1 head green cabbage, cut into 2 inch by 2 inch slices
1 large yellow onion, sliced in 1 inch slices
1 lb smoked sausage
1 half container bacon bits
1/2 cup margarine
1 teaspoon salt (or to taste)
1 teaspoon black pepper (or to taste)
1 tablespoon sugar (or to taste)
2 cups white rice

Steps:

  • Mix cabbage, onion, sausage, and bacon bits in a heavy pot.
  • Melt the margarine in a saucepan.
  • Pour the melted margarine over the ingredients in the pot.
  • Cook over medium heat.
  • Cover and stir occasionally until cabbage is smothered to your liking.
  • Serve over hot white rice and enjoy the explosion of flavors.

2 tbsp olive oil
1 vidalia onion (thinly sliced)
1 head cabbage (cored and chopped)
1/2 tsp kosher salt
1/2 tsp pepper
1/4 cup sour cream
3 tbsp cooked and crumbled bacon or pancetta

Steps:

  • In a large skillet over medium heat, melt the butter and then stir in the olive oil.
  • Add the onions to the pan and cook for 3-4 minutes, stirring occasionally.
  • When the onions are softened and beginning to caramelize, stir in half the cabbage. Cook the cabbage for 4-5 minutes, stirring occasionally, until wilted.
  • Add the remaining cabbage to the pan and stir to combine. Cook for an additional 4-5 minutes, stirring occasionally, until wilted and beginning to caramelize.
  • Season with salt and pepper. Cook for an additional 4-5 minutes.
  • Remove from the heat and stir in the sour cream. Top with bacon or pancetta, if desired.

2 Tbsp Worcestershire
1 Tbsp apple cider vinegar
2 Tbsp brown sugar
1 tsp garlic powder

Steps:

  • Add chopped bacon to a large pot.
  • Cook over medium heat until extra crispy.
  • Remove bacon from pot, leaving the grease.
  • Add cabbage to pot and cook over medium high heat for 10 minutes, Stirring every minute or so.
  • Add onion and continue cooking 5 more minutes, still stirring every minute.
  • Add Worcestershire, apple cider vinegar, garlic powder, & brown sugar.

Steps:

  • Remove the first outer layer of leaves from the cabbage and discard.
  • Rinse the head of cabbage well under cold running water.
  • Carefully slice the cabbage in half, then into quarters.
  • Slice each quarter again, the long way, then cut each wedge into bite sized pieces.
  • Place your skillet over Medium heat on your stove top.
  • Add the butter.

1 medium head of white cabbage, trimmed, cored, and sliced
1 TBS oil
2 TBS butter
1 tsp sugar
Salt and black pepper to taste
¼ cup of water or vegetable stock

Steps:

  • Prepare your vegetables.
  • Heat a large skillet over medium heat.
  • Add the oil and half the butter. Add the onions.
  • Cook and stir until the onion begins to soften. Add the cabbage.
  • Sprinkle with the sugar and season to taste with salt and black pepper.
  • Continue to cook, stirring it frequently, until the cabbage begins to soften. Add the water and cover.
  • Cook and steam over low heat until the cabbage has softened completely. Remove the cover and cook for a few more minutes until the cabbage starts to caramelise in places. Stir on the remaining butter. Taste and adjust seasoning as required.
  • You can add one peeled and chopped carrot along with a diced bell pepper along with the onion.

  • Place the butter and the bacon in a large Dutch oven or pot with a lid over medium-high heat. Cook, stirring occasionally, until bacon is lightly browned and crisp, 7 to 8 minutes (lower the heat if the bacon begins to get too dark). Using a slotted spoon, remove the bacon to a paper-towel-lined plate and reserve (do not wipe out pot).
  • Add the onion, garlic, and 1/2 teaspoon salt to the pot, stirring frequently with a wooden spoon and scraping up any browned bits from the bottom of the pan. Cook until the onion is very soft, about 8 minutes.

  • In a large skillet or pot warm olive oil and butter on medium heat.

  • Cook the bacon in a heavy bottomed skillet over medium heat until it starts to become crisp and most of the fat is rendered. Remove the bacon with a slotted spoon to a paper towel lined plate to dry, and remove all but about 2 tbsp of the bacon grease from the pan.
  • Add the onion, cook for about a minute or two, then add the garlic and continue to cook until the onion is softened - about 5 - 6 minutes.

  • Continue to cook and stir for about 15 mins more, or until the cabbage is cooked and tender.

  • Remove and discard the outer leaves from the cabbage and cut the leaves into large pieces.
  • Pound the garlic in a mortar and pestle with a large pinch of salt until coarsely ground.
  • Heat a wok until very hot, add a generous amount of olive oil and heat until almost smoking.
