatoes and garlic and boil together in a large pot until potatoes are soft enough to mash. Drain potatoes and mash. Add butter and milk and continue to mash until soft. Season with salt and pepper to taste. Set aside.
  • Brown ground beef in a large skillet. Add carrots and onions and cook until softened. Salt and pepper to taste.
  • Using 2 litre casserole dish, pack ground beef mixture onto bottom of casserole dish. Spread creamed and kernel corn onto ground beef and top with dollops of mashed potatoes until they cover the corn completely. Smooth off the top of the mashed potatoes and sprinkle parmesan cheese over the potatoes.
  • Cook the Shepherd's Pie in a 350F oven for 45 minutes or until bubbles appear along the sides.
