4 green onions
1 (10 1/2 ounce) can chicken broth (regular or no-salt)
vegetable oil cooking spray
2 teaspoons butter, melted
2/3 cup uncooked arborio rice
3/4 cup Brut champagne
1/4 cup water
1/4 lb bay scallop

Steps:

  • Mince green onions, separating white parts and tops, set aside.
  • Place broth in a small saucepan, bring a simmer, do not boil.
  • Keep warm over low heat.
  • Coat a large saucepan with cooking spray, and place over medium heat until hot.
  • Add butter and white parts of onions, cook until tender.
  • Add rice, and cook 3 minutes, stirring constantly.
  • Add champagne, bring to a boil.
  • Reduce heat and simmer, uncovered 5 minutes or until liquid is nearly absorbed.
  • Add 1/2 cup warm broth, cook 5 minutes,stirring occasionally, until liquid is nearly absorbed.
  • Add remaining broth, and cook 5 minutes or until liquid is nearly absorbed, stirring occasionally.
  • Stir in onion tops, water, and scallops, cook an additional 5 minutes or until mixture is creamy.
  • Rice will be slightly firm.
  • Serve immediately.

1 peach
2 glasses champagne (chilled)
2 -4 maraschino cherries

Steps:

  • Cut a cross in the skin of the peach, before placing it in some hot water for a while to allow for easy peeling.
  • Cut the peach in half, twist the halves in opposite directions to dislodge the pit.
  • Peel and cut the peach halves into wedges.
  • Place 2 to 3 wedges in a champagne glass.
  • Place also 1 or 2 cherries into the glass.
  • Pour in the champagne.
  • Add a teaspoon of cherry liquid to color the drink pink.
  • Serve immediately.

I got this delicious and very simple chicken recipe from the book "French Women Don't Get Fat". It uses a little bit of champagne to tenderize and flavor the chicken. I am a champagne fanatic so I was hesitant to "waste" any on the food, but it was well worth it. It is especially good served with mushrooms or onions. I also like to reduce the sauce that is left in the pan down on the stove top and add a little bit of butter and some lemon juice to make a gravy to pour over the top of the chicken. I hope you enjoy!

4 chicken breasts (with bone and skin)
salt
fresh ground pepper
tarragon or thyme
1 shallot, quartered
1 cup Brut champagne

Steps:

  • Place the chicken breasts in a roasting pan skin side down and season with salt, pepper, and your choice of herbs. (I like it with both the Thyme and Tarragon).
  • Pour half cup of champagne over breasts.
  • Make a slit in each breast and insert shallot.
  • Place the pan under the broiler for 3 minutes. Flip the chicken breast side up and broil for an additional 5 minutes, or until the skin is nicely browned.
  • Remove the chicken from the broiler, baste with the pan juices and add the remaining half cup champagne.
  • Adjust the oven temp to 475 degrees and bake the chicken for 30 minutes, basting once or twice.
