Grilled Beef Tenderloin with Steve's Rub image

Steve's Dry Rub is so flavorful. Use it on any beef, chicken or pork. Double or triple the rub recipe and package it up to give as a hostess gift.

2 pounds whole beef tenderloin
2 Tablespoons balsamic vinegar
2 Tablespoons olive oil
2 Tablespoons Steve's Rub (recipe follows)
3 Tablespoons fine sea salt
2 Tablespoons paprika
2 Tablespoons celery salt
2 Tablespoons onion powder
2 Tablespoons coarsely ground pepper
2 Tablespoons garlic powder
1 Tablespoon cayenne pepper

Steps:

  • Mix all ingredients and store in an air tight container.
  • At least 2-1/2 hours before serving prepare the tenderloin by trimming off the excess fat.
  • Brush the beef with balsamic vinegar then olive oil and season with 2 Tablespoons of the dry rub.
  • Cover the tenderloin with plastic wrap and refrigerate for at least 2 hours (I like to let mine marinate overnight). Remove from the refrigerator 30 minutes before grilling to take the chill off the meat.
  • Preheat the grill to a high temperature for searing.
  • Sear the tenderloin for 4 minutes on each side.
  • Turn the grill down to medium. If you have 2 or more burners, leave one burner on medium-high and turn one off. Put the meat over the burner that is off, then close the lid and cook for 15 to 20 minutes for medium rare. Depending on the heat of your grill and the thickness of the roast, the time can vary. The best way to determine doneness is to use a thermometer. Medium rare beef is 135°F.
  • Let the tenderloin rest for at least 15 minutes under a foil tent before slicing. This will give the juices time to settle into the meat.

This dry rub is perfect for grilled steaks and will add amazing flavor to any cut of meat. Extra rub can be stored at room temperature for later use.

Steps:

  • Mix kosher salt, smoked paprika, onion powder, garlic powder, oregano, black pepper, brown sugar, and cumin together in a sealable container. Seal container and shake to mix.

This rub can be used on any cuts of beef, but I found that this one was excellent. Toasting and grinding the peppercorns is a worthwhile step that creates deep flavour. I used Cattle Boyz Barbecue Sauce, but any good quality sauce can be used instead.

1 tablespoon whole black peppercorn
1 teaspoon kosher salt
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
4 beef tenderloin steaks
barbecue sauce (optional)

Steps:

  • Rub: Heat a small skillet over medium heat. Add peppercorns and cook until fragrant. Cool slightly.
  • Transfer to a spice grinder; grind until fine. Combine peppercorns, salt, mustard, garlic powder and thyme in a small bowl.
  • Rub peppercorn mixture evenly over steak. Let stand for 10 minutes.
  • Prepare grill.
  • Grill steaks until cooked, brushing with barbecue sauce.
  • Let stand for 5 minutes before serving.

5 lb. beef tenderloin, trimmed and defatted, but left whole
1/4 cup 2 plus tbsp. olive oil
3 tbsp. dry thyme
3 tbsp. dry rosemary
2 tbsp. finely chopped garlic
3 tbsp. butcher grind black pepper
2 tbsp. coarse salt
For the wine sauce:
1 cup red wine
2 tbsp. shallots
Salt and pepper, to taste
1 tbsp. fresh thyme
1 tbsp. butter

Steps:

  • Preheat the oven to 425°F. Place an empty, heavy bottomed roasting pan into the oven for 10 minutes. While it is heating, combine 1/4 cup of olive oil, thyme, rosemary, garlic, pepper and salt in a bowl. Rub this dry rub seasoning paste evenly over the beef tenderloin. After 10 minutes, remove the roasting pan from the oven, drizzle the 2 tablespoons of olive oil into the pan, tilt to coat the bottom of the pan, and then add the seasoned fillet. Place in the oven for 10 minutes. Turn the fillet over and return to the oven to sear the second side for an additional 10 minutes. Reduce the oven temperature to 375°F and cook until it reaches desired doneness using a meat thermometer (an internal temperature of 135°F for medium rare) approximately 15 to 18 minutes additional cooking time. Wine Sauce: In a saucepan, combine wine, shallots, and salt and pepper. Reduce by half. Whisk in thyme and butter just to heat through. When the tenderloin has finished roasting, remove it from the oven and allow to rest for 15 to 20 minutes. Slice the tenderloin into 1/2-inch slices and arrange on a platter. Spoon some wine sauce over the top.

1 (5 pound) whole beef tenderloin
6 tablespoons olive oil
8 large garlic cloves, minced
2 tablespoons minced fresh rosemary
1 tablespoon dried thyme leaves
2 tablespoons coarsely ground black pepper
1 tablespoon salt

Steps:

  • Prepare beef: Trim off excess fat with a sharp knife. Fold thin tip end under to approximate the thickness of the rest of the roast. Tie with butcher's twine, then keep tying the roast with twine every 11/2 to 2 inches (to help the roast keep its shape). Snip silverskin with scissors to keep roast from bowing during cooking. Then, mix oil, garlic, rosemary, thyme, pepper and salt; rub over roast to coat. Set meat aside.
  • Either build a charcoal fire in half the grill or turn all gas burners on high for 10 minutes. Lubricate grate with an oil-soaked rag using tongs. Place beef on hot rack and close lid; grill until well-seared, about 5 minutes. Turn meat and close lid; grill until well-seared on second side, another 5 minutes.
  • Move meat to the charcoal grill's cool side, or turn off burner directly underneath the meat and turn remaining one or two burners (depending on grill style) to medium. Cook until a meat thermometer inserted in the thickest section registers 130 degrees for rosy pink, 45 to 60 minutes, depending on tenderloin size and grill. Let meat rest 15 minutes before carving.
