Ingredients

½ cup shortening 2 one oz. squares unsweetened baking chocolate ¾ cup flour ½ tsp. baking powder ½ tsp. salt 2 eggs 1 cup sugar 1 tsp vanilla 1 cup california walnuts, coarsely cut

Steps:

1. Pre-heat oven to 350 Melt shortening and chocolate together in a double boiler over hot water and let cool Sift flour with baking powder and salt Beat eggs until light; add sugar, then chocolate mixture, and blend. Add flour, vanilla, and nuts. Mix well. Pour batter into well greased 8 inch square pan. Bake for 30 -35 minutes. Cool and cut into squares Makes 16

This is a great recipe for people who are vegan or just looking for a desert that tastes good. You can replace the sugar entirely by doubling the amount of stevia powder. You can also replace half of the all-purpose flour with whole grain flour.

¾ cup cocoa powder
⅔ cup vegetable oil
¼ cup water
¼ cup stevia powder
1 cup sugar
¾ cup soy milk
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder

Steps:

Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
Mix the cocoa powder, vegetable oil, and water together in a bowl. Stir the stevia and sugar into the mixture. Pour the soy milk and vanilla into the mixture and stir. Add the flour and baking powder; continue stirring until the batter is smooth.
Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 35 minutes.
