2 lbs steak*
1/4 cup olive oil
1 tsp mild vinegar (Sherry or rice, optional)
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 shallot
2 cloves garlic
5-6 sprigs fresh thyme
1 tsp paprika
1 tsp Kosher salt
red pepper flakes to taste (optional)
6 oz beer (use Munich helles, Czech pils, German pilsner, American craft lager or Vienna lager)

Steps:

  • Prepare a non-reactive container or freezer bag appropriately sized for the steak(s). Thinly slice shallot, mince or roughly chop the garlic. Pick the thyme leaves (optional).
  • Add all marinade ingredients to container (beer should be last) and whisk until well combined. Add steak and make sure it is well covered with marinade.
  • Marinate for 3 to 24 hours, covered and refrigerated. Occasionally move the steak around to ensure all of its surfaces are adequately accessed by the marinade. Bring to room temperature before cooking.
  • Heat grill (or pan/griddle) to medium-high to high heat. Scrape marinade off the steak surface and discard. Pat dry steak and season lightly with salt and pepper. Grill or sear for about 3-5 minutes per side, flipping once until your desired doneness is reached. (See steak temperatures below).
  • Remove from the grill and rest the steak before slicing/serving. You may lightly cover it with foil while resting.

TENDER BEER POT ROAST (IN DUTCH OVEN, BRAISED WITH PORTER ALE)



Tender Beer Pot Roast (in Dutch Oven, Braised with Porter Ale) image

How to cook a classic beer braised pot roast in Dutch oven. In this recipe we use rump and porter ale and cook the beef low and slow for tender texture and amazing flavors.

3 lbs beef roast (rump (aka bottom round), top round, chuck or brisket)
1 tbsp flour
salt (to taste, but use generously)
pepper (to taste, but use generously)
2 tbsp cooking oil
1 onion, rough chop
3 cloves garlic, minced
1 tbsp (heaping) tomato paste
12 oz porter ale*
2 cups beef stock
1 tbsp dark brown sugar
8 sprigs thyme, leaves picked + more for garnish
1 lbs small gold potatoes or red potatoes, cleaned
4 carrots, sliced in diagonal chunks
3 tbsp butter
1/4 cup AP flour
1 1/2 to 2 cups of braising liquid (pot roast juices)

Steps:

  • Bring the beef to room temperature before you handle it.
  • Mix flour, salt and pepper and coat the beef all over.
  • Preheat the oven to 275-300 F (depending on your oven's calibration).
  • Heat a Dutch oven or similar heavy duty oven safe pot with a lid over medium-high heat. Add cooking oil and sear beef on all sides until nicely browned. Remove temporarily and lower the heat to medium.
  • Saute the onions briefly, add the tomato paste and minced garlic and give everything a nice stir, cook about 1 minute. Deglaze with some porter and scrape brown bits from the bottom of the pot. Add the rest of the porter, then the beef broth, brown sugar and thyme. Stir.
  • Add back the beef and surround with the potatoes and carrots. Bring to boil. Cover and transfer to the oven.
  • Check after 2 hours to make sure that there is sufficient liquid remaining. If needed add a bit more ale or stock or water. Continue braising until the beef is very tender** and can easily be broken up with a fork.
  • Reserve the juices to use in gravy (optional) and break up the roast before serving.

6 -8 lbs rump roast
1 cup vegetable oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup prepared mustard
30 cloves garlic, cut in half
1 tablespoon ground pepper

Steps:

  • Pierce roast at 1 inch intervals with a meat fork, and place in a large zip lock bag.
  • Combine vegetable oil and next 5 ingredients; pour over roast in zip lock bag.
  • Seal and chill for 24-48 hours, turning roast occasionally.
  • Bake at 325 degrees for 1 hour and 50 minutes or until a meat thermometer registers 145-160 degrees.
  • Let stand for 5 minutes before slicing thinly across the grain.
  • Roast beef will be rare.

2 tablespoons vegetable oil
1 medium onion, chopped ( 1/2 cup)
1 clove garlic, finely chopped
1/2 cup chili sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 can or bottle (12 ounces) beer
3 1/2- to 4-pound rolled beef rump roast
2 cups hickory wood chips

Steps:

  • In 1-quart saucepan, heat oil over medium-high heat. Cook onion and garlic in oil, stirring frequently, until onion is tender; remove from heat. Stir in chili sauce, salt, pepper and beer.
  • Place beef in shallow glass or plastic dish or resealable food-storage plastic bag. Pour beer mixture over beef; turn beef to coat with marinade. Cover dish or seal bag and refrigerate, turning beef occasionally, at least 8 hours but no longer than 24 hours.
  • Cover wood chips with water; soak 30 minutes. If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
  • Remove beef from marinade; reserve marinade. Insert spit rod lengthwise through center of beef; hold firmly in place with adjustable holding forks. Insert barbecue meat thermometer so tip is near center of beef but not touching spit rod. Drain wood chips. Add about 1/2 cup wood chips to medium-low coals or lava rock.
  • Cover and grill beef on rotisserie over drip pan and 4 inches from medium-low heat about 2 hours for medium doneness (160°F), brushing occasionally with marinade and adding 1/2 cup wood chips to coals or rock every 30 minutes. Remove spit rod, holding forks and thermometer. Discard any remaining marinade. Cover beef with foil and let stand 15 minutes before slicing.

3 lbs boneless beef chuck roast
1 -2 can beer (1 can is optional)
6 carrots or 6 parsnips, cut into 2 inch pieces
1 onion, quartered
1 pepper, diced
15 mushrooms, halved
2 tablespoons dried onion flakes
1 sprig thyme
2 bay leaves
salt and pepper
2 tablespoons butter
1/4 cup flour

Steps:

  • In a dry cast iron pot brown fat side down, then continue to brown all sides.Your kitchen will be smokey!
  • Season with salt and pepper.
  • Add 1 can beer.
  • And pour the other can for yourself!
  • Add rest of ingredients except butter and flour.
  • Put pot with cover into 325 degree oven for 3 hours.
  • Melt butter in micro and flour.
  • Remove roast and vegies from pan.
  • Add some drippings to butter then add back to pan.
  • Cook 5 minutes till nice and thick.
  • Add veggies back to sauce. Plate the sliced roast {if it`s not already falling apart} Top with the veggies and serve with your or my favorite side!

1 cup dark beer
1/2 cup Dijon mustard
3 tablespoons teriyaki sauce
3 tablespoons brown sugar

Steps:

  • Combine all ingredients. Place roast in a large plastic zippered bag and pour marinade over roast. Close bag and marinate in refrigerator 12 to 14 hours.
  • Remove roast from refrigerator and pat dry with paper towels. Discard marinade and preheat oven to 450°F232°C.   • Skim fat from cooking liquid, strain, add flour mixture and water to measure 2 cups, cook in roasting pan stirring constantly, until thickened.
  • Serve sauce over sliced meat.
