2 lbs ground beef
1 cup chopped onion
4 garlic cloves, chopped or 2 teaspoons minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons Worcestershire sauce
2 tablespoons flour
1 cup beef broth or 1 cup stock
1 cup heavy cream
24 ounces canned green beans (cut in half)
3 cups ready made mashed potatoes (fresh or made like bob evans brand)
3 cups cheddar cheese, shredded (or a blend)

Steps:

  • In skillet, brown beef and onion. Drain fat.
  • Add garlic, salt, pepper, worcestershire and flour. Cook for 1 minute.
  • Add beef broth/stock and then heavy cream.
  • Stir in beans.
  • Pour into 11x17 inch pan. top with 1 cup cheese.
  • Top with mashed potatoes. Sprinkle with the rest of shredded cheese.
  • Bake at 375 for 40 minutes. Remove from oven and rest 5-10 minutes.
  • I serve with salad, apple sauce and dessert of course!

We stuck with tradition and made our shepherd's pie with lamb, but you could easily swap in ground beef. The saucy filling is packed with tender vegetables and the creamy topping is inspired by the Irish potato dish, colcannon, and is filled with cabbage, leeks and cheese.

2 pounds russet potatoes, peeled and quartered (about 4 medium potatoes)
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
1/4 small head green cabbage, thinly sliced (about 6 ounces or 2 cups)
1 leek, white and light-green parts only, chopped
2 cloves garlic, chopped
3/4 cup heavy cream
1 cup shredded sharp white Cheddar (about 3 ounces)
3 large egg yolks
2 teaspoons extra-virgin olive oil
3 medium carrots, peeled and thinly sliced
1 medium yellow onion, diced
1 stalk celery, sliced
2 cloves garlic, chopped
2 teaspoons fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1/4 cup tomato paste
2 pounds ground lamb
1 cup frozen peas, thawed
1/4 cup all-purpose flour
1 1/2 cups low-sodium chicken broth
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • For the topping: Put the potatoes in a large saucepan and cover with cold water. Season with 2 teaspoons salt. Bring to a boil and cook until tender, about 20 minutes. Drain and reserve the saucepan.
  • Meanwhile, make the filling: Heat the olive oil in a large nonstick skillet over medium heat. Add the carrots, onion, celery, garlic, thyme and 2 teaspoons salt. Cook, stirring occasionally, until the vegetables are soft and tender, about 15 minutes.
  • Stir in the tomato paste and cook until it turns brick red, about 8 minutes. Add the lamb, 1 1/2 teaspoons salt and a few grinds of black pepper. Cook, breaking up with a wooden spoon, until the meat is no longer pink, about 7 minutes.
  • Stir in the peas. Stir in the flour until incorporated, about 1 minute. Add the broth and Worcestershire and cook until thickened, 3 to 5 minutes.
  • To finish the topping, melt the butter in the large saucepan over medium heat. Add the cabbage and leeks and cook until tender, about 10 minutes. Add the garlic and cook until fragrant, 1 minute. Add the heavy cream, 1 tablespoon salt, and a few grinds of black pepper, and cook until warm, about 1 minute. Return the potatoes to the pan with the cabbage and add the cheese. Mash with a potato masher or wooden spoon. Remove from the heat and stir in the egg yolks.
  • Transfer the filling to a 9-by-13-inch baking dish. Add the topping, swirling to create texture. Make sure that the sides are sufficiently covered so the filling doesn't leak through. Bake until the filling is bubbly and the top is lightly golden, about 35 minutes. Let rest 15 minutes before serving.

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

This is my own recipe and whenever my mom hears Im making it, I have to invite her over for some. I hope you enjoy it as much as we do. This recipe can be made ahead and put in the oven a day or 2 later

2 lbs ground beef
1 teaspoon paprika
1 tablespoon Worcestershire sauce
3 -4 cloves of minced garlic
1 medium yellow onion
1/2 teaspoon cayenne pepper
1/2 teaspoon crushed chili flakes
salt and pepper
2 cups fresh,canned or frozen kernels corn
6 -8 large yukon gold potatoes (I like alot of potatoes, but you can use as much or as little as you like)
1/4 cup butter
1 tablespoon butter
1/4 cup milk or 1/4 cup half-and-half
1/2 teaspoon garlic powder or 1/2 teaspoon chives, if desired

