WESTERN OMELETTE
French omelets are smooth and sunny yellow with the filling rolled neatly inside. This is a western American-style omelet; the goodies are mixed up with the egg and given a good tanning in the pan.

- In a small bowl, beat together 3 of the eggs and season lightly with salt and pepper. Set aside.
- Heat 3 tablespoons of the butter in a small non-stick skillet, with tight-fitting lid, over medium heat. Add the peppers and cook, covered, without stirring, until tender, about 3 minutes. Uncover and raise the heat to medium-high. Add the ham and scallions and cook, stirring frequently, until hot, about 1 minute. Transfer the mixture to a bowl.
- Melt a nut-sized piece of the remaining butter in the skillet over medium heat. When the foam subsides, add 1/4 of the pepper mixture. Pour in the beaten eggs and cook, stirring constantly with a heat-resistant rubber spatula, until just cooked, about 30 seconds. Turn off the heat and, using the rubber spatula, smooth over the top of the omelette so that it evenly covers the inside of the skillet. If using the cheese, sprinkle about 2 tablespoons over the omelette. Let rest for 30 seconds until the omelette has set.
- Using the rubber spatula, fold the omelette in half, and transfer to a warmed plate. Cover with foil to keep warm. Repeat with the remaining ingredients to make 4 omelettes in all.

- Whisk eggs and milk in small bowl until blended. Stir in ham, onions and pepper.
- Pour into 8-inch nonstick skillet; cover. Cook on medium heat 6 min. or until egg mixture is set but top is still moist.
- Sprinkle cheese onto half the omelet; fold in half. Remove from heat; let stand, covered, 1 min. Cut in half.

HAM AND CHEESE OMELET RECIPE
Steps:
- Gather the ingredients.
- Heat butter in an 8-inch skillet or omelet pan over medium heat. Add ham pieces and cook gently to warm through for 3 to 4 minutes.
- Break eggs into a small bowl. Gently mix with a fork. As mentioned above, do not whisk.
- Tip gently stirred eggs over ham in skillet over medium heat. Using a fork, gently move egg around pan, pushing cooked egg from the pan's bottom and allowing uncooked, liquid egg to run into its place. Gradually, all the eggs will start to set.
- Immediately once egg starts to set, sprinkle cheese and stop stirring. Let omelet sit for about one minute for heat to start to reach cheese. Sprinkle over a tiny pinch of salt and black pepper.
- Once cheese is starting to warm, take a spatula and carefully nudge omelet's lower edge two-thirds of the way over.
- Take a warmed plate, hold skillet over plate and gently tip pan away from you and roll omelet out and over onto plate, so the seam is underneath. This is easier to do than it sounds. Serve omelet immediately.

DEVILED HAM FRITTATA WITH JALAPENO AND SCALLION RELISH

- Heat 1/3 cup of the vegetable oil in a 10-inch nonstick ovenproof saute pan over medium-high heat until it shimmers. Carefully add the jalapeno and scallions. Turn off the heat and stir to combine. Cook in the hot oil for 1 minute, stirring constantly. Stir in the sesame oil and season lightly with salt. Remove to a bowl and set aside until ready to serve. Wipe the pan clean.
- Heat the broiler with a rack set in the middle of the oven.
- Pulse the ham, onions and mustard in the bowl of a food processor until a chunky paste forms.
- Whisk the eggs and heavy cream in a mixing bowl.
- Heat the remaining vegetable oil in the same saute pan over medium-high heat. Add the pureed ham mixture and saute until the onions have softened and the mixture is lightly browned in parts, about 5 minutes, stirring occasionally. Reduce the heat to medium and wait 2 minutes in order for the pan to come down to temperature; continue stirring. Pour the beaten eggs over the ham, mix together and cook until the eggs start to set, about 2 minutes. Sprinkle with the cheese and continue to cook until the frittata is almost set but the top is still runny, 5 to 7 minutes.
- Place the frittata under the broiler and broil until the top is golden brown, 3 to 5 minutes. Let stand for 5 minutes. Using a rubber spatula, loosen the frittata from the pan and invert onto a plate. Cut into wedges and serve topped with the jalapeno and scallion relish. Serve alongside a lightly dressed green salad if desired.
BEST OMELET EVER WITH HAM JALAPENOS SCALLIONS AND CHEDDAR CHEESE
If you had asked me a month ago I would say "I don't like omelets". But my husband and I came up with this one and it is sooooooo good. You won't be disappointed, I guarantee it. The secret to this being so amazing is to not over-cooking the omelet using the method I outline below. It takes practice, but I make the best omelets now.

- In small pan, saute the jalapeno, scallions and ham until jalapenos are soft and ham is slightly browned using non-stick spray, stirring frequently.
- Remove from pan & clean pan with paper towel.
- Whisk eggs with pepper.
- Spray pan with non-stick spray and pour in half the eggs when pan is fully heated to med-high heat.
- With a spatula, scrape & lift the cooked egg at the bottom of the pan towards the middle allowing the uncooked egg to get underneath to the hot part of the pan - this may look messy, but it will ensure that your omelet is fluffy.
- Once there is no more runny egg, spread out the egg a little bit in the pan as much as possible and add half the cheese on top evenly.
- Then add half the ham mixture in a line across the omelet.
- Fold omelet in half and allow to cook on one side for 20sec.
- Flip over carefully and allow that side to cook for another 20sec.
- Repeat directions on cooking omelet for the second one making sure to start with a clean pan.
- Can also be made with egg whites only using twice as many eggs.

- Cook potatoes, onions and garlic in 2 Tbsp. hot oil in large skillet on medium heat 10 to 12 min. or until potatoes are tender, stirring occasionally.
- Whisk eggs in large bowl. Add potato mixture, ham, 1/2 cup cheese and pepper; mix well.
- Heat remaining oil in same skillet on high heat. Add egg mixture. Reduce heat to low; cook 12 min. or until egg mixture is almost set.
