¾ cup brown mustard seeds
¼ cup yellow mustard seeds
1 cup dark beer, or as needed
2 cloves garlic, minced
½ cup apple cider vinegar
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon ground black pepper
3 half pint canning jars with lids and rings

Steps:

  • Soak brown and yellow mustard seeds with dark beer in a large bowl set in the refrigerator for 24 hours. If the seeds soak up the beer too quickly, add more beer.
  • Transfer the soaked mustard seeds to a food processor along with garlic, apple cider vinegar, brown sugar, salt, and black pepper. Pulse until desired consistency is reached.
  • Sterilize the jars and lids in boiling water for at least 5 minutes.
  • Pack the mustard into the hot, sterilized jars, filling the jars to within 1/4 inch of the top.
  • Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles.
  • Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Refrigerate the jars of mustard for 2 weeks before using.

2 bottles (12 ounces each) beer or nonalcoholic beer
3/4 cup German or Dijon mustard, divided
1/2 teaspoon coarsely ground pepper
1 fully cooked bone-in ham (4 pounds)
4 fresh rosemary sprigs
16 pretzel hamburger buns, split
Dill pickle slices, optional

Steps:

  • In a 6-qt. electric pressure cooker, whisk together beer, 1/2 cup mustard and pepper. Add ham and rosemary. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 20 minutes. When finished cooking, allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure., Remove ham; cool slightly. Discard rosemary sprigs. Skim fat from liquid remaining in pressure cooker. Select saute setting and adjust for high heat. Bring liquid to a boil; cook for 5 minutes., When ham is cool enough to handle, shred meat with 2 forks. Discard bone. Return ham to pressure cooker; heat through. To serve, place shredded ham on pretzel bun bottoms with remaining mustard and, if desired, dill pickle slices. Replace tops.

SLOW-COOKER PULLED TURKEY

1 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/4 teaspoon pepper
3 medium onions, quartered
12 cloves garlic, peeled
1 bone-in skin-on whole turkey breast (about 6 pounds), rinsed and dried
1/2 cup (1 stick) butter, room temperature

Steps:

  • In a small bowl, mix the salt, garlic powder, smoked paprika and pepper until well combined. Put the onions in the bottom of a 6-quart slow cooker with the garlic cloves.
  • Slowly work your fingers under the skin of the turkey breast to separate the skin from the breast, being careful not to tear the skin. Rub the butter under the skin, covering the entire breast as evenly as possible, then rub the outside of the skin with the garlic powder mixture.
  • Place the turkey breast on top of the onions and garlic in the slow cooker and set the slow cooker to low. Cook until the meat is falling apart, 6 to 8 hours depending on the size of the breast.
  • Remove the turkey and any bones from the slow cooker. Pull the meat off of the bone and place the turkey back into the juices left in the slow cooker. Using 2 forks, shred the meat in the juices and allow to rest for 5 to 10 minutes before serving.

3/4 cup yellow mustard
1/2 teaspoon cinnamon
Pretzels, for serving

Steps:

  • Bring the stout to a simmer in a small saucepan and cook until reduced by half. Stir in the brown sugar; when melted, remove the saucepan from the heat. Allow to cool, then mix in the mustard and cinnamon until well blended. Serve with pretzels.

2 tablespoons mustard
1 teaspoon paprika
1/2 teaspoon coarse salt
1/2 teaspoon black pepper
12 ounces beer
2 tablespoons flour
2 tablespoons tomato paste
1 cup beef broth (or chicken)
1 large onion
6 carrots

Steps:

  • Heat oil in pressure cooker ( medium).
  • Brown beef on both sides, then remove and set aside.
  • Add to same pan: small amount of beer and loosen/stir up bits.
  • Add flour and tomato paste to pan and cook over medium for one minute.
  • Place the meat and everything else ( and the rest of the beer ) in the pan.
  • Close this lid and cook on high pressure for about 1 hour.
  • Let pressure come down naturally.
  • Serve over rice or noodles.

(IF POSSIBLE - do this ahead of time and set them covered in the refrigerator for up to 8 hours. It's not absolutely necessary, but it really amplifies the spices!)

  • Set the machine to cook at high pressure for 45 minutes by hitting Manual and adjusting the time setting. (My Instant Pot has a "manual" setting so I just used this.)