Steps:

  • Preheat oven to 375 degrees.
  • Boil potatoes until you can break them apart with a fork, drain once done.
  • Add milk or half and half, 1/4 cup butter, chives or garlic powder, and whip potatoes until they are creamy and no more chunks are there.
  • Start to brown ground beef. Once it is starting to sizzle, add paprika, Worcester sauce, garlic, onion, salt,peppers and chilli flakes. cook until beef is no longer pink.
  • Drain fat from beef mixture and place in lightly greased casserole dish. (I use some of the grease from the beef mixture to coat my dish).
  • Add kernels of corn and layer on top of beef mixture. (you can also mix the corn into the beef if you want).
  • Spread the potatoes over top of corn evenly. Sprinkle with more salt and pepper if desired.
  • Spread the 1 tbsp of butter over the potatoes.
  • Bake in oven covered for 30mins. After 30mins, uncover and bake in oven approx 10 mins, or until potatoes are browned on top.

1 pound ground beef
1/4 cup canned low sodium beef broth

1/4 cup grated Parmesan, optional
1 1/2 pounds russet potatoes, peeled quartered
2 teaspoons kosher salt, plus more for seasoning

Steps:

  • Preheat oven to 375 degrees F.
  • Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
  • Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Make a decorative pattern on the top of the potatoes, if desired. Sprinkle with cheese, if using, and dot with the remaining tablespoon of butter. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.
  • Put the potatoes in a saucepan with cold water to cover by about 1-inch and add the salt. 1 pound chopped lamb shoulder or lamb fillet
1 cup chopped yellow onions
2 carrots, chopped
1 1/2 teaspoons salt

4 ounces button mushrooms, wiped clean and sliced
1 bay leaf
2 tablespoons all-purpose flour
1 tablespoon tomato paste
1 1/4 cups lamb or beef stock
1 teaspoon Worcestershire sauce
1 pound potatoes
1/8 teaspoon ground nutmeg
1/2 cup heavy cream
1/2 cup white cheddar, grated

Steps:

  • Lightly grease a 6-cup baking dish and set aside.
  • Melt 2 tablespoons of the butter in a large saute pan over medium high heat. Add the lamb and cook until starting to brown, about 3 minutes. Add the onions, carrots, 3/4 teaspoon salt, and 1/2 teaspoon of the pepper, and cook, stirring, for 2 minutes. Add the mushrooms and bay leaf, and cook, stirring, until their liquid is almost all gone, about 4 minutes. Add the tomato paste and cook, stirring, until starting to color, about 1 to 2 minutes. Add the flour and cook, stirring, for 1 minute. Gradually add the stock and Worcestershire sauce, and bring to a boil. Reduce the heat to medium-low, cover, and simmer until thickened, about 20 to 25 minutes.
  • Preheat the oven to 400 degrees F.
  • Meanwhile, place the potatoes in a medium pot and cover with salted water by 1-inch. Bring to a boil and cook until tender, about 10 minutes. Drain in a colander and return to the pot. Over low heat, mash the potatoes with a potato masher. Add the remaining 2 tablespoons of butter, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, and nutmeg, and mash to incorporate. Add the heavy cream and mix well. Remove from the heat.
  • Remove the pot with the meat from the heat. Remove the bay leaf. Spoon into the prepared dish and top with the mashed potatoes, smoothing the top. Sprinkle the cheese over the top and bake until browned and bubbly on top, 10 to 15 minutes. Remove from the oven and serve immediately.

Shepherds Pie is my favorite dish. I make it multiple ways. This way is the easiest and most tasty. Don't be afraid to add or subtract ingredients to suit your taste buds. The key ingredient for this is the cream of corn. Unless you absolutely hate cream of corn i wouldn't recommend omitting it. But that's up to you. Enjoy!!

