This Italian Potato Salad recipe is loaded up with lots of savory antipasto ingredients, tossed in a zesty Italian vinaigrette, and is so flavorful and hearty and delicious! See notes above for possible ingredient variations.

2.5 pounds Yukon gold or red potatoes
2 large handfuls fresh baby arugula
2 cups baby mozzarella balls
2 cups cherry or grape tomatoes, halved
1 (12-ounce) jar artichoke hearts, drained and halved
1 cup diced Italian salami (optional)
1/2 cup sliced black olives
half of a small red onion, thinly sliced
1/3 cup finely-chopped fresh basil leaves
grated Parmesan cheese, for serving (optional)
1/3 cup olive oil
3 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 teaspoon dried thyme
1 teaspoon fine sea salt
1/2 teaspoon freshly-cracked black pepper

Steps:

  • Place the diced potatoes in a large stockpot and add enough water so that the potatoes are covered by 1 inch. Cook over medium-high heat until the water reaches a boil. Then reduce heat to medium to maintain the simmer, and continue cooking the potatoes for 5-8 minutes or until the potatoes pierce easily with a fork.
  • Drain the potatoes in a colander and let cool for 20-30 minutes.
  • Meanwhile, whisk together the vinaigrette ingredients in a bowl (or shake vigorously in a mason jar) until evenly combined.
  • Once the potatoes are ready to go, combine them in a large serving bowl with the dressing, arugula, mozzarella, tomatoes, artichokes, salami (if using), olives, onion and basil. Toss gently until evenly combined.
  • Taste and season with additional salt and pepper if needed, to taste. Serve immediately, sprinkled with Parmesan cheese. Or cover the bowl and refrigerate for 1-2 hours and then serve the potato salad chilled.
  • Refrigerate any leftovers in a sealed container for up to 3 days.

1/2 cup olive oil
1/4 cup mayonnaise
1/4 cup grated Parmesan (pre-grated in a pack from the store)
1/4 cup minced fresh parsley
1 tablespoon sugar
1 tablespoon vinegar
2 teaspoons black pepper
1 teaspoon salt
1/4 teaspoon red pepper flakes
1 clove garlic, pressed
Juice of 1 lemon
1 head romaine lettuce, roughly chopped
1/2 head iceberg lettuce, chunked
6 whole pepperoncini
1/2 cup whole black olives
1/2 cup whole red cherry tomatoes
1/2 small red onion, very thinly sliced into circles
1/3 cup grated Parmesan

Steps:

  • For the dressing: In a blender, add the olive oil, mayonnaise, Parmesan, parsley, sugar, vinegar, black pepper, salt, red pepper flakes, garlic and lemon juice and blend until pureed.
  • For the salad: Put the romaine and iceberg greens in a large bowl and toss with the dressing. Top the salad with the pepperoncini, olives, tomatoes and onions. Sprinkle with Parmesan at the end.

My Nonnie used to make this potato salad for me whenever I was home for the holidays. It's a great alternative to mayo-based potato salads. Red wine vinegar works well, too.

5 large potatoes, peeled and chopped
2 cloves garlic, minced
⅔ cup extra virgin olive oil
½ cup white wine vinegar
⅓ cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • In a large bowl, mix together the garlic, olive oil, vinegar and parsley. Add potatoes and toss to evenly coat.
  • Cover and refrigerate overnight.

This potato salad was one of my Nonna's (grandmother) most-loved recipes. Our whole family (and it's big!) loves it and we always think of her when we make it. It is simple while still being full of flavour. The salad is best served warm or room temperature. You don't absolutely have to love parsley to like this dish, but it would help a little. :-) Please note: amounts are approximate - my grandmother never wrote anything down, so we go by taste. Feel free to adjust to your own preferences.

1 lb new potato, skins on (I like the small-ish ones best)
1/4 cup extra virgin olive oil
3 -4 garlic cloves (if they're really small, use 4)
1/4 cup chopped parsley
salt
pepper

Steps:

  • Boil potatoes, keeping skins on, until tender.
  • Meanwhile, crush garlic into medium-sized serving bowl and add chopped parsley.
  • Add olive oil and mix well.
  • Let mixture sit while potatoes are cooking.
  • When potatoes are done and still HOT (or at least very warm- they absorb the flavour better that way), cut into bite-sized chunks and add to parsley-garlic mixture.
  • (If you prefer to peel your potatoes, feel free).
  • Stir well to coat potatoes.
  • If more oil is needed (sometimes it varies, depending on the potatoes), add enough to get desired amount.
  • Salt and pepper to taste.
  • This is best when it sits for at least an hour at room temperature before serving to let the flavours combine.

3 pounds potatoes
1/3 cup Italian salad dressing
4 hard-boiled large eggs, chopped
3/4 cup chopped celery
1/3 cup chopped onion
1/4 cup chopped cucumber
1/4 cup chopped green pepper
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon prepared horseradish
Chopped fresh tomatoes

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and cool. , Peel and cube potatoes; place in a large bowl. Add dressing and toss to coat. Cover and chill for 2 hours. , Add eggs, celery, onion, cucumber and green pepper; mix well. In a small bowl, combine mayonnaise, sour cream and horseradish; mix well. Pour over potato mixture; toss to coat. Chill for at least 1 hour. Top with tomatoes.
