BERRY CRUMBLE BARS
Berry Crumble Bars are bursting with fresh mixed berries and topped with a pecan-studded crumble. These bars are easy to make and perfect to serve at any spring brunch or party.

Steps:
- Preheat oven to 375 degrees F. Grease a 9x13-inch baking pan with butter or nonstick cooking spray. You can also line the pan with foil or parchment before greasing the pan to ensure they do not stick.
- In the bowl of a food processor, combine the light brown sugar, granulated sugar, flour, baking powder, cinnamon and salt. Pulse the mixture in the food processor a few times to incorporate the ingredients. Add in the butter and continue to pulse the food processor until the mixture comes together and small clumps form. Add in the egg and pulse again to combine.
- If you do not own a food processor, you can use a pastry blender or two forks to cut the butter into the flour mixture. It will take a little more time, but it is totally doable.
- Spoon half of the crumble mixture into the prepared pan and use your hands or the bottom of a measuring cup to pat the mixture into an even and compact crust layer.
- Add your berries to a large bowl and gently toss them with the lemon juice.
- In a small bowl, whisk together the granulated sugar and cornstarch. Sprinkle the cornstarch and sugar mixture over the top of the berries and gently toss to cover the berries with the mixture. Pour berries evenly over the crust.
- Crumble the remaining crumble topping over the berries. To make little clumps, simple squeeze the crumble topping in your hand and sprinkle the crumbs to create a topping layer. Sprinkle pecans on top of crumble topping.
- Bake in preheated oven for 45 minutes, or until the topping is golden brown. Cool completely before serving.
- Serve these berry crumble bars alone, or slightly warmed up with a scoop of vanilla bean ice cream.

BERRY CRUMBLE BARS
I like to think of these fruit and oat bars as a grownup version of one of my favorite lunchbox snacks. I'll bake these through spring and summer and bring them to picnics and cookouts every chance I get. The oat crumble comes together super quickly and the fruit layer works with just about any fresh or frozen berries that are on hand.

- Preheat the oven to 375 degrees F. Spray a 9-inch square baking pan with baking spray and line with parchment paper, leaving an overhang on two sides of the pan (for easy removal after baking).
- For the fruit: In a medium bowl, toss together the berries, sugar, lemon zest and juice, vanilla and salt. Set aside.
- For the crumble: In a large bowl, combine the flour, oats, brown sugar and salt. Add the butter and use your hands to work the butter into the oat mixture until crumbly and combined.
- Press a little more than half of the crumble into your prepared pan. Pour the sugared berries over the pressed crust and top with the remaining crumble.
- Bake the bars for 25 minutes, then reduce the oven temperature to 350 degrees F and continue baking until the center is bubbly and the topping is golden, 30 to 35 minutes. Let cool completely, lift out of the pan and slice into 16 bars.
BERRY CRUMB BARS
Economical and easy to make bars. Kids love them. You can use any variety of berry that you like; we used raspberries in this recipe.

- Preheat oven to 375 degrees F (190 degrees C). Grease one 13x9-inch pan.
- Combine 1 cup of the sugar, the flour, baking powder, salt, ground cinnamon, shortening, and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
- Combine the remaining 1/2 cup sugar, the cornstarch and berries. Place mixture over dough in pan. Crumble the remaining dough over the tops of the berries.
- Bake in the preheated oven until top is slightly browned, about 45 minutes.

BERRY OAT CRUMBLE BARS

- Preheat the oven to 375℉. Line an 8×8-inch square baking pan with parchment paper.
- In a bowl, mix together the oats, flour, brown sugar, lemon zest, baking powder, cinnamon, and salt.
- Add the softened butter and vanilla and, using a large spoon or your hands, work the butter into the oat mixture until you get a crumbly dough that will stick together if you pinch it between your fingers.
- Measure out 1 ½ cups of the crust and crumb topping mixture and set aside in the refrigerator.
- Press the remaining crust mixture into the bottom of the parchment paper-lined baking pan using the back of a spoon or spatula or slightly damp fingers. Press the mixture into the pan firmly then use a fork to prick the crust 8-10 times.
- Bake the crust for 10-12 minutes or until the edges look just slightly brown and the crust starts to puff and look set.
- While the crust is baking, wipe out the bowl you used to mix the crust and add the filling ingredients. Stir to combine.
- Remove the crust from the oven then spread the filling in an even layer over the hot crust. Crumble the remaining crust mixture over the top of the filling.
- Bake for 30-35 minutes or until the crust is lightly browned and the filling is bubbling.
- Remove from the oven and place the pan on a wire rack and allow the bars to cool completely then transfer the pan to the fridge for at least 2 hours before cutting.
- To cut cooled bars, use the parchment paper to lift the bars onto a cutting board then cut into 16 squares.
- Store leftover bars in a covered container in the fridge for up to 4 days.

BLUEBERRY PIE BARS
Steps:
- Preheat the oven to 350 degrees F. Spray an 8-by-8-inch baking pan with cooking spray. Line the pan with parchment paper so that it hangs over on two sides. Spray the parchment.
- For the crust: In the bowl of a food processor, combine the butter, sugar, flour, cinnamon and salt. Process until the mixture starts to come together and clump, 1 minute. Remove 3/4 cup and reserve; press the remaining crust mixture evenly into the prepared baking pan. Set aside.
- For the filling: In a medium bowl, whisk together the egg, sour cream, sugar, lemon juice, flour, cornstarch, vanilla extract and cinnamon until smooth. Mix in 1 cup of the blueberries. Pour the filling mixture over the crust, shaking the pan gently to settle the custard and berries. Pour the remaining 1 cup blueberries over the top, spreading them evenly.
- Take the reserved crust and sprinkle it over the top of the berries, squeezing the mixture in your hands to encourage large lumps.
- Bake for 1 hour. Let cool. Remove the bars from the pan and cut into 9 pieces. Refrigerate until ready to serve.
BLUEBERRY CRUMBLE BARS
These bars are always a big hit and are a great way to use those fresh summer berries--though frozen blueberries work just as well. They're especially great with a scoop of vanilla bean ice cream on top.

BLUEBERRY OAT SQUARES - STARBUCKS COPYCAT
These wholesome bars are just like Starbucks blueberry squares (if not better!) My favorite thing about this recipe is the oatmeal base/crumble topping. It is so versatile and makes enough for a generous amount on the top and bottom because c'mon... isn't that everyone's favorite part?! I use this same oatmeal crust recipe with a multitude of different fillings, including swapping strawberries for the blueberries.

Steps:
- Filling: In saucepan, bring blueberries, sugar and orange juice to boil; reduce heat and simmer until tender, about 10 minutes. Whisk in cornstarch and boil, stirring, until thickened, about 1 minute. Place plastic wrap directly on surface; refrigerate until cooled, about 1 hour or up to 1 day before using.
- Base/Topping: In a large bowl, stir together the oats, flour, brown sugar, salt and baking soda. Cut in the butter to form a crumbly mixture. Reserve 1 1/2 cups of the crumbs, and pat the rest evenly into the bottom of a greased 9 x 13 inch pan.
- Spread the blueberry mixture over the base. Crumble the reserved amount of the base/topping over the blueberry mixture.
- Bake at 350 degrees F until light golden, about 40-45 minutes. Let cool completely on rack as these cut better when they are fully set. (Make-ahead: Cover and refrigerate for up to 2 days or overwrap with heavy-duty foil and freeze for up to 2 weeks.).