1 lb hamburger, uncooked
1 medium onion (chopped)
1 (14 ounce) can creamed corn
1 (14 ounce) can corn
1 (14 ounce) can green beans
5 medium sized potatoes, chopped to boil, skinned is optional (I like red potatoes)
2 tablespoons minced garlic
garlic salt (to taste)
onion salt (to taste)
salt & pepper (to taste)
3 tablespoons butter
1/3 cup warm milk
McCormick's Montreal Brand steak seasoning (to taste)
paprika (to taste)

Steps:

  • Start by boiling 4-6 cups of water. Enough to accommodate the potatoes.
  • When water is boiling add the chopped potatoes. Boil for 10-12 mins while you are cooking the hamburger.
  • Put the hamburger into a pan and cook on medium high until it begins to brown.
  • Add the chopped onion and garlic.
  • Cook until the onions become soft and the hamburger is almost done. Maybe 8-10 mins?.
  • Add the creamed corn,regular corn, and the green beans.
  • Mix all together thoroughly.
  • Season the mixture with the garlic salt, onion salt, salt & pepper.
  • Cook for another 4-6 mins mixing often.
  • At this point strain the finished potatoes and put them back in the pot u cooked them inches Add the 3 tbsp butter and a little bit of the warm milk. Use an electric beater and start to whip them. Slowly adding the rest of the milk.
  • Put the hamburger mixture into a medium sized cooking pot 8-10 inch's in diameter, 3-4 inches deep. Spread it evenly in the pot.
  • Using a spatula scrape out the mashed potatoes and spread them evenly over the top of the meat mixture.
  • Sprinkle the top with the Montreal steak seasoning and paprika.
  • Bake at 350 for 25-30 mins or until the juices start bubbling out the sides.
  • Enjoy!

5-6 medium sized potatoes
1 Tbsp butter
Milk
1 lb ground beef
1 tsp garlic salt
1 tsp black pepper
1 can Campbell's tomato soup
1 can mushrooms, drain
1 can Green Giant French style green beans, water drained
1 can Green Giant corn, water drained
Handful of fresh parsley
1/2 cup Kraft Old Cheddar Cheese
Salt & pepper to taste

Steps:

  • Peel and cut potatoes in quarters. Put into pot of boiling water and cook until tender. Drain and mash adding butter and a splash of milk. Set aside.
  • Cook ground beef until brown adding garlic salt and black pepper while cooking. Add tomato soup and mushrooms (drain water before adding) and bring to a boil.
  • Layer ground beef mixture on the bottom of a casserole dish. Next, add the can of green beans spreading all over meat mixture. Then add the can of corn all over the bean layer. Top off casserole with the mashed potatoes. To spread potatoes easily over corn, take 4 big dollops of potatoes and put at each corner of the dish and one big dollop in the middle. 6 medium potatoes
6 tablespoons butter, divided
1 tablespoon salt
1/2 cup heavy cream
1 1/2 lbs lean ground beef
1 (2 ounce) package onion soup mix
1 (4 ounce) can sliced mushrooms
1 cup cut green beans
1 cup corn niblets
1 cup peas
1 cup carrot, diced
1 small onion, chopped
1 1/2 cups beef broth
4 tablespoons flour
4 tablespoons ketchup
4 tablespoons Worcestershire sauce
1 tablespoon garlic, minced
1 teaspoon thyme
1 teaspoon cayenne pepper
1/2 cup cheddar cheese, shredded (optional)

Steps:

  • Preheat oven to 350°F.
  • Peel potatoes and slice into 1" cubes and add to medium sauce pan and cover with water. Bring to boil and simmer until soft.
  • In large skillet, add onions, garlic and 3 tbsp butter and saute until translucent.
  • Drain water from potatoes and add 3 tbsp butter, heavy cream, cheddar cheese and salt. Whip until smooth and creamy.
  • Add ground beef to onions and garlic and brown thoroughly.
  • Add flour and onion soup mix. Mix well and cook for 2 -3 minutes. Add broth, ketchup, Worcestershire sauce, thyme and cayenne pepper and combine thoroughly.
  • Add vegetables and bring to a simmer for 5 minutes.
  • Pour meat and vegetable mixture into casserole dish and top with mashed potato mixture. Place in oven. Cook for 30 minutes or until golden brown.

1 cup sour cream
Salt and pepper to taste
2 pounds ground beef
1/2 cup chopped onion
1 medium sweet red pepper, chopped
1 teaspoon garlic salt
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (16 ounces) whole kernel corn, drained
1/2 cup milk
2 tablespoons butter, melted
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. For additional browning, place under broiler for a few minutes. Sprinkle with parsley if desired.
