BERRY CHERRY CRISP
This Berry Cherry Crisp is the ultimate summer dessert! Loaded with fresh summer fruit.

Steps:
- Preheat the oven to 350 degrees F and grease 4 individual ramekins or skillets or an 8x8" pan.
- In a medium bowl, combine cherries, blueberries and granulated sugar. In a small bowl, combine corn starch and water. Stir into cherry mixture. Spoon into prepared baking dish(es).
- In another medium bowl, combine butter, brown sugar, oats and flour with a pastry cutter or your hands until crumbly (it will have a cookie dough-like texture). Crumble over top of cherry mixture in baking dish(es) and press down gently.
- Bake for 30-40 minutes until bubbly and thickened and crumble is golden brown.
- Serve warm with ice cream.

A truly incredible dessert! It's just soooo good and really easy to make. Everyone always raves about it and asks me for the recipe when I make it. Wonderful served with whipped topping or ice cream. Great for vegans!

- Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
- In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.
- Bake in the preheated oven for 30 minutes, or until topping is golden brown. Allow to cool 15 minutes before serving.

- In a large bowl, combine the brown sugar, tapioca, extract and cinnamon. Gently stir in cherries and blackberries. Allow to stand for 10 minutes. - Prepare the berries: Preheat the oven to 375 degrees F. Grease a 12-inch cast-iron skillet with butter and set aside. In a mixing bowl, combine the berries, granulated sugar, flour, lemon zest and balsamic vinegar. Pour into the pan and smooth into an even layer.
- Make the topping: In another mixing bowl, mix both sugars, the flour, oats, cinnamon and salt. Cut in the butter until you have a coarse crumb and the flour is fully hydrated. Sprinkle this mixture evenly and loosely over the top of the berries. Bake, uncovered, until golden brown, crisp and bubbling, 35 to 40 minutes. Remove from the oven and let sit at least 10 minutes before serving.

- Preheat oven to 350 degrees F.
- Place the frozen berries, sugar, cornstarch and 1/2 cup of the crisp topping into a medium mixing bowl and stir to combine. Divide the mixture evenly between 4 (7 to 8-ounce) ramekins. Top each ramekin with 1/2 cup of the remaining crisp topping. Place the ramekins on a sheet pan and bake on the middle rack of the oven for 30 to 35 minutes or until the fruit is bubbling and the topping is browned. Allow the crisps to cool for 15 minutes before serving.
- 5 ounces all-purpose flour, approximately 1 cup
- 2/3 cup sugar
- 1 1/2 cups chopped nuts such as; walnuts, pecans, or almonds
- 1 1/2 cups crushed crackers, gingersnaps or cereal
- 4 ounces unsalted butter, cubed and chilled
- Place the flour, sugar, nuts and crackers into a large mixing bowl and combine. Work the butter into the dry ingredients with your hands until it is crumbly. Store in the refrigerator for up to a week. Use as topping for crisps, cobblers or grunts.
- Yield: 4 1/2 cups
CHERRY CRISP (FROM COOKING LIGHT)
Wonderful dessert packed with fresh sweet cherries. Just the right amount of sweetness with a yummy crunchy topping. I took this out of the oven and went into another room. When I came back, my picky 8 year-old had eaten more than half! All I had was salted butter, so I omitted the salt in the filling and topping.

- Combine ingredients for filling in a large bowl. Spoon into an 11x7 baking dish that has been sprayed with cooking spray.

The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.
