Every Sunday morning, my mom and I used to get up early and make these wonderful waffles. This recipe has been in the family for years, and I will definitly be passing it down to my children.

1 1/3 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs, separated
1/2 cup butter, melted
1 3/4 cups milk

Steps:

  • In a large mixing bowl, whisk together all dry ingredients.
  • Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
  • Beat whites until moderately stiff; set aside.
  • Add milk and melted butter to dry ingredient mixture and blend.
  • Fold stiff egg whites into mixture.
  • Ladle mixture into hot waffle iron and bake.

1 cup flour
3 large eggs, at room temperature
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sugar
1/4 teaspoon salt
1 cup milk or 1 cup buttermilk
2 tablespoons butter, melted and cooled
1/2 teaspoon vanilla (I use a little more)
1/4 teaspoon cinnamon

Steps:

  • Take the eggs out of the refrigerator at least an hour before preparing the waffles.
  • Separate the eggs immediately.
  • Mix together flour, baking soda, baking powder, salt, sugar and cinnamon.
  • Beat the egg yolks with the regular milk or buttermilk, butter and vanilla.
  • Combine the dry ingredients into the egg mixture.
  • Beat the egg whites until stiff peaks form.
  • Add a small amount of the egg white into the batter to lighten it up, then fold in the remainder.
  • Be careful not to overmix.
  • Heat waffle iron.
  • Grease lightly and spoon enough batter to nearly cover the surface.
  • Batter will spread once you close the waffle iron.
  • Cook until done.
  • Serve with your favorite waffle toppings.

But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, baking powder, salt, and nutmeg.
  • In a medium bowl, whisk together the milk, egg yolks, vanilla, and 1/4 cup melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter. In medium bowl, with a hand-held electric mixer or whisk, whip the 3 egg whites until they just begin to hold a loose peak.
