1 tablespoon canola oil
1 pound lean ground beef
1 medium-size yellow onion, chopped (about 1 ½ cups)
1 (14.5-oz.) can diced fire-roasted tomatoes, undrained
1 (15-oz.) can black beans, drained and rinsed
½ cup bottled chili sauce
1 tablespoon chili powder
1 ½ teaspoons kosher salt
2 large jalapeño chiles, divided
6 ounces sharp Cheddar cheese, shredded (about 1 ½ cups), divided
1 (8.5-oz.) pkg. corn muffin mix
½ cup whole milk
1 large egg

Steps:

  • Preheat oven to 425°F. Heat oil in a 10-inch cast-iron skillet over high. Add beef and onion; cook, stirring often, until beef is browned and crumbly, 5 to 7 minutes. Stir in tomatoes, beans, chili sauce, ¼ cup water, chili powder, salt, and 1 finely chopped and seeded jalapeño. Bring to a boil, and remove from heat. Sprinkle top with 1 cup of the cheese.
  • Whisk together corn muffin mix, milk, egg, and remaining ½ cup cheese. Pour batter over hot filling in skillet, spreading batter to edges of skillet. Thinly slice remaining jalapeño; sprinkle slices over top of batter.
  • Bake in preheated oven until cornbread is golden brown, 18 to 22 minutes.

1 large onion, chopped
1 1/2 lbs lean ground beef
4 garlic cloves, minced
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 teaspoon salt
2 tablespoons chili powder
1 (14 ounce) canned stewed tomatoes
2 cups fresh corn kernels or 2 cups frozen corn kernels
1/2 cup chopped fresh cilantro
1 1/2 cups grated monterey jack pepper cheese, divided
1 1/2 cups grated sharp cheddar cheese, divided
3 cups reduced-sodium chicken broth
1 teaspoon salt
2 cups yellow cornmeal
2 cups cold water
1 cup low-fat plain yogurt
1/3 cup low-fat plain yogurt
3 tablespoons heavy cream (can use light)
1/2 cup canned diced tomato, drained
sour cream (optional)
1 (6 ounce) can pitted black olives (optional)

Steps:

  • To prepare beef filling, combine onion, ground beef, garlic, oregano, cumin, salt and chili powder in a large skillet; sauté until beef is browned.
  • Add tomatoes and corn and heat through. Remove from heat and stir in cilantro.
  • Preheat the oven to 350°F Lightly grease a 13-by-9-inch casserole dish.
  • To prepare cornmeal batter, combine chicken broth and salt in a large saucepan. Bring to a boil over high heat. Whisk together cornmeal and cold water until smooth. While broth is boiling, add cornmeal mixture all at once, whisking constantly. Stir over medium heat until thick and boiling. Cook 3 to 5 minutes or until the consistency of mashed potatoes. Stir in yogurt and cook 3 to 5 minutes, stirring often.
  • Spread about two-thirds of the cornmeal batter in casserole. Add beef filling. Top with 1 cup pepper Jack and 1 cup Cheddar cheese. Spoon on remaining cornmeal batter and smooth with a spatula.
  • To make the toppings, stir yogurt and cream together in a small bowl. Spoon lines of yogurt mixture and diced tomatoes across top. Sprinkle remaining cheeses over top.
  • Place casserole dish on top of a large baking sheet. Bake 30 minutes; cover with foil and bake 30 minutes longer. Let stand 20 minutes before serving. Serve with sour cream and black olives.

1 large onion, chopped
1 green pepper, chopped
2 garlic cloves, chopped
2 pounds ground chuck
2 cans Mexicorn (sold at most supermarkets)
2 (8-ounce) cans tomato sauce
8 ounces red wine
1 tablespoon chili powder
Salt, pepper, to taste
1/2 package Jiffy brand cornbread mix
1 small can cream-style corn
1 1/2 cups grated cheddar
1/2 cup milk
1 egg (optional)
1 medium package Frito corn chips
Sliced black olives, for garnish

Steps:

  • Brown the onions, green pepper, and garlic. Add the meat and brown. Add the Mexicorn, tomato sauce, wine, chili powder, salt, pepper and simmer for 15 or 20 minutes. Place mixture in a casserole dish. Make the topping with the cornbread mix, 1 cup of cream-style corn, 1/2 cup cheese, and milk to make runny. (Sometimes I add an egg.) Pour over the casserole and bake, in a preheated oven, at 400 degrees for 35 to 45 minutes. 10 minutes before serving, sprinkle top with crushed Fritos and add the remaining cup cheddar cheese. Garnish with sliced black olives.

2 (14 1/2 ounce) cans chicken broth
1 1/2 cups cornmeal
1/2 tablespoon garlic powder
1/2 tablespoon paprika
1 tablespoon olive oil
1 1/2 lbs ground chuck
1 1/2 cups green onions, chopped (tops and bottoms)
1 cup chunky salsa
1 tablespoon chili powder
1 teaspoon cumin
1/4 teaspoon crushed red pepper flakes
2 cups jalapeno pepper cheese
1 (2 1/4 ounce) can sliced ripe olives, drained
1 teaspoon crushed oregano

Steps:

  • Preheat oven to 350 degrees.
  • Grease 9 or 10 inch spring form pan.
  • In medium saucepan, combine broth, corn meal, garlic powder, paprika and olive oil.
  • Bring to a boil over medium high heat, stirring constantly.
  • Reduce heat to low, simmer until very thick, stirring constantly.
  • Spoon into prepared pan.
  • With back of spoon, press mixture up sides of pan to form a 1 1/2 inch rim.
  • Set aside.
  • Brown ground beef and onion together, drain.
  • Reserve 1 cup of meat mixture for topping.
  • Add 1/2 cup salsa, chili powder, cumin and red pepper.
  • Simmer uncovered 5 minutes, stirring occasionally.
  • Remove from heat, stir in 1 1/2 cups cheese.
  • Spoon evenly into prepared crust.
  • Top with remaining 1/2 cup salsa, olives, 1/2 cup cheese and 1 cup meat mixture.
  • Sprinkle with oregano.
  • Bake 45 to 50 minutes.
  • Let stand 15 minutes before serving.

