1 cup flour
1/2 teaspoon seasoning salt (such as Lawry's)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
0.5 (8 ounce) bottle light beer or 0.5 (8 ounce) can beer
1/4 cup water
1 1/2 lbs white fish (such as cod, haddock, halibut)
cornstarch, for dusting

Steps:

  • Put flour, seasoning salt, garlic powder and paprika into a large bowl and whisk to combine.
  • Add beer and 1/4 cup water and whisk to make a smooth batter.
  • Pour the oil into a large heavy pot to a depth of 2" and heat over medium high heat until temperature registers 350 F on a deep fry thermometer.
  • Working in batches, dust the fish with cornstarch lightly, dip the fish into the batter, shaking off some of the excess, and fry, turning occasionally, until cooked through and deep golden brown, about 5 minutes. Transfer the fried fish to a rack to drain.

Oil, preferably peanut or grapeseed, for frying
3/4 cup white rice flour
1/4 cup cornstarch
1 teaspoon paprika
1/2 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon cayenne
Kosher salt and freshly ground black pepper
1 to 1 1/4 cups light beer, such as pilsner
3 pounds russet potatoes, peeled and cut into batons 3 inches long, 1/2 inch wide and 1/4 inch thick, soaked in cold water

Steps:

  • Fill a small Dutch oven with 3 to 4 inches of oil and heat over medium heat until a deep-frying thermometer inserted in the oil registers 325 degrees F. Line a large plate or baking sheet with paper towels.
  • In a medium bowl, whisk together the flour, cornstarch, paprika, baking powder, garlic powder, onion powder, cayenne, 2 teaspoons salt and 1/2 teaspoon black pepper. Add 1 cup of the beer and stir until smooth, adding more beer a tablespoon at a time if necessary until the batter is the consistency of heavy cream. Set aside.
  • Using kitchen towels, dry the potatoes thoroughly. Working in batches, slide the potatoes into the oil, being careful not to crowd the pan, and cook until lightly golden, about 5 minutes. Use a slotted spoon or skimmer to remove to the towel-lined plate and sprinkle with a few pinches of salt.
  • Raise the oil temperature to 350 degrees F. Dip the partially cooked fries a few at a time in the batter to coat. Using a fork, slide the coated potatoes 1 at a time into the oil, about 6 or 8 in a batch so as not to overcrowd the pan. Use a metal skimmer or tongs to keep them separate, as they tend to cling together. Cook until deep golden brown, 2 to 3 minutes. Remove to fresh paper towels to drain. Serve immediately.

Lampreys (sometimes called lamprey eels due to their similar appearance) are a deeply underappreciated fish in the Americas and a delicacy in southwestern Europe (Portugal, Spain, and France) and Asia, costing consumers there upwards of $25/pound. It is quite inexpensive here if your angler has been successful. Lamprey is not exceptionally strong in flavor, with a cooked texture something like lobster -- chewy and meatier than most fish. 2 lbs lampreys, cleaned
salt and pepper, to taste
1/4 teaspoon garlic powder (more to taste)
12 ounces beer (warm or cold, flat or fizzy ~ don't waste good beer here)
1 1/2 cups all-purpose flour
oil, for frying (any vegetable oil will do ~ you'll want about 1/2-inch in your pan)

Steps:

  • To clean lampreys: after catching and killing the fish, pop it into boiling water for a few seconds to help remove the slimy coating. Though a knife will often be all that's needed to scrape it away, any remaining vestiges can be rubbed off the skin with a rough cloth. Cut off the tail (usually about 6 inches long), then tie a string around the head and suspend the fish over the sink to drain the blood. Open bronchial holes on the side of the fish and allow the blood to empty Then, remove the intestines and notocordium (the long, dark bitter-tasting organ running down the abdomen). Rinse the fish again and then decapitate it by slicing around the body and pulling off the head. If you don't want crunchy lamprey, make sure the thick, bony cartilage comes out with the head. Discard both.
  • To make the batter: Mix the dry ingredients together.
  • Add beer slowly, stirring constantly, until you get the texture of pancake batter.
  • Let sit on the counter at room temperature for at least 20 minutes to allow the gluten to break down.
  • Cut cleaned fish into 1" sections and drop into the batter.
  • Heat the oil in a large frying pan to 350°F.
  • Drop the battered fish in the hot oil and cook until golden brown on all sides, about three minutes.
  • Serve immediately.

