BERGHOFF RESTAURANT GERMAN POTATO SALAD
The secret this recipe is advance preparation. It needs to be made at least 4 hours in advance, and the dressing should stand for two hours before being added to the salad. From the Berghoff Family Cookbook. Prep time includes chilling time and standing time (for the dressing). Can be served hot, cold or at room temperature.

Steps:
- Combine all the dressing ingredients in a small bowl and whisk thoroughly.
- Cover and let stand for at least 2 hours.
- Gently toss hot potatoes with bacon and scallions.
- Stir in dressing and toss to coat evenly.
- Cover and refrigerate at least 4-6 hours, or overnight.
- To serve warm, heat in microwave.

WARM GERMAN - AND VEGAN! - POTATO SALAD
This is an adaptation of an older German recipe - specifically, it's veganized! I modified it from the VegFamily website. It takes less than forty minutes, since the sauce is made while the potatoes cook. Enjoy!

Steps:
- Bake the potatoes (microwaving is fine).
- While the potatoes are cooling, heat the oil in a skillet over medium. Add the vinegar and water, and increase the heat till this mixture is boiling. Stir in the sugar and flour, and stir constantly until it's thickened.
- Peel and chop the potatoes, and place in a serving bowl. Gently stir in the celery, onion, salt and pepper.
- Pour warm dressing over potato mixture. Sprinkle liberally with vegan bacon bits, if desired. Taste, adjust seasonings, and serve warm.
AUTHENTIC GERMAN POTATO SALAD
This is best served hot, but equally good cold! This is an authentic german recipe...everyone says it is the best! It is also great cooked ahead of time and then microwaved...it gives the flavors time to blend.

Steps:
- Place the potatoes in a pot, with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, set aside to cool.
- Place the bacon in a large deep skillet over medium-high heat. Cook until browned and crisp. Remove and set aside.
- Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add potatoes and parsley. Crumble half the bacon into the mix. Heat through, transfer to a serving dish. Crumble the remaining bacon over the top and serve warm.

Steps:
- Quarter potatoes length wise anc cut them crosswise into 1/2 inches pieces. Boil potatoes until tender about 10-15 minute Cook bacon until crispy, drain. Reserve the drippings.
- Put drippings in skillet add the onion and celery, cook the mixture over low heat stirring until the onion is softened. add the sugar, flour and celery seeds cooking form about 30 seconds. Stir in the mustar, vinegar and 1/2 cup water, bring mixture to a boil. and then simmer for 2 minute or until thick. Season the dresing with salt and pepper, pour over the potatoes and stir in the eggs, pickles, bacon, and scallion greens. Serve warm.
