This super easy and fresh tomato salsa recipe is so good and can be ready in 10 minutes or less. Made with sweet vibrant tomatoes blended with herby, clean cilantro, crunchy red onion, spicy chilies, honey, salt and pepper. Healthy, light and the perfect dip with tortilla chips or topping on eggs, chicken or fish. A super simple vegan and gluten free recipe!

6-7 fresh tomatoes - I used a combo of vine, Roma and cherry tomatoes
1/3 cup fresh packed cilantro
1/4 cup chopped red onion
2 tablespoons green chilies
1 tablespoon minced garlic
1 tablespoon honey or maple syrup
1 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Prep the tomatoes. If you are using tomatoes that have seeds then you will want to remove them. If you are using cherry tomatoes then you do not need to remove the seeds. To clean tomatoes all you need to do is slice each one in half, lengthwise, trim off the end and scrape the seeds out with a spoon. Then simply slice them.
  • Blend the salsa. Add the chopped tomatoes, red onion, green chilies, cilantro, garlic, honey, salt and pepper to the bowl of a food processor or high speed blender and blend on high until desired consistency is achieved. I like my salsa chunky so I blended it for about 15 seconds.
  • Serve. Pour the salsa into a bowl and serve it with your favorite tortilla chips.

8 -10 large tomatoes (home-grown the best, but store bought in a crunch o.k.)
1 large onion
jalapeno pepper (to taste for desired hotness)
chopped fresh cilantro (to taste)
chopped garlic
cumin
green pepper
salt, to taste if desired

Steps:

  • Chop all vegetables.
  • If you like hot leave a few seeds of jalepeno.
  • Sprinkle with cumin and salt to taste.
  • I have also used this same recipe and cooked all ingredients down.
  • Canned in sterile jars and processed according to directions.
  • This is good to add to the homemade chile in the winter!
  • You will never go back to store canned tomatoes again!

1/3 teaspoon red pepper flakes

Steps:

  • Place your tomatoes into a food processor and pulse 6-8 times, or until they reach a good salsa consistency. Depending on the size of your food processor you might have to do this in 2 batches. Transfer to a bowl once processed.
  • Add the chopped up green pepper and onion into the bowl with the tomatoes.
  • Add cilantro, lime juice, salt, pepper and red pepper flakes into the bowl and mix until everything is combined.
  • Serve with tortilla chips or on top of your favorite Mexican meal!