3 lbs chicken, cut into 8 pieces
ice water
vegetable oil, for frying
2 cups beer
2 large eggs
2 1/2 cups flour
1/4 cup cornstarch
salt and pepper

Steps:

  • Soak chicken pieces in ice water for 30 minutes.
  • preheat oven to 200 degrees.
  • Fill a large pot with enough oil to reach a 2 inch depth.
  • heat oil to 365 degrees.
  • In a large bowl, whisk together beer and eggs.
  • Whisk in 2 cups of flour and cornstarch and salt into the beer and egg mixture until smooth.
  • Place remaining flour in a shallow bowl.
  • Season the chicken with salt and pepper, then coat with flour.
  • Transfer to the beer batter and coat.
  • Place chicken into hot oil with tongs. Keep oil at 365 degrees at all times.
  • cook about 15 minutes for dark meat pieces and 10 minutes for white meat.
  • Place cooked chicken on paper towels to drain.
  • Season chicken and serve.

1/4 cup flour
3/4 cup flat beer
1 egg, slightly beaten
1 tablespoon sugar
1/2 teaspoon salt
peanut oil, for deep-frying

Steps:

  • Butterfly the cleaned shrimp so that they will look larger: hold them so that the underside is up; slice down its length, almost to the vein, to form the hinge.
  • Spread and flatten to form the butterfly shape.

As you know by now, I'm a purist and like to use as many parts of the animal as I can, which meant a few of my fellow hunters were plucking feathers with me in order to use the whole bird. They looked at me in horror at first, but then they got into it. We even had a lesson on gutting and the yellow gland at the tail... oh it was a wild time let me tell ya. Stick with me and this is the fun you shall have. Then we started talking about hunting for morels in the mountains while we plucked, and by the time we were done at 8am we had worked up an appetite and high tailed it to the nearest (and only) breakfast place in town. The results of all of this plucking were worth it though, and so if you're feeling detail oriented, I suggest you try that Putach recipe. Or even a dove stock, which freezes well.

30 dove breasts, bone in
4 cups vegetable oil
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 (12 ounce) can beer
salt and pepper

Steps:

  • Rinse the dove breasts under cold water until the water runs clear.
  • Pat the dove breasts dry with paper towel and set aside on a plate.
  • In a medium sized pot, wide enough to hold about 8 dove breasts at a time, add the vegetable oil and begin heating it on medium flame. The wider your pot, the more oil you will need to completely submerge the dove breasts.
  • In a large bowl combine the flour, baking soda, and salt. Slowly whisk in the beer until the liquid is uniform and the consistency of a thick syrup.
  • Using your fingers or a fork, dip one breast into the batter until it is uniformly covered. Dip one side of the breast into the hot oil to see if it immediately sizzles. If it doesn't, wait for the oil to get hotter. Keep testing with the same dove breast, then add more breasts, enough to cover the bottom of the pot.
  • Once one side of the breast is golden brown, turn it over and cook the other side until golden brown, about 5-7 minutes total.
  • Cover a plate with paper towel. Remove the breasts from the pot with a fork or slotted spoon and place on the paper towel. Sprinkle all sides with salt and pepper.
  • Repeat until all of the dove breasts are cooked and serve immediately.

1 1/2 cups beer
2 eggs
1 cup milk

2 cups vegetable oil (for frying)
1 carrot, cut into thick strips
1 onion, sliced into rings

1 yellow bell peppers or 1 orange bell pepper, sliced into rings

Steps:

  • In medium bowl, mix together 1 1/2 flour and the beer with a wooden spoon; let stand for at least 3 hours at room temperature.
  • Mix eggs and milk in a small bowl. In a separate bowl, mix together 1/2 cup flour, salt and pepper.
  • Heat oil to 375°F.(190°C.).
  • Dip each vegetable in the egg and milk mixture. Next dip the vegetables into the flour and seasonings mixture, finally dip the vegetables in the beer and flour mixture. Place the vegetables into the oil and fry until golden brown.
