THE BEST GRILLED STEAK EVER!
I have tried about 20 grilled steak recipes here, and none beat my old tried and true recipe. It is the result of years of experimentation, and is the best. I tried another Zaar recipe tonight, and I have decided to try and post mine here. Some of the ingredients are regional spices, so I'm not sure if I can post it, but I will do the best I can. This is absolutely the best grilled steak I have ever eaten! Please note: this is best made on a charcoal grill, gas is okay, but charcoal is best!! If you really want a smokey flavor, add hickory chips and cover the grill during the last few minutes!

- Mix the balsamic vinegar, olive oil, greek seasoning, and southern flavoring together.
- Place steaks in a shallow pan. Pour above mixture over the steaks. Turn to coat. Leave on the counter at room temperature. This is very important. It allows your meat to relax and absorb the marinade. This makes for the most tender and juicy of steaks!
- Place desired amount of charcoal in the bottom section of your grill. Squirt some lighter fluid on it. Light your charcoal after waiting a couple of minutes. Let the coals reach a medium high temp -- this should take about 20-25 minutes. Spread your coals evenly. This recipe is best on a charcoal grill, but you can use gas.
- Place the steaks on the grill. Cook about 4 minutes on each side. Cook according to your preferences -- medium, medium-rare, well done, etc.
- 4 minutes on each side should produce a medium or medium-rare steak at 1 to 1 1/2 inches thick.

- Combine all the ingredients (except steaks) in a bowl. Mix well. You may choose to puree the marinade to get a more consistent mix.
- Reserve one cup of marinade for basting.
- Place three steaks in a gallon storage bag, place the other three in a second bag.
- Divide remaining marinade and pour over steaks. Seal bags and allow steaks to marinate in the refridgerator for four hours or more.
- Grill steaks with medium-hot coals. Leave to coals lumped in the middle of the grill and grill the steaks around them, not directly above them.
- I turn the steaks a few times on the grill and baste liberally with the reserved marinade during cooking.

Tender juicy steaks on the grill are one of life's pleasures. This is the best marinade we have ever come across. It is the perfect blend of flavors and it leaves the meat tender without being overpowering. Note: I'm not sure of the origins of this recipe, I don't see a duplicate. Will post a picture.

MARINATED GRILLED CHUCK STEAK
This chuck steak marinates for at least 8 hours, so be prepared. For me, this is a different taste for steak, with the chili powder. But it goes well with the chuck steak and it turns out nice and tender. And it doesn't use soy sauce, so that extra sodium content is eliminated. Great for this less expensive piece of meat. Marinating time is not included in the prep time!

- Trim excess fat from the steak, and place in a shallow container or a large zip lock bag.
- Combine all the other ingredients, stirring well; pour the marinade over the steak. Cover and marinate in the refrigerator at least 8 hours, turning once.
- Take steak out of the refrigerator to let it sit while you are getting your charcoal ready on your grill. This will help relax the meat so it is even more tender.
- Remove steak from the marinade. Grill over hot coals 8 minutes on each side, or until it reaches the desired degree of doneness. (I don't cook mine that long).

- Trim all but 1/4 - 1/2 inch fat from sides of steaks and then slash remaining fat with a knife at 1-inch intervals. Spread 1/4 inch of mustard over both sides of steaks -- do not coat sides of steak with the mustard. Place steaks in a shallow dish large enough to hold steaks in one layer and cover with plastic wrap. Refrigerate overnight. Let stand at room temperature 2 hours before grilling.
- Prepare grill. I used charcoal sprinkled with wood chips.
- Brush grids with oil.
- Sear steaks over hot coals (or high heat) for one minute per side. Than adjust grids so steaks are over medium hot heat (on my grill I lower the grill grates or you can move the steaks so they are on the outer edges of the coal to reduce heat). Grill for 7-10 minutes on one side (7 minutes for rare, 8-9 for medium, and 10 for well). Turn steaks and grill for 8-12 minutes (8 minutes for rare, 9-10 for medium rare, 11-12 for well done).
- To serve, transfer steaks to serving platter or carving board and let stand 5 minutes before cutting across the grain into slices 1/4 inch thick or serve steaks whole.

- In a small bowl, mix together the salt, sugar, pepper, garlic powder, and cayenne.
- Place the steaks on the wire rack inside a sheet pan.
- Pat the rub into all surfaces of the steaks.
- Cover with plastic wrap.
- Place the pan in the refrigerator for up to 1-1/2 hours.
- Remove the steaks from the refrigerator 30 to 40 minutes prior to grilling and allow them to come to room temperature on your countertop.

- Remove steaks from the refrigerator 30 minutes before cooking, allowing them to warm to room temperature.
- Heat half of the grill to medium-high and leave the other side off.
- Brush the steak with oil, and season with salt and pepper.
- Grease the grates with oil, and then place the chuck eye steaks on the cool side for 25 minutes.
- Then move the steak to the hot side and sear for about 2 minutes on each side.

- In a small saucepan, saute garlic in oil for 1-2 minutes over low heat until tender; remove from the heat. Stir in the vinegar, ketchup, Worcestershire sauce, sugar, and basil., Pour 1 cup marinade into a shallow dish; add the meat and turn to coat. Cover and refrigerate for at least 6 hours or overnight. MARINATED GRILLED CHUCK ROAST RECIPE

- Gather the ingredients.
- Whisk the balsamic vinegar, olive oil, shallot, garlic, parsley, Dijon, sugar, beef bouillon, salt, pepper, and meat tenderizer in a bowl. Add 1/2 cup of water and stir again.
- Score the chuck roast with a sharp knife making 6 or 7 large cuts all over one side of the meat.
- Add the marinade to a plastic bag and then add the steak. Seal the bag and massage the marinade into the steak. Place it on a plate to catch any drips or leaks and refrigerate for at least 6 hours, ideally overnight. You can even marinate for up to 24 hours. - Move the meat to the cooler side of the grill, close the lid, and continue to cook to your liking or until the meat registers 130 F to 140 F (medium-rare) on an instant thermometer or probe, 20 to 30 minutes longer. You can also throw in a few wood smoke chips on top of the burners or charcoal for a nice smoky flavor.
- Remove the roast from the grill and allow to rest loosely covered with foil, about 10 minutes. Slice against the grain (do the best you can, the grains can change across the meat due to the configuration of the muscle). Serve with your favorite sauce like chimichurri . Enjoy.
