Let me start by saying I am not a fan of Brussels Sprouts. I made this recipe one Christmas as my mom loves them. I was impressed and amazed on how these turned out. So for all of you "non brussels sprouts fans" give this a try.

Steps:
- Preheat oven to 350°F.
- Lightly coat a 1 1/2 quart oval baking dish.
- In a 12" skillet cook onion and garlic in butter over medium heat for 3 minutes or until softened.
- Stir in brussels sprouts and thyme.
- Cook for 4 minutes or until onions begin to brown.
- Add broth, bring to a boil.
- Cook, stirring occasionally for 3-4 minutes or until broth is nearly evaporated.
- Add whipping cream and nutmeg.
- Cook for 4 minutes or until mixture begins to thicken.
- Transfer to a prepared baking dish.
- Stir in half of the cheese, all of the salt and pepper. Sprinkle the remaining cheese over the top.
- Bake uncovered for 20-25 minutes or until brussels sprouts are tender.

- Pre-heat the oven to 400F
- If needed, clean and trim the Brussels sprouts and cut them in halves and place them in an oven safe dish. Make sure to dry them very well before cooking.
- Add the garlic, Parmesan cheese, salt, and pepper, followed by the olive oil. Toss to coat.
- Roast in the oven uncovered for 20-25 minutes until crisp, brown and caramelized on the outside and tender on the inside. Serve with more grated cheese.

Crisp cubes of apple provide beautiful sweetness, while sausage - and Worcestershire sauce (my secret ingredient) - gives a contrasting savoury kick. - 1. Trim the Brussels and peel away any tatty outer leaves, halving any larger ones and keeping the smaller ones whole. Cook in a large pan of boiling salted water for 5 minutes, then drain and leave to steam dry.
- 2. Melt the butter in a large frying pan on a medium-low heat. Pick and add half the sage leaves, cook for 3 minutes, or until crispy, then tip into a small bowl. 3. Place the pan back on the heat and squeeze the sausage meat from the skins directly into the pan, breaking it up with the back of a spoon. Cook for 3 to 5 minutes, until golden and crispy, while you peel and finely slice the onion, and pick and finely chop the remaining sage. 4. Add the onion and chopped sage to the pan and cook for 5 minutes on a medium-high heat, or until the onions have softened, stirring occasionally. 5. Peel and core the apple, then finely dice. Tip into the pan, and add the sprouts too, then add the Worcestershire sauce and toss until hot through. 6. Transfer to a serving platter, scatter over the crispy sage leaves, and dig in! Tip: For a veggie-friendly version, swap the sausages for chopped chestnuts, and use anchovy-free Worcestershire sauce.

- Preheat the oven to 425 degrees F.
- Remove the crusts from the bread slices. Cut the bread into large cubes. Transfer to a food processor and pulse until uniformly chopped (the pieces of bread should be slightly smaller than a peppercorn; you should have about 2 cups).
- Transfer to a medium bowl and stir in the melted butter, Parmesan, a pinch of salt and few grinds of black pepper. Spread on a rimmed baking sheet. Bake until golden brown and crisp, stirring halfway through, about 14 minutes. Set aside on a wire rack to cool.
- Meanwhile, place another rimmed baking sheet in the oven to preheat.
- Trim the ends of the Brussels sprouts, remove any tough or bruised outer leaves and cut each in half lengthwise. Toss the Brussels sprouts, olive oil, 1 teaspoon salt and 1/4 teaspoon black pepper in a large bowl.
- Carefully remove the hot baking sheet from the oven and add the Brussels sprouts, cut-side down, in an even layer. Roast until well browned and tender, about 30 minutes.
- Transfer the Brussels sprouts to a serving platter and top with the Parmesan breadcrumbs.

- Trim the bottoms off of the Brussels Sprouts and then cut in half vertically (each half should have the core intact).
- Fry Bacon in a large pan until crispy. Remove from pan and reserve the fat.
- Add the Brussels Sprouts to the Bacon Fat and fry on medium. Do not stir too often as they need to brown. Sprinkle with the salt.
- Once the Brussels Sprouts are browned, add the Green Onion (the whole stem, trimmed and chopped).
- Crumble the bacon and add to the Brussels Sprouts.
- Stir together the juice of the lemon and the Sugar. Pour juice over the Brussels Sprouts and cook until evaporated (about 1 minute).

I know the title sounds a little pretentious, but these seriously are amazing. I've had many self-proclaimed Brussels sprout haters do a complete u-turn with this recipe. The best part is that it is so quick and just uses the microwave, so for big dinners where the oven is in use, this makes a great side!

- Clean and halve the Brussels sprouts. Put them in a microwave safe dish and add a tablespoon or so of water. Cover and microwave on high for about five minutes. They should NOT be fully cooked.
- Core, then roughly chop the apples, leaving skin on.
- Mix the butter, sugar and nutmeg.
- Add the apples to the sprouts and cover with butter mixture. Return to microwave and microwave for 4-5 minutes until sprouts are cooked.
- Cooking time will vary depending on your microwave.
- Serve immediately. Great as leftovers too!
