Beefy Vegetable Soup image

A hearty vegetable soup made with beef broth to give it extra oomph. You can substitute chicken or vegetable broth for the beef broth if desired. Serve with thick slices of grainy bread for an easy and satisfying meal.

10 cups beef broth
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
1 ½ cups diced carrots
1 ½ cups diced potatoes
1 cup chopped celery
½ cup chopped onion
1 cup frozen corn kernels
1 cup chopped fresh green beans
¼ tablespoon ground black pepper
½ teaspoon salt
1 ½ cups seashell pasta
1 cup shredded Cheddar cheese

Steps:

  • In a large saucepan, combine the broth, tomato sauce, chopped tomatoes with juice, carrots, potatoes, celery, onion, corn, green beans, pepper and salt. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer for 15 minutes.
  • Stir in pasta and cook for an aditional 15 to 25 minutes or until pasta is tender. Adjust seasoning and serve hot with a sprinkle of Cheddar cheese on top.

1 pound lean ground beef (90% lean)
1 large onion, chopped
1 small green pepper, chopped
1 can (28 ounces) petite diced tomatoes, undrained
1 can (16 ounces) chili beans, undrained
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 package (13-1/2 ounces) beef smoked sausage, sliced
2 serrano peppers, seeded and chopped
2 teaspoons chili powder
1 teaspoon salt
1 carton (32 ounces) beef broth
2 cups water

Steps:

  • In a Dutch oven, cook beef, onion and green pepper over medium heat 8-10 minutes or until meat is no longer pink, breaking up beef into crumbles. Drain., Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until flavors are blended. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

2 dried bay leaves
4 cups vegetable juice
3 cups cubed potatoes (3 medium)
3 cups coarsely chopped cabbage
2 cups frozen small whole onions (from 16-oz bag)
2 cups cubed peeled rutabaga (1 1/2 medium)
2 cups frozen cut green beans (from 1-lb bag)
4 medium carrots, sliced (2 cups)
3 medium stalks celery, sliced (1 1/2 cups)

Steps:

  • In 8-quart stockpot or Dutch oven, place beef bones and water. Heat to boiling. Reduce heat; cover and simmer 30 minutes. Skim off and discard any residue that rises to surface.
  • Stir in bouillon, salt, pepper, thyme and bay leaves. Return to boiling. Reduce heat; cover and simmer 2 to 2 1/2 hours longer or until meat is tender.
  • Remove beef bones and bay leaves from broth. Skim and discard fat from broth. When bones are cool enough to handle, remove meat from bones; cut into bite-size pieces.
  • Return meat to broth. Stir in all remaining ingredients. Heat to boiling. Reduce heat; cover and simmer 30 minutes or until vegetables are tender.

2 tablespoons Canola oil, divided
2 pounds beef stew meat, trimmed and cut into 1-inch pieces
2 cups chopped onion
2 cups sliced or chopped carrot
4 garlic cloves, minced or grated
2 cups water
1 1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried thyme
1/2 teaspoon dried sage
4 bay leaves
32 ounces beef broth
3 (15.8) ounce cans Bush's Cannellini Beans; drained (or Bush's Great Northern Beans)

Steps:

  • Heat a large Dutch oven over medium-high heat. Add 1 tablespoon canola oil and heat to a ripple.
  • Add beef to pan and brown on all sides, working in batches if needed. Remove the beef from pan.
  • Add remaining 1 tablespoon canola oil to pan and heat. Add onion, carrot and garlic; saute for 5 minutes.
  • Return beef to the pan. Stir in water, salt, black pepper, thyme, sage, bay leaves, beef broth and beans. Bring to a simmer. Cover and allow to simmer for at least 1 1/2 to 2 hours, until beef is tender.

Cook until the beef is browned and cooked through, about 6 to 7 minutes. Stir in the tomato paste and mix to combine. Add the broth, tomatoes, beans, and bay leaf. Bring the mixture to a boil. Reduce the heat to a simmer and cook until the liquid has reduced by half, about 30 minutes. Remove the bay leaf and discard. Season with salt and pepper, to taste. Steps:

  • Roughly chop the onion, pepper, and celery.
  • Add the oil to a large stock pot and add the chopped vegetables, cooking until soft.
  • Add the beef and cook until browned.
  • Add the tomatoes and refried beans with the garlic, spices, and mix well.
  • Stir in the stock (you can use bouillon cubes and omit some of the water to make this as a dip) and bring to a boil.
  • Reduce heat and simmer for 30 minutes stirring occasionally.
  • Either use a stick blender or small batches into your food processor and puree the soup.
  • Adjust the seasonings (I like mine A LOT spicier so I add more cayenne and some green chilies to the mix, sometimes a dash or two of Tabasco.).

This is a simple yet delicious broth soup. Yummy vegetables and stir-fry beef in broth. It has an elegant presentation and is great for an appetizer. It can easily become a meal on its own with some added grains. See the variations for ideas.

2 tablespoons canola or coconut oil
½ cup yellow onion (sliced)
½ cup red pepper (diced)
1 cup bok choy (sliced)
2 cups button mushrooms (sliced)
1 tablespoon garlic (minced)
300g stir-fry beef, or sliced sirloin
3 cups organic beef broth
Salt and pepper to taste

Steps:

  • Preheat a large pot on medium-high heat. Add 1 tablespoon of the oil and the onions, red pepper and bok choy. Sauté until lightly browned, stirring frequently. Remove from pot and set aside.
  • Now add mushrooms, garlic and 2 tablespoons of the beef stock to the pot and sauté until lightly browned, stirring frequently.
  • Add the onions, pepper and bok choy back to the pot and add the rest of the beef broth and set aside.
  • Pre-heat a large frying pan on medium-high heat. Add the second tablespoon of canola oil and the stir-fry beef and sauté until lightly browned on all sides. Season with salt and pepper and then add to the soup pot.
  • Now heat the soup and simmer for 6-8 minutes, taking care not to boil. Season with salt and pepper, serve and enjoy.