I love tamales but don't like the high price of corn husks so I created this recipe so that I could get that tamale taste without the high price.

1 lb chuck steaks or 1 lb roast
mojo criollo
1/2 onion, cut into 6 chunks
2 garlic cloves, crushed
2 cups cornflour, Masa brand
1 1/4 cups beef stock
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon garlic
2 cups cheddar cheese, Shredded
1 cup enchilada sauce

Steps:

  • Beef:.
  • Season beef with garlic, salt, and pepper. Pan sear until brown on both sides. Pour mojo sauce over the top, add onion, and crushed garlic, Place in a crock pot at 300F for 6 hours or until meat is falling apart. When done set aside to cool and reserve the stock from the crock pot. When cooled, chop meat finely or shred.
  • Tamale Dough:.
  • Mix all ingedients together until a soft dough is formed. Split the dough into 2 balls. Roll out into a round shape that will fit nicely in a tart pan or pie plate. Spray bottom of dish with cooking spray, then place dough in the bottom and press lightly so that it fits nicely in the bottom. Add shredded beef and cooked onions to the bottom so that the dough is covered. Roll out the top dough and place over the top of the beef so that you have a top and bottom crust. Bake in a 375F oven for approximately 35 minutes until dough is done. Top with shredded cheddar cheese and return to oven until cheese is melted. Meanwhile heat enchilada sauce in a pot on the stove or in the microwave until heated through.
  • Serve with heated enchilada sauce and sour cream on the side.

1/4 teaspoon cayenne pepper
28 ounces tomatoes, diced with green chile
1 1/2 cups corn, frozen
8 ounces Mexican blend cheese, shredded
1/4 cup cilantro leaf, minced
4 teaspoons lime juice
1 1/2 cups flour
1 cup yellow cornmeal
6 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
1 cup buttermilk
8 tablespoons unsalted butter, melted and cooled
2 eggs

Steps:

  • Heat the oil in a large skillet or dutch oven over medium-high heat until shimmering. Add the ground beef or turkey and cook, breaking up large clumps of meat with a wooden spoon, until it is no longer pink, about 5 minutes. Stir in the onion and one tsp salt and cook until softened and lightly browned, 5 to 7 minutes. Stir in the chili powder, garlic, tomato paste, italian seasoning, cumin, and cayenne and cook until fragrant, about 30 seconds.
  • Stir in the tomatoes with their juices, scraping up any browned bits. Off the head, stir in the corn, cheese, cilantro to taste, and lime juice and season with salt and pepper to taste. Set aside.
  • Whisk the flour, cornmeal, sugar, baking powder, 3/4 tsp salt, and baking soda together in a large bowl.
  • In a separate bowl, whisk the buttermilk, butter, and eggs together. Stir the buttermilk mixture into the flour mixture until uniform.
  • For one 13 x 9 pan: Transfer beef/turkey mixture to baking dish. Spread cornmeal topping evenly over the filling, pushing it to the edges of the baking dish. TO SERVE RIGHT AWAY: Adjust an oven rack to the middle position and heat the oven to 375 degrees. Bake, uncovered, until the filling is bubbly and the crust is baked through and golden, 45 minutes. 1 green bell pepper, chopped
2 garlic cloves, minced
1 (10 ounce) package frozen whole kernel corn, partially thawed
1 1/4 cups salsa, medium-hot (or to taste)
1 tablespoon unsweetened cocoa powder
2 teaspoons ground cumin
1 1/2 teaspoons salt, divided
1 teaspoon dried oregano
1/4 teaspoon cinnamon
2 cups monterey jack cheese or 2 cups cheddar cheese, shredded
1/3 cup fresh cilantro, chopped
1 cup all-purpose flour
3/4 cup yellow cornmeal
3 tablespoons sugar
2 teaspoons baking powder
2/3 cup milk
3 tablespoons butter, melted
1 egg, beaten
fresh cilantro leaves
chili pepper
sour cream (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Spray 11"x7" baking dish with nontick cooking spray.
  • Brown beef with onion, bell pepper and garlic in large deep skillet or dutch oven over medium heat. Drain fat. Stir in corn, salsa, cocoa, cumin, 1 tsp salt, oregano and cinnamon. Bring to a boil. Reduce heat to medium-low; simmer uncovered 8 minutes, stirring occasionally.
  • Remove from heat; stir in cheese and cilantro.
  • Spread into prepared dish.
  • Combine flour, cornmeal, sugar, baking powder and remaining 1/2 tsp salt in large bowl. Add milk, butter and egg; stir just until dry ingredients are moistend.
  • Drop by spoonfuls evenly over meat mixture; spread batter evenly with spatula.
  • Bake 15 minutes. Reduce oven temperature to 350 degrees and bake 20 minutes or until topping is light brown and filling is bubbly.
  • Let stand 5 minutes before serving.
  • Garnish with cilantro, chile pepper and sour cream.
