BACON & CHEESE SCALLOPED POTATOES
I wanted to try a new potato recipe & this recipe was a perfect side dish to the main course which was ham. I love scalloped potatoes & I didn't want to make them from a box so I got creative & made them from scratch. I made this recipe for myself & my husband. This recipe can be doubled to feed 4-6 people.

- 1. Slice onions into rings
- 2. Rinse potatoes & drain then thinly slice.
- 3. In a small pot, heat butter on medium heat until melted. Add flour. Whisk until smooth. Gradually add milk, cream, salt, 1/2 tsp. black pepper, ground nutmeg, 1/2 tsp. parsley flakes, 1c. cheddar cheese & hot sauce. Bring to a boil & stir constantly for 2 minutes or until thick. Place lid on pot to keep warm.
- 4. In a 2 qt. glass baking dish, layer potatoes & onion rings alternately starting & ending with potatoes. Pour sauce over potatoes & onions. Add remaining spices & cheddar cheese. Bake at 350 for 65 minutes. Crumble bacon on top & enjoy.

- 1. Peel potatoes using your mandolin, slice potatoes and onion very thin set aside.
- 2. In a small saucepan melt 3/4 of the grated cheese in heavy cream adding the thyme and garlic.
- 3. Fry bacon in a skillet until crisp, but not overcooked. Crumble in pieces.
- 4. In a baking dish, layer potatoes, onions, a small amount of bacon. Season each layer with salt and pepper.
- 5. Continue layering until all potatoes, bacon, and onion are used.
- 6. Pour the cream and cheese over each layer. Finish the top with the last amount of grated cheese.
- 7. Place covered in a 350 oven for 1 hour and 15 minutes until most of the liquid has been absorbed.
- 8. Uncover and continue cooking until the top is browned to your satisfaction!

- Cook bacon until done, but not crispy. Set aside on paper towels to absorb grease and pat dry. Cut into bite sized pieces when cool.
- Wash potatoes. Bring a large saucepan of water to a boil. Add salt to the boiling water, then add the potatoes. Cook for 10-15 minutes in boiling water (the potatoes will finish cooking in the oven). Set aside and allow to cool. Once you're able to work with the half-cooked potatoes, slice them into 1/2" pieces.
- In saucepan, melt butter. Saute the onion slices until just tender; remove from pan and set aside. Making sure you still have enough butter in your pan, stir in flour and milk, whisking until smooth. Cook over low heat, stirring/whisking constantly for 1 minute. Add cheese and continue to stir until cheese melts. Stir in 3/4 teaspoon salt and 1/8 teaspoon pepper. Mix in bacon.
- In a buttered 9x13 quart casserole, layer potatoes, onion, and cheese mixture. Continue to add layers until about one inch from the top, finishing off the top layer with the cheese mixture.
- Bake in a preheated 350°F oven, covered, for 45 minutes. Take the cover off of the casserole dish, sprinkle with green onions, and bake for another 5 minutes uncovered. Sprinkle lightly with garlic salt before serving, if desired.

- Preheat the oven to 350°F. Spray a 9x9 baking dish with cooking spray, set aside.
- Slice the potatoes very thin, 1/8th of an inch. I suggest using a mandolin for this. The potatoes need to be the same thickness so they all cook at the same time.
- Place the sliced potatoes into a large bowl with cold water, set aside.
- In a medium-sized skillet over medium-low heat, add the butter and melt. Add the onions, salt, and pepper, stirring occasionally cook until the onions are just softened, about 5 minutes.
- Add the garlic and thyme, cook until fragrant, about 30 seconds.
- Whisk in the flour and cook for 1 minute, slowly pour in the milk and whisk constantly to ensure no lumps form.
- Whisk in the heavy cream. Stirring occasionally, let this mixture come to a simmer, once it starts to bubble the littlest bit, take it off the heat. Stir in half of the gouda until melted.
- Drain the potatoes. Place half of the potatoes into the bottom of the baking dish.
- Pour half of the cheese sauce on top. Sprinkle half of the parmesan cheese on top.
- Add the rest of the potatoes on top. Top with the remaining sauce. Add the rest of the gouda and parmesan on top.
- Bake covered with foil for 45 minutes then remove the foil and cook for about another 30 minutes (until the potatoes are fork-tender.)
- Garnish with parsley, optional.

- Preheat oven to 375 degrees. Grease a 9 x 13 pan with nonstick cooking spray.Melt butter in a medium saucepan. Add in onion and saute until tender and slightly browned, 4 minutes.
- Add in garlic and cook for an additional minute.
- Add in flour and cook for 1 minute stirring constantly.
- Slowly whisk in milk and chicken stock. Add in the dried mustard, thyme and paprika. Cook for 2-3 minutes or until sauce begins to slightly simmer, stirring occasionally. (Do not let this sauce boil, it can break and burn on the bottom)
